Once you have made your own sherbet you will never buy from the store again. It is so easy and the flavor is incredible. You will receive such accolades for this dish. It makes the best smoothies. I can't wait for the summer to enjoy this treat again. Please note that the cooking time is freezing time.

1⁄2 cup sugar, superfine
1⁄2 cup water
3 limes, finely grated
2 tablespoons coconut cream, sweet
2 mangoes, ripe, large, peeled and pitted, coarsely chopped
2⁄3 cup lime juice, fresh squeezed is best
1 cup mixed berry (blueberries,strawberries, raspberries, garnish) optional
exotic fruits, your choice - optional

Steps:

  • 1. In a small pan, gently heat the sugar, water and lime rind, until the sugar dissolves about 3 minutes.
  • 2. Boil rapidly for 2 minutes, then remove from heat and strain into a bowl.
  • 3. Let cool and add the coconut cream, set aside until needed.
  • 4. Add the lime juice and chopped mango into a food processor and puree till it is smooth.
  • 5. Add the cooled coconut cream mixture into the mango puree, making sure to mix well.
  • 6. Pour into a large, freezer proof container and freeze for 1 hour, until slushy in texture.
  • 7. Remove the container from the freezer and with an electric mixer break up the ice crystals.
  • 8. Then put back in freezer for another hour, remove and again break up with the mixer making sure that the it is smooth.
  • 9. Cover the container and place back in the freezer and leave until very firm, about 4 hours.
  • 10. To serve, remove the sherbet from the freezer and let stand at room temperature for 15 minutes before serving.
  • 11. This is wonderful on its own, but it is put over the top with the addition of fresh berries (strawberries/blueberries/raspberries) or your choice of exotic fruits.

½ cup honey
½ cup water

Steps:

  • Cut mangoes into ½-inch (1.3 cm) cubes and put on baking sheet. Cover and freeze for a minimum of 4 hours.
  • In a food processor, add the frozen mango, water, and honey. Mix until the mixture is smooth.
  • Remove from food processor and scoop into tray.
  • Freeze for one additional hour.
  • Enjoy!

1-1/2 cups chopped peeled mangoes
1-1/2 cups fresh strawberries, halved
1/4 cup lime juice

Steps:

  • In a small saucepan, bring sugar and water to a boil. Cook and stir until sugar is dissolved; set aside to cool., Place mangoes and strawberries in a food processor; add sugar syrup and lime juice. Cover and process until pureed. Transfer puree to a 13x9-in. dish. Freeze 45 minutes or until edges begin to firm. Stir and return to freezer. Freeze 2 hours longer or until firm., Just before serving, transfer to a food processor; cover and process 2-3 minutes or until smooth,

Chamoyadas originated in Mexico and are commonly made with fresh mangos and chamoy sauce. I used fresh frozen mangoes and pineapple juice for an added tropical twist. I always garnish with a tamarind straw but due to the Coronavirus pandemic, I was unable to find them at my local Mexican store. Top with fresh cubed mangoes if desired.

½ lime
2 teaspoons chili-lime seasoning (such as Tajin®)

Steps:

  • Combine frozen mangoes and pineapple juice in a blender; blend until smooth.

Nothing is better in the summer than a frosty frozen fruit treat. Even better when its is light and luscious like this one. The lime heightens the natural sweetness of the mango while the whipped egg whites make the dessert light and airy. I ran across this one in a local newspaper and recently decided to try it in my ice cream maker. The directions and preparation time here are for conventional freezer preparation without an appliance.

1 large mango
1 1/2 teaspoons gelatin powder
2 egg whites
1 -2 tablespoon sugar (to taste) or 1 -2 tablespoon Splenda granular (to taste)
5 tablespoons lime juice, divided
lime zest, strips (optional)

Steps:

  • Peel and cut up the mango into chunks. Puree mango and 2 tablespoons of lime juice in a blender or with an immersion blender. Set aside. (Don't worry if the puree is tart, the lime juice mellows in the freezing process.)
  • Mix the gelatin into the remaining 3 tablespoons of lime juice in a small heatproof bowl. Place the bowl in a small saucepan of simmering water and stir until the gelatin dissolves. Add gelatin-lime juice mix to the mango puree.
  • Whisk egg whites to soft peaks. Add sugar or Splenda.
  • Gently fold the egg whites into the mango.
  • (If you are using an ice cream maker, follow the directions for your machine here. In mine, this takes about 20-22 minutes.)
  • Place the mixture into a freezer proof bowl for 2 hours. Take the bowl out of the freezer and mix to break up the ice chunks and return to the freezer. Allow it to freeze until firm or solid.
  • If sorbet is frozen solid prior to serving, place in the refrigerator for 10 minutes before serving.
  • Scoop sorbet into bowls and garnish with lime zest strips.

1 1/2 cups mango nectar
2 cups ice cubes
1 mango, peeled and diced
1 lime, halved
4 tablespoons apricot chili sauce (chamoy)
2 teaspoons tajin seasoning

Steps:

  • Place frozen mango chunks, mango nectar, and ice into a blender and blend until smooth.
  • Juice half of lime into each glass then add 1-2 tablespoons of chamoy and 1 teaspoon of tajin to each glass. Swirl the chamoy and lime together and up the side of each glass.
  • Pour the frozen mango mixture into each glass and top with fresh diced mango, more chamoy, and a sprinkle of tajin seasoning.
  • Serve immediately. We serve these with tamarindo straws.
