THE HIRSHON SWEDISH LINDSTRöM BEEF PATTIES
Steps:
- Blend all the ingredients for the beef patties in a large mixing bowl until they are all very well mixed.
- With your hands, form 4 large beef patties and fry them over medium heat in butter for about 5 minutes on each side. When done, deglaze the pan with the beef stock and cornichon/beetroot liquids, and let reduce to half.
- Thicken the sauce with a knob of butter and season with salt and pepper.
- Peel and dice the potatoes and fry them in a little ghee and vegetable oil on low heat until golden brown on the outside and soft on the inside - about 15 minutes.
- Fry the eggs in ghee and serve on top of the beef patties. Place the fried potatoes and drizzle the pan sauce around the beef and garnish with chives.

A Swedish classic! This is no ordinary hamburger....ground beef is mixed with pickled beets, capers and onion to create a zesty and delicious patty bursting with flavor. Top it off with a fried egg for the fully authentic experience.

- Preheat the oven to 400 degrees and place a wire rack inside of a rimmed baking sheet. Set aside.
- Combine ground beef, beaten egg, mustard, panko, salt, pepper, onion, beets and capers in a large bowl. Knead with your hands to combine. Shape into 4 patties and make a shallow divot in the center of each patty.
- Heat 1 tablespoon of butter in a large skillet (preferably nonstick) over medium high heat. Once the foaming subsides, add the patties and cook until nicely browned, about 3 minutes per side. Place the patties on the wire rack prepped in step 1 above. Transfer the baking sheet to the oven and bake until patties are firm and cooked through, about 8-12 minutes (a thermometer inserted into each patty should read 160 degrees F)
- Transfer the burgers to a plate and tent with foil. Rest for at least 5 minutes. Meanwhile, make the fried eggs: Heat the remaining tablespoon of butter in a nonstick skillet over medium. Crack 4 eggs into the skillet, salt and pepper the eggs and cover. Cook until white and yolks are just set, about 3 minutes (or until eggs are done to your liking), adjusting the heat as necessary. Top each burger with a fried egg and a sprinkle of chopped fresh dill and serve.

This is a very juicy burger and traditionally served as written on toast with a fried egg for lunch. Without the eggs they are equally as good any other way. If you don't care for beets, chop them up very fine and no one will even notice them!

- Stir in cream gradually.
- Mix well.
- Carefully mix in beets, onions and capers.
- Shape into 8 patties ½ inch thick.
- Fry quickly on both sides either in fry pan (or on grill,) until done.
- In another fry pan fry eggs as you would normally do.
- Place toast on hot serving plates.
- Top each toast with a pattie.
- If eggs are greasy, blot with paper towel and then top each pattie with an egg.
- Serve immediately.

- In a small pan, melt the 1 tablespoon of butter.
- When the foam subsides, add the onions and cook for 2 or 3 minutes or until they are soft and transparent, but not brown.
- Scrape into a large bowl and add the meat, egg yolks, capers, salt, pepper and white vinegar.
- Mix together and moisten with the heavy cream.
