LINGUINE WITH RED CLAM SAUCE

Kosher salt
12 ounces linguine
3 tablespoons extra-virgin olive oil
3 cloves garlic, thinly sliced
2 anchovy fillets
1/2 teaspoon red pepper flakes
1/2 teaspoon dried oregano
1/2 cup dry white wine
1 28-ounce can whole San Marzano tomatoes, crushed by hand
1 1/4 pounds littleneck clams (about 16), scrubbed
12 ounces chopped clams (drained if canned)
1/2 cup chopped fresh parsley

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs; drain and set aside.
  • Meanwhile, heat 2 tablespoons olive oil in a large deep skillet over medium-high heat. Add the garlic, anchovies, red pepper flakes, oregano and 1/4 teaspoon salt and cook, stirring occasionally, until the garlic is lightly golden, about 1 minute. Add the wine and cook until reduced by half, about 3 minutes. Add the tomatoes and cook, stirring occasionally, until the sauce thickens slightly, 5 to 7 minutes.
  • Add the whole clams; cover and cook until they just begin to open, about 3 minutes. Add the chopped clams and parsley; continue cooking, covered, until the whole clams are fully opened, about 3 more minutes (discard any that do not open). Add the pasta and the remaining 1 tablespoon olive oil; toss to combine. Season with salt.

A fabulous red pepper sauce made with fresh basil and fresh red bell peppers. This pureed sauce will amaze you with its simplicity and flavor.

1 teaspoon olive oil
1 1/2 cups chopped sweet red peppers
1 garlic clove, crushed
2 tablespoons chopped fresh basil
2 tablespoons balsamic vinegar
1/8 teaspoon salt
1/8 teaspoon black pepper
6 ounces linguine, uncooked
fresh basil sprig (optional)

Steps:

  • Coat a nonstick skillet with cooking spray; add oil. Place over medium heat until hot. Add sweet red pepper and garlic; cook, uncovered, 30 minutes, stirring occasionally. Set aside, and cool slightly.
  • Place pepper mixture in container of an electric blender or food processor; add chopped basil and next 3 ingredients. Cover and process until smooth, stopping once to scrape down sides.
  • Cook pasta according to package directions, omitting salt and fat.
  • To serve, top pasta with pepper sauce. Garnish with basil sprigs, if desired.

3 tablespoons olive oil
1 1/2 large red onions, thinly sliced
2 red bell peppers, thinly sliced
1/3 cup dry Sherry
1 12-ounce jar roasted red peppers, drained, thinly sliced
2 garlic cloves, minced
2 teaspoons minced canned chipotle chilies *
1 pound linguine
1/4 cup chopped fresh parsley
2 tablespoons balsamic vinegar
1 cup freshly grated Manchego cheese

Steps:

  • Heat olive oil in large nonstick skillet over high heat. Add red onions and red bell peppers; sauté until onions are brown, about 15 minutes. Stir in Sherry, roasted red peppers, garlic, and chipotles. Simmer until liquid evaporates, about 6 minutes.
  • Cook linguine in large pot of boiling salted water until tender but still firm to bite, stirring occasionally. Drain linguine, reserving 1/4 cup cooking liquid. Return linguine to pot. Add pepper mixture, parsley, vinegar, and reserved 1/4 cup cooking liquid; toss well. Season to taste with salt and pepper. Divide among bowls. Top with Manchego cheese.
  • Chipotle chilies canned in a spicy tomato sauce, sometimes called adobo, are available at Latin American markets and some supermarkets.
