This is an old recipe of my mothers, though I am not sure where it originated. I am not a fan of lime or even marshmallows really, but this stuff is dee-lish! I always serve it with Thanksgiving, Christmas and Easter dinner. When I cook birthday dinners for family, it is requested then as well.

Ingredients

2 (3 ounce) packages lime Jell-O gelatin
1 (8 ounce) package cream cheese (cut into small pieces)
50 -60 small marshmallows
1/2 pint heavy whipping cream
1 (8 ounce) can crushed pineapple
1/2 cup chopped walnuts

Steps:

Pour lime jello in a 9x13 pyrex dish.
Add 3 cups boiling water and stir until dissolved.
While jello is still hot, stir in marshmallows and cream cheese pieces.
CHILL FOR ONE HOUR.
Whip cream until stiff.
Drain pineapple.
Remove jello from fridge, fold in pineapple, walnuts and whipped cream until well blended.
Chill for 3-6 hours or overnight.

Ingredients

8 ounce(s) can crushed pineapple
3 ounce(s) pkg. lemon jello
1 cup(s) boiling water
1 tablespoon(s) lemon juice
4 ounce(s) finely shredded sharp cheddar cheese
1 cup(s) heavy cream, stiffly whipped

Steps:

Drain pineapple, reserving syrup. Dissolve jello in boiling water; add enough cold water to reserved syrup to measure 3/4 cup. Stir in lemon juice. Chill until partially set;( like thick egg whites); Fold in pineapple, cheese and whipped stiff cream. Pour into 1 1/2 cup mold; chill until firm. Unmold onto a serving plate. Great with crackers and celery sticks.

This is a holiday favorite in the Johnston household. My husband grew up having this for Thanksgiving and Christmas. I usually do it for Easter. As for most of my recipes, this one comes from my late mother-in-law's recipe box.

1 lg. box lime jello
1 lg. pkg. cream cheese
1 20 oz. can crushed pineapple
1 12 oz. pkg. cool whip

Steps:

1. Measure pineapple juice and enough liquid to make 1 1/2 cups, bring to boil & dissolve jello into it. Cool til syrupy & fold into cheese & pineapple which has been mixed together. Fold in cool whip. Chill. Garnish with nuts & maraschino cherries ( dates may be added).
2. Note: though nowhere does it state, I make this in a 9x13 glass pan.

1 pkg cracker barrel sharp cheese
2(8oz) pkg cream cheese
1(small) can(s) pineapple, crushed
1/4 tsp garlic salt
!/4 c pecans, in pieces

Steps:

1. Mix all ingredients except pecans.
2. Cover and put in fridge for 2-3hours
3. Roll cheese mixture into a ball
4. Roll cheese ball in crushed pecans.

2 1/2 cups crushed pineapple, reserve liquid
1/3 cup sugar
1 (6 ounce) box strawberry Jell-O gelatin dessert, the big guy
12 marshmallows, large
2 cups cottage cheese, small curd
2 cups Cool Whip or 1 cup cream, whipped

Steps:

Add water to liquid from pineapple to make 2 cups liquid.
Combine with sugar and bring to a boil.
Dissolve Jell-O and marshmallows in boiling liquid.
Chill until partially set.
Stir in pineapple and cottage cheese.
Fold in Cool Whip or 1 cup cream whipped.
Put in mold.
Chill overnight.

My mother made this every holiday. I think the original is supposed to be layered. I am not sure. I just mix it all together and let things fall as they may. She didn't have a food processor, so I don't think this is, exactly, her recipe. It is what I do these days.

Ingredients

2 (3 ounce) boxes Jello gelatin, lime (or lemon or equivalent even sugar free)
8 ounces cream cheese
20 ounces crushed pineapple, drain liquid and set aside

Steps:

Start jello according to the box.
Reduce the 2nd half of the water by the amount of pineapple juice was in the can.
Blend all in the food processor.
Set in mold.
Unmold and plate before serving.
Be ready for there to be settling of the ingredients, that's part of the fun.

I found this recipe in an area newspaper years ago. When this festive salad appears at a potluck, folks always come back for seconds...and sometimes thirds! I sometimes tint it with food coloring for the holidays.

2 envelopes unflavored gelatin
1/4 cup cold water
1 can (20 ounces) crushed pineapple, undrained
1 package (8 ounces) cream cheese
1/2 cup sugar
2 tablespoons lemon juice
2 tablespoons maraschino cherry juice
1/2 pint heavy whipping cream, whipped
12 maraschino cherries, halved

Steps:

In a medium saucepan, dissolve gelatin in cold water. Add pineapple, cream cheese, sugar and juices; cook over medium heat, stirring often, until cream cheese is melted and gelatin is dissolved. Chill until syrupy. Fold in cream and cherries. Pour into an oiled 6-cup mold. Chill until firm.

1 cup water, boiling
1 (6 ounce) can crushed pineapple, drained

Steps:

Dissolve the jello in the hot water and then cream the cheese into it using a mixer, until smooth.
Stir in the pineapple and nuts.
Stir in the Sprite.
Pour in a mold and chill.
