If you fancy a change from the traditional Lemon Drizzle, this recipe is easy and fast. Try Jasmine Tea with a slice of Lime Drizzle to give a touch of Oriental.

225g Butter (salted) - softened
225g Golden Caster Sugar
225g Self-raising Flour
4 eggs
Grated zest of 1 1/2 Lime
Grated Zest of 1 1/2 Lime
85g Golden Caster Sugar
6 tbsp of Lime juice

Steps:

  • Preheat the oven to 180C or 160C/fan. Line tin with greaseproof paper and set aside.
  • Mix the butter with sugar until creamy and slightly pale. Add the grated lime zest and eggs, one at a time and mix well.
  • Stir in the flour and mix well. Pour mixture into tin and cook for 45 - 50 minutes.
  • Heat sugar, lime juice and zest in moderate heat (do not boil)
  • Remove cake from oven. Prick the cake with a skewer and pour the drizzle mixture onto cake. Leave cake to cool and serve.

250 g unsalted butter ( 8.8 oz/ 1 cup )
200 g sugar (7 oz/ 1 cup )
5 eggs (large)
3-4 limes (depending on size (Note 1))
250 g all-purpose flour (8.8 oz/ 2 cups )
2 teaspoons baking powder
100 g icing sugar (3.5 fl.oz/ 1 cup )

Steps:

  • Butter: Take it out of the fridge a few hours before baking, so that it has time to soften.
  • Preheat the oven to 180 degrees Celsius/ 360 degrees Fahrenheit.
  • Prepare a loaf cake pan of about 30x12 cm/ 12 x5 inches. Butter it all over, sprinkle with a little flour, and shake the tin to distribute the flour all over the tin. Turn the tin upside over the sink and pat it on the back and the sides to remove the excess flour. Set aside.
  • Zest 2 of the limes. Zest one lime by cutting the green skin very thinly and then cutting these pieces into very fine strips. You will need these for decorating the lime drizzle cake. Set aside.Zest the second lime by grating the green skin on the fine grater. Set aside.
  • Juice the limes, you will need 100 ml/3.4 fl. oz/scant ½ cup lime juice. Set aside.
  • Wet ingredients: Beat the soft butter and the sugar until light and fluffy, about 5 minutes. Add the eggs to the batter, one by one, mixing well in between.
  • Add dry ingredients: Sift in the flour and the baking powder, add the finely grated lime zest and mix until combined.
  • Bake: Transfer the batter into the prepared tin. Bake for 60-65 minutes or until a skewer inserted in the middle of the cake comes out clean.
  • Leave the cake to rest in the pan for 10 minutes. Make the lime drizzle in the meantime.
  • Combine: Sieve the icing sugar into a small bowl. Add the lime juice and stir well.
  • Drizzle the cake: Prick the lime loaf cake with a skewer (or toothpick) all over. Pour the lime drizzle all over.
  • Let cool completely in the tin.
  • Decorate: Turn the cake onto a serving platter, sprinkle with icing sugar, and top with the reserved lime strips.

200g unsalted butter , softened, plus extra for the tin
175g caster sugar
4 limes
3 large eggs , beaten
200g plain flour
1 tsp baking powder
1 rounded tsp ground ginger
50g desiccated coconut
3 balls stem ginger , finely chopped
2 tbsp milk
3 tbsp granulated sugar
3 tbsp stem ginger syrup
chopped crystallised ginger , to serve

Steps:

  • Heat oven to 180C/160C fan/gas 4. Butter and line the base and ends of a 900g loaf tin with a strip of buttered baking parchment. Cream the butter and caster sugar together until really pale, light and fluffy. Grate the zest from 3 of the limes and add to the mixture. Gradually add the eggs, mixing well between each addition.
  • Sift together the flour, baking powder, ground ginger and a pinch of salt. Using a large metal spoon, fold into the cake mixture with the coconut and chopped stem ginger. Add the milk and juice from 2 of the limes and mix until smooth. Spoon the mixture into the prepared tin and spread level using a palette knife.
  • Bake in the bottom third of the oven for 1 hr - 1 hr 15 mins, or until golden brown - a skewer inserted into the middle of the cake should come out clean. Cool the cake in the tin for 10-15 mins.
  • Use a wooden skewer to make holes all over the top of the cake. Meanwhile, mix the remaining lime juice with the granulated sugar and the stem ginger syrup. Slowly spoon the sugary mixture over the top of the warm cake and leave in the tin until completely cold. Top with the chopped crystallised ginger to serve.

