2 pounds chicken wings
1 cup apricot preserves
2 tablespoons cider vinegar
2 teaspoons hot pepper sauce
1 teaspoon chili powder
1 garlic clove, minced

Steps:

  • Cut chicken wings into three sections; discard wing tips. In a small bowl, combine the remaining ingredients; pour 1/2 cup into a large resealable plastic bag. Add chicken; seal bag and turn to coat. Refrigerate for 4 hours or overnight. Cover and refrigerate remaining marinade., Drain and discard marinade. Place wings in a greased foil-lined 15x10x1-in. baking pan. Bake at 400° for 30-35 minutes or until juices run clear, turning and basting occasionally with remaining marinade.

Mildly seasoned but not overly sweet appetizer wings that adults and kids love. With only four ingredients the only time involved is marinating, baking and sitting in the crock pot. All are included in the cook time.

5 lbs chicken wings
1 cup soy sauce
2 tablespoons apricot jam
1 jar apricot baby food
2 cloves garlic, minced

Steps:

  • Remove tips from chicken wings and discard; cut through wings to separate; marinate in plastic bag with remaining ingredients for 24 hours.
  • Place chicken and marinade on jelly roll pan lined with well-greased foil; bake at 350°, 1 hour, turning once.
  • Place in crockpot on low for at least 3 hours; serve warm or cold.

5 lbs chicken wings, tips removed, and cut at joints
1 (16 ounce) bottle Russian salad dressing or 1 (16 ounce) bottle Catalina dressing
2/3 cup apricot preserves
2 (1 1/4 ounce) envelopes dry onion soup mix

Steps:

  • In a bowl combine dressing preserves, and soup.
  • Place chicken in a ungreased 11x7x2" baking pan.
  • Top with dressing mixture.
  • Cover, and bake at 350 for 20 minutes. Baste.
  • Bake uncovered for 20 minutes longer, or until chicken is glazed, and juices run clear.

Very tasty wings with a great Asian flavor! Makes a wonderful appetizer. Or double the recipe if you want to make more of a meal.

1 1/2 lbs chicken wings
3 tablespoons dark soy sauce
1 tablespoon dry sherry
2 inches fresh ginger, minced
1 clove garlic, minced
2 tablespoons vegetable oil
1/3 cup cornstarch
3/4 cup chicken stock or 3/4 cup chicken broth
2 scallions, sliced thin
1 inch fresh ginger, cut into slivers

Steps:

  • Cut chicken wings into three pieces at the joint sections; discard tips.
  • In a bowl, mix together soy sauce, sherry, ginger, garlic, and wings.
  • Marinate wings for several hours refrigerated.
  • Take wings out of the marinade and set marinade aside for use later in recipe.
  • Heat the vegetable oil in a large deep skillet.
  • Dredge wings in cornstarch, shaking off excess.
  • Add wings to the pan, but do not crowd.
  • Cook until golden, and remove from pan (Do in batches if necessary).
  • Drain oil from skillet and add marinade and chicken stock to the skillet, cooking until hot.
  • Add wings back to pan, coating them with sauce; cover pan and simmer 5-10 minutes.
  • Place chicken on a serving platter and garnish with slivers of ginger and chopped scallion.

8 pounds chicken wings
1 cup fresh lime juice (from 8 to 10 limes)
1 cup apricot preserves
1 cup soy sauce
2/3 cup sugar
4 large garlic cloves
Special Equipment
2 large roasting pans (about 16 by 12 inches)

Steps:

  • Preheat oven to 425°F. Cut off wing tips, reserving for another use, and halve wings at joint. Divide wings between 2 large roasting pans, arranging in single layers.
  • Purée remaining ingredients in a blender and pour mixture over wings, dividing evenly between pans. Bake wings in upper and lower thirds of oven 50 minutes. Turn wings over and switch position of pans in oven, then bake 45 minutes to 1 hour more, or until liquid is thick and sticky.
  • Serve wings warm or at room temperature.

  • Light a gas grill. Wrap the wood chips in heavy-duty foil and pierce the foil packet with a skewer. Add the packet to the grill. Cover and let the wood chips begin to smoke, 5 minutes.
  • Meanwhile, in a large bowl, combine the apricot preserves with the Worcestershire sauce, light brown sugar, soy sauce, mustard, salt, black pepper, garlic powder, sweet paprika, cayenne and ginger. Scrape half of the mixture into a small bowl. Add the chicken wings to the large bowl and toss to coat well in the sauce. Let the chicken wings stand for 5 minutes.
  • Grill the chicken wings, covered, over moderately high heat, turning them occasionally, until they are charred in spots and cooked through, 22 to 25 minutes. Transfer the chicken wings to a platter and serve the reserved sauce on the side.
