LINGUINE WITH CLAMS (LINGUINE CON LE VONGOLE)



Linguine with Clams (Linguine con le Vongole) image

A light sauce of white wine and tomatoes lets the seafood shine in this iconic Italian pasta dish.

Yield 4-6 servings

Number Of Ingredients 9

3 tablespoons kosher or coarse sea salt
1 pound linguine
12 tablespoons extra-virgin olive oil
4 cloves garlic, thinly sliced
1 pound New Zealand cockles or 24 Manila or littleneck clams, scrubbed
1 tablespoon plus 1 teaspoon red pepper flakes
1 cup dry white wine
1 (14-ounce) can whole San Marzano tomatoes in juice, juice reserved and tomatoes coarsely chopped
1/2 cup plus 2 tablespoons fresh flat-leaf parsley, coarsely chopped

Steps:

  • In large pot over moderately high heat, combine 8 quarts of water to boil and salt. Bring to boil, then add linguine and cook to 1 minute short of al dente according to package directions (pasta should still be quite firm).
  • Meanwhile, in large sauté pan over moderately high heat, heat 6 tablespoons extra- olive oil until hot but not smoking. Add garlic and sauté until just golden, about 30 seconds. Add clams and 1 tablespoon red pepper flakes and sauté 1 minute. Add wine, tomatoes and juice, and 1/2 cup parsley and simmer, uncovered, just until clams open, 7 to 8 minutes.
  • Reserve 1/2 cup cooking water, then drain linguine and add to pan. Simmer, tossing occasionally, until linguine is just tender, about 1 minute. If necessary, add some of reserved cooking water to keep moist. Remove from heat. Add remaining 2 tablespoons parsley, 1 teaspoon red pepper flakes, and extra-virgin olive oil, tossing to coat. Transfer to serving dish and serve immediately.

This classic seafood pasta recipe from Campania is simple to make and bursting with flavour.

320-400 g linguine ((11-14oz) or vermicelli or spaghetti)
800 g fresh clams ((1.8lbs) about 200g/7oz per person)
3-5 garlic cloves (peeled and finely chopped)
1 peperoncino (red chili pepper) or dried flakes (amount depends on your preference)
4-5 tbsp extra virgin olive oil
1-2 handfuls fresh parsley (finely chopped)
salt (to taste (we don't add it to the pasta cooking water))
1/2 glass dry white wine

Steps:

  • Chop the peeled garlic and parsley finely. If using a whole fresh or dried red chili chop finely too. Remove the seeds to make it milder. Be careful not to touch your eyes or mouth after doing this and wash your hands well before continuing to cook.
  • Wash the clams in cold water and remove any with broken shells. Some kinds of clams need a lot of rinsing if they have sand in them. But you can also filter the liquid after you have precooked them, so don't worry so much about the sand.
  • Put a pot of water on to boil for the pasta. When it starts to boil add the pasta. You probably don't need salt as the clams will already be a little salty.
  • While the water is boiling for the pasta, put the clams in a deep frying pan and cook covered over a medium to high heat until they have opened. (about 5 minutes)
  • Allow the clams to cool a little and then remove the meat from most of the clam shells keeping some intact. Discard the empty shells and, if necessary, filter the liquid that the clams have produced. Don't discard it.
  • Cook the pasta al dente according to the instructions on the packet.
  • Heat half the olive oil in a frying pan or skillet. Add the garlic and peperoncino. Cook until the garlic starts to soften. Add the clams (with shells and without) with their liquid to the pan and cook for a few minutes. Then, add the white wine and cook further until the alcohol evaporates. Finally, add the parsley and the rest of the olive oil. Continue cooking for another 3-5 minutes and then turn off the heat.
  • When the pasta is cooked, drain it and add to the pan with the cooked clams. Mix everything together well and serve immediately with another sprinkling of chopped parsley, if required.

This is one of Tyler Florence's recipes that is exactly the type of dish I seek out on a weekly basis. I LOVE clams and this recipe really accentuates the clams, rather than hiding them. I have used canned clams in a pinch but I highly recommend fresh. Deelish!

1 lb dry linguine
1/4 cup extra virgin olive oil, plus more for serving
4 garlic cloves, slivered
1/4 teaspoon red pepper flakes
2 lbs littleneck clams, scrubbed and rinsed well (or Manila)
3/4 cup dry white wine, such as Pinot Grigio
1 lemon, juice of
3 tablespoons unsalted butter
sea salt, to taste
fresh ground black pepper, to taste
1/2 cup fresh flat-leaf parsley, finely chopped
2 tablespoons breadcrumbs, lightly toasted and fried (optional)

Steps:

  • Prepare the sauce while the pasta is cooking to ensure that the linguine will be hot and ready when the sauce is finished.
  • Bring a large pot of salted water to a boil, add the pasta and cook for 8 to 10 minutes or until tender yet firm (as they say in Italian "al dente.") Drain the pasta well.
  • Meanwhile, heat the olive oil over medium flame in a deep saute pan with a lid. Add the garlic and red pepper flakes; saute for 2 minutes. Add the clams, wine, and lemon juice. Cover and cook, shaking the pan periodically, until all the clams are opened, about 7 minutes. Discard any that have not opened.
  • Crank the flame up to medium-high heat. Add the hot, drained linguine to the pan; add the butter and season with salt and pepper. Toss the pasta with the clams to it's nicely coated. Shower with chopped parsley and toasted bread crumbs. Drizzle with a nice dose of olive oil before serving.4.

