CILANTRO LIME GRILLED CHICKEN SANDWICH
A tangy cilantro lime vinaigrette is both a marinade and sauce for these Mexican-inspired grilled chicken sandwiches.

- Combine the chicken breasts and 1/2 cup of the Mexican Style Cilantro Lime Vinaigrette in a resealable plastic bag. Let marinate at room temperature for 15 minutes.
- Meanwhile, cook the bacon in a large skillet over medium heat until crisp, about 5 minutes per side. Drain on paper towels.
- Preheat an outdoor grill or grill pan to medium-high heat.
- Oil the grills grate or grill pan. Remove the chicken from the marinade. Sprinkle with salt and pepper. Grill the chicken, turning once, until cooked through, about 4 minutes per side, depending on thickness.
- Spread the mayonnaise on the cut surfaces of the rolls. Slice the chicken and add to the rolls. Break the bacon in half and place on top of the chicken. Top with avocado and tomato slices, cilantro leaves and radishes. Drizzle each sandwich with 1 tablespoon of the remaining vinaigrette. Press the tops on the sandwiches.

- Spray large skillet with nonstick cooking spray.
- Cook chicken over medium heat for 8 to 10 minutes or until no longer pink in center.
- Remove from skillet; keep warm.
- Combine apple juice, lime juice, cornstarch and bouillon in small bowl.
- Add to skillet; cook, stirring occasionally, until thick.
- Spoon sauce over chicken to serve.

SPICE & LIME CHICKEN

- In a large bowl, mix together the first 6 ingredients and season to taste. Slash the chicken breasts 5-6 times, without cutting all the way through. Add the chicken breasts and vegetables to the yogurt mix and stir to coat everything completely. Cover and leave the flavours to mingle for 10 mins.
- Place a griddle over a high heat and cook the chicken and vegetables for 4 mins each side until the chicken is cooked through and the grill lines are golden. Leave to rest for 2 mins before serving with steamed rice and raita.

- Beat the chicken meat with a mallet to tenderise. Barbecue the chicken until tender.

- Combine the first 9 ingredients in a small bowl. Cover and refrigerate 1/4 cup marinade; pour remaining marinade into a large shallow dish. Add the chicken and turn to coat. Refrigerate for at least 4 hours., Drain chicken, discarding marinade. Place lime wedges inside the cavity. Tuck wings under chicken; tie drumsticks together. Place chicken breast-side up on a rack in a shallow roasting pan. Brush reserved marinade over chicken., Bake at 350° for 2 to 2-1/2 hours or until a thermometer inserted in thigh reads 165°. - Place each chicken breast half between 2 sheets of heavy-duty plastic wrap; pound to 1/4-inch thickness using a meat mallet or small heavy skillet. Sprinkle chicken with salt and pepper.

- Coat chicken breasts with egg, and dip in bread crumbs. Place on a wire rack, and allow to dry for about 10 minutes.

CHICKEN WITH CHILLI LIME SAUCE

- Place the chicken breasts between cling-film and beat out to an even thickness. On the skin side, using a sharp knife, lightly score a criss-cross. Place the chicken in a dish and pour soy sauce over the chicken. Turn to coat all over. Set aside for 20 minutes.
- Put the fish sauce and Lime Cordial into a bowl. Remove the seeds from the chilli and chop finely. Add the chilli to the bowl and mix together with chopped spring onions, soy sauce and sesame oil. Just before serving, stir in the coriander.
- To cook the chicken, heat a griddle pan. When it is almost smoking hot, lift the chicken from the pan, drain the excess soy sauce, and then lightly spray the chicken with oil. Place the chicken in the pan to cook over a medium high heat for 3 minutes until it lifts easily from the pan and is marked from the griddle. Turn at an angle and cook another 2-3 minutes until marked.
- Turn the chicken breasts over and cook for 3-4 minutes (depending on the thickness of the chicken) until cooked through. Transfer chicken to a plate and spoon over the sauce.
- Serve with some stir-fried vegetables and boiled rice.

MEXICAN LIME CHICKEN

- Mix 2 tbsp olive oil with 1 tsp each crushed coriander seeds and grated lime zest and 1⁄2 tsp each paprika and light muscovado sugar.
- Put 2 chicken breasts in a baking dish, spoon the marinade over, then squeeze over a little lime juice. Cover and marinate for 30 minutes.
- Slip 1-2 lime slices under the skin of each breast and season. Tuck 6 unpeeled garlic cloves and 2 fresh red chillies around the chicken.
- Roast the chicken breasts in a baking dish, uncovered, for 30-35 minutes in a preheated oven (190C/gas 5/fan oven 170C). To check if they are done, prod the chicken with your finger - if it's still a bit soft, give it a bit longer.
- Serve with salad and salsa.

- If the chicken breasts are uneven in thickness, pound them down so they’re all even. This way all the breasts will cook through simultaneously. Sprinkle each with salt and pepper.
- In a large ovenproof skillet, heat the oil over medium-high heat. Add the chicken and cook for 6-7 minutes, turning once. You want the chicken nice and browned on the outside. (It doesn’t have to be cooked all the way through yet.) Set chicken on a plate and cover tightly with foil until step 5.
- Remove skillet from heat and add the broth, lime juice, onion, cilantro, and red pepper. Return to heat. Cook and stir to scrape up the browned bits from the bottom of the skillet. Bring to a boil. Allow to boil gently, uncovered, for 10 minutes or until the liquid is reduced to around 1/4 cup. (During this time you can steam some veggies to have on the side, like asparagus.) Reduce heat to medium-low, then add the cream and butter. Stir until butter has melted.
