EASY LIME GRANITA (2 WAYS)



Easy Lime Granita (2 ways) image

Only three ingredients and you have a delicious, fresh Lime Granita. Try it either freezer or ice cream maker methods. An easy Summer Treat.

1 1/2 cups water
1/2 cup sugar
3/4 cup lime juice ((strained))
zest 1 lime
1 1/2 cups water
1/2 cup sugar
3/4 cup lime juice
zest 1 lime

Steps:

  • In a small pot on medium high heat combine the sugar and water, bring to a boil, then lower heat and simmer for 5 minutes. Let cool completely.
  • When the syrup has cooled had the strained lime juice and zest, whisk to combine. Pour into a freezer safe bowl. Place in the freezer for approximately 1 hour (may be more or less time depending on your freezer).
  • Remove bowl from the freezer and with a fork break up the ice and mix to combine. Repeat 3-4 times or until the mixture is slushy. Serve in a tall glass with a spoon.
  • Follow the same steps for the freezer method, but instead of pouring into a bowl pour into the ice cream maker and churn according to manufacturer's directions, 25-30 minutes or until mixture becomes compact and creamy. Enjoy!

1 pound fresh lump crabmeat
2 limes, zest grated
5 or 6 tablespoons mayonnaise
Fine sea salt
Freshly ground white pepper to taste
Several lettuce leaves or thinly slice cucumbers, for garnish

Steps:

  • In a bowl, combine the crabmeat, lime zest, and enough mayonnaise to evenly coat the crab. Taste for seasoning. Arrange a layer of lettuce leaves or thinly sliced cucumbers on 4 salad plates. Place the crabmeat in a mound atop the lettuce or cucumbers. Serve.

4 to 5 navel oranges, peeled with no remaining pith, cut into 2-inch long strips
1 cup sugar
1 cup water
3 cups sugar for crystallizing

Steps:

  • Heat the 1 cup of sugar and water to a boil. Add peels and simmer until they are transparent, about 12 minutes. Syrup should be thick. Remove from syrup and toss in sugar, let dry, away from humidity. Store in an airtight tin.

  • RED ORANGES
  • Use blood oranges in your favorite recipes as you would regular oranges. Taste for sweetness, you may have to add a bit more sugar in some recipes

1 1/2 cups plus 1/8 cup olive oil
2 cups superfine sugar
1 1/2 cups crystallized ginger, run through food processor
8 egg whites
3 cups cake flour
3 teaspoons baking powder
2 tablespoons ground ginger
1 teaspoon salt
1 cup whole milk
3 teaspoons vanilla
Lime Buttercream, recipe follows
Micro opal basil, for garnish
Micro mint, for garnish
Lime zest, for garnish
1 1/4 cups fresh lime juice
2 tablespoons cornstarch
1 pound unsalted butter
1 teaspoon salt
6 cups confectioners' sugar

Steps:

  • Preheat the oven to 350 degrees F. Line mini cupcake pans with 48 mini cupcake liners.
  • In the bowl of a stand mixer with the paddle attachment, mix the oil and sugar on high speed until creamy and fully incorporated. Mix in the crystallized ginger until fully incorporated. Add the egg whites and mix well. Sift together the flour, baking powder, ground ginger, and salt in a large bowl. On medium speed, add the flour mixture alternately with the milk and vanilla mixture until combined. Do not over-mix. Fill the cupcake liners three-quarters of the way and bake for 15 minutes.
  • To assemble: Using a pastry bag fitted with a small round tip, pipe the top of the cupcakes in a dot pattern with Lime Buttercream, creating 6 dots to cover the tops of the cakes. Snip a small cluster from the stem of each branch of the micro herbs. Place the bunches in the center of the icing. Zest fresh lime zest over the cakes to finish off the garnish.
  • Place the lime juice and cornstarch in a small pan on the stove. Cook over medium heat, whisking, until the mixture thickens. Transfer the lime curd to a silicone mat and refrigerate until cool, about 5 minutes. In the bowl of a stand mixer with the paddle attachment, cream the butter and salt. Add the cooled lime curd. Add the confectioners' sugar and beat until light and fluffy.

1 teaspoon grated lime zest (1 lime)
3 cups water

Steps:

  • In a small saucepan, combine sugar with 3 cups water.
  • Bring to a boil.
  • Reduce heat and simmer for 5 minutes.
  • Chill for 1 hour.
  • Stir in lime juice and zest.
  • Pour mixture into a shallow metal cake pan and freeze, crushing and stirring the lumps with a fork every 30 minutes for 2 to 3 hours, or until it has a slushy, granular texture.
  • Serve immediately.

Right after joining RZ, I tried & was not able to find a recipe for candied limes, but Chef Neta kindly helped me find this 1 at the Food Network website. Twice since then questions have come up about candied limes, so I thot I would post the recipe. I modified the prep slightly to make it easier & more clear. I use the slices mainly to garnish lime-based beverages, desserts or baked goods, but also cut in sml pieces to add color & flavor to trail mix or add as a sml item to add variety & color to gift baskets. There are prob many more uses that have not occurred to me. Time does not include the drying time.

2 large limes or 3 small limes
1 cup sugar
2 tablespoons sugar
1 cup water

Steps:

  • Slice limes into thin rounds, blanch in a pot of boiling water for 2 min & drain.
  • In the same pot, combine water & 1 cup sugar. Bring to a simmer & add lime slices. Simmer for 10-15 min, till white pith of limes looks translucent (May take longer if pith is esp thick or dense).
  • Drain & spread out on a cooling rack to dry for at least 1 hour.
  • Put 2 tbsp sugar in shallow bowl or saucer. When limes are dry, coat both sides of the lime slices by pressing them into the sugar (May need more sugar for good coverage).
  • Store in an airtight container & layer between parchment paper or plastic wrap till ready to use. I freeze these when I make a batch & then just take out what I need to use.

CANDIED CITRUS ZEST

The aroma therapy you get from candying citrus is just one of the perks of making use of the whole fruit. Once you understand the basics of candying citrus, you can apply them to any citrus fruit. The method is simple enough: Slowly poach citrus peels in sugar syrup until they are cooked through and translucent.

3 oranges or lemons (see Cook's Note)
1 1/2 cups (300g) sugar, plus more for dredging (optional)
3 tablespoons honey

Steps:

  • Cut the citrus into wedges and remove the flesh. Use a sharp paring knife to remove as much white pith as possible from the peels. Reserve and use the insides of the fruits for juice or another use.
  • Place all the peels in a 2-quart saucepan. Cover the peels with water and bring them to a boil. Boil for 1 minute, then remove from the heat and drain. Set the peels aside.
  • Add the sugar, honey, and 1 1/2 cups (354ml) water to the empty pan and bring to a simmer over medium heat. Cook to dissolve all the sugar, stirring frequently, about 7 minutes. Add the reserved peels to the sugar syrup and reduce the heat to low; gently simmer until the syrup registers 220 degrees F on a candy thermometer or until the peels are bright and translucent looking. Stir the peels frequently. This should take about 1 hour. You do not want to caramelize the sugar at all, so keep the flame low and cook slowly. If the syrup begins to thicken before the peels have cooked through, you may need to add a touch more water to the pan during the cook time to slow down the candying process a bit.
  • Cool the peels in the syrup until they reach room temperature. From here you can go in two different directions: you can store the candied peels in an airtight container in the syrup to keep it soft and hydrated. Alternately, you can dredge the peels in granulated sugar and set them on a wire rack overnight to create a dried candied zest confection. The sugared zest can then be stored at room temperature for months and months.