This recipe is adapted from a Neopolitan version of "Linguini and Clams in Red Sauce". I prefer the clams to be served in their shells over the pasta, never removed or chopped

1/4 cup extra virgin olive oil
2 lbs littleneck clams, scrubbed well
4 garlic cloves, chopped
1 large shallot, minced
2 anchovy fillets, chopped
1 (28 ounce) can whole tomatoes, coarsely chopped (preferably San Marzano)
1 teaspoon dried basil
1/2 teaspoon dried oregano
1 -1 1/2 teaspoon crushed red pepper flakes, to taste
1 lb linguine
freshly chopped basil, for garnish

Steps:

  • A Neopolitan custom is to let the clams soak in very cold water with a tsp of salt and the juice of one lemon for about 1/2 hour.
  • This will remove any sand or grit in the clams.
  • This step is optional, but I do suggest that you at least scrub the outer shells of the littlenecks quite well with a vegetable brush.
  • Bring a large stockpot of water to a boil for the linguini.
  • In another pan, heat olive oil over medium high heat.
  • Add shallots and crushed red pepper and sauté until shallots are softened.
  • Add chopped garlic and anchovies, and saute until anchovies begin to melt into the olive oil, careful not to let garlic get too dark.
  • Carefully add chopped tomatoes with their liquid.
  • Stir to combine, and add dried basil and oregano.
  • Cover, reduce heat to low, and simmer sauce until ready to cook clams and linguini.
  • Add little neck clams to the simmering tomato sauce, stir to coat well, and cover.
  • While clams begin to steam in sauce, generously salt the boiling pasta water, add linguini, and cook until al dente, (about 7 minutes).
  • As clams begin to open, I remove them to a large bowl and cover, until pasta and remaining clams are cooked.
  • Drain pasta, and transfer to a serving bowl.
  • Top with tomato sauce and toss with chopped fresh basil.
  • Finally, add cooked clams over top the pasta, still in their shells.

Most real Italians don't sprinkle Parmesan cheese on fish or seafood pasta, but I like a little on my linguine. Mangia!!!

6 tablespoons extra virgin olive oil
3 tablespoons butter
2 shallots, finely chopped (or 1/2 small onion, finely chopped) (optional)
6 fresh garlic cloves, very thinly sliced and smashed
1/2 teaspoon dried oregano
1/4 cup freshly chopped Italian parsley (flat-leaf parsley)
1/2 teaspoon dried red pepper flakes (or, to taste)
1 cup dry white wine
1/2 lemon, juice of
3 cups chopped fresh clams, or
32 littleneck clams, smallest you can find, scrubbed and rinsed
1 lb dried linguine, cooked al dente according to package instructions

Steps:

  • Heat olive oil and butter in a medium-sized saucepan. Add shallots (or onions) and saute' over medium-high heat. Add garlic, oregano, parsley, and red pepper flakes. Saute' for just a minute or so.
  • Pour in wine and lemon juice and cook off for a few minutes. .
  • Turn the heat to low and add the clams, stirring to incorporate, and cook for just a few minutes.
  • Serve over cooked linguine.

Steps:

  • Prepare the sauce while the pasta is cooking to so that the linguine will be ready when the sauce is almost done.
  • Bring a large pot of salted water to a boil, add the pasta and cook for 8 to 10 minutes. Do not over cook - al dente. Drain the pasta well.
  • Heat the olive oil over medium flame in a deep pan with a lid. Add the garlic and red pepper flakes; saute for about a minute. Add the clams, wine, clam juice and lemon juice.
  • Cover and cook until clams are just opened shaking perodically, about 5 minutes. Discard any that have not opened. Remove the clams and cover the clams with foil to keep warm.
  • Increase the heat to medium high and reduce the sauce a bit, about 1-2 minute. Add the peas to the pan and heat for 1-2 minute. Add the hot, drained linguine to the pan; add the butter and season with salt and pepper. Toss the pasta for a minute or two so linguine takes in some of the sauce.
  • Divide evenly on the plates and place clams on top. Drizzle olive oil to your taste.

1 lb linguine, cooked al dente according to package directions
3 (6 1/2 ounce) cans minced clams with juice
2 tablespoons olive oil
2 medium onions, diced
1 teaspoon garlic, minced
1 teaspoon dried basil
1 teaspoon dried Italian seasoning
1/4 cup fresh parsley, fresh, finely chopped
1/2 teaspoon salt
fresh ground pepper
1/2 cup white wine
4 tablespoons unsalted butter
1/3 cup parmesan cheese, grated

Steps:

  • Cook linguine to al dente, according to package directions.
  • While linguine is cooking, in large skillet, add olive oil and diced onions, cook on med heat until translucent (about 5 min.).
  • Add garlic, basil, Italian seasoning, parsley, and salt and pepper. cook for another 3-5 minutes.
  • Open cans of clams, drain, reserving liquid. Set clams aside.
  • Add clam juice and wine to skillet. Bring to boil, and cook for 3-5 minutes, allowing liquid to cook down a bit. Add clams back in until heated.
  • Add butter and cheese, and cook 2 minute more.
  • Drain linguine, then add to pan with clam sauce and mix. Serve immediately, garnishing with additional chopped parsley and cheese.