LIME AND COCONUT DRIZZLE LOAF

A great, rich and moist cake bursting with Caribbean flavours! I found the recipe while surfing the net looking for coconut & lime recipes - very happy I came across this one as it's yummy!! Reportedly the recipe is originally from the BBC Good Food magazine.

14 ounces golden caster sugar, divided (375 g)
4 ounces butter, softened (120 g)
6 ounces self raising flour (175 g)
1 teaspoon baking powder
2 eggs
3 limes, juice and zest of
400 g coconut milk, divided

Steps:

  • Preheat oven to 180°C.
  • Butter and line the base of a loaf tin with baking parchment.
  • Put 6 oz (175g) of the sugar in a bowl with the butter, flour, baking powder, eggs, and the zest of 2 limes.
  • Split the coconut milk in half and set one half aside for the topping.
  • Add most of the other half to the bowl and beat the mixture together until well blended. Add enough extra coconut milk to make a dropping consistency.
  • Spoon the mixture into the prepared tin and level off the top. Bake for 40 mins, or until the cake is golden and firm to the touch.
  • Meanwhile make the topping: Tip the reserved half of coconut milk into a saucepan. Add 5 oz (150g) of sugar.
  • Bring to the boil and continue to boil for 5 minutes, or until syrupy and you can see the bottom of the pan when you stir. (For some reason this took me nearly 20 minutes!).
  • Stir in the lime juice and set aside.
  • With a pestle and mortat, crush the remaining sugar with the remaining lime zest, until you have a damp green paste. Set aside.
  • When the loaf is done, remove from the oven and pour the syrup over the top, a little at a time, waiting for the cake to absorb it before adding more (it will come up the sides of the tin in the end).
  • Leave cake until completely cold. Sprinkle the lime sugar over the top.

225g butter , softened at room temperature, plus extra for greasing
225g light brown soft sugar
4 large eggs , at room temperature, lightly beaten
170g self-raising flour
½ tsp baking powder
50g cocoa powder
2 tbsp milk
50ml lime juice (about 4 limes)
25g caster sugar
3 limes
100g granulated sugar
100g unsalted butter
200g icing sugar
2 limes , finely zested
50ml double cream , plus 1 tbsp
100g 70% dark chocolate , cut into small pieces
2 ½ tbsp lime marmalade

Steps:

  • Heat oven to 180C/160C fan/gas 4. Butter and line the base of 2 x 20cm cake tins with baking parchment. Beat the butter and light brown sugar together until pale and fluffy. Add the eggs gradually, beating well between each addition. Fold in the flour, baking powder and cocoa powder. If the mixture is very stiff, stir in the milk.
  • Spoon into the cake tins and bake for 20-25 mins or until a skewer inserted into the centre comes out clean. Turn the cakes out onto a wire rack and peel off the parchment. Gently heat the lime juice and caster sugar together, stirring to help the sugar dissolve. While the cakes and the syrup are still warm, pierce the cakes all over using a skewer and spoon over the syrup. Leave to cool completely.
  • Next, make the candied lime zest. Pare the zest from the limes, cutting it into broad strips. Cut away the white pith and discard, then slice the zest into matchstick-sized strips. Put them in a pan and cover with water, then bring to the boil. Cook for 1 min, then drain and rinse. Dry and set aside. Juice the limes and add enough water to make 225ml. Heat gently with the sugar until the sugar has melted. Add the strips of zest and simmer until the liquid has almost evaporated and turned syrupy - about 30 mins. Scoop the strips of zest out with a slotted spoon, then place them on parchment to dry.
  • To make the buttercream, beat the butter and icing sugar together using an electric mixer or by hand (start off gently or the icing sugar will fly everywhere), until pale and light, but don't beat for so long that it gets too fluffy. Add the lime zest and beat again until smooth. Chill in the fridge until the buttercream is firm, but spreadable.
  • To make the icing, heat the cream gently (don't let it boil), then take it off the heat. Add the chocolate and let it melt, stirring to help it along. Put the marmalade in a small pan with the extra 1 tbsp cream and heat slowly to dissolve. Add to the chocolate and cream and stir until everything is blended. Leave to cool a little, but not so long that it becomes firm. Pour over one of the layers of sponge and leave to cool and set - it will run down the sides and drip off.
  • Spread the buttercream over the other layer, then put the chocolate coated layer on top. Decorate with the candied lime zest.

1 pint strawberry, hulled and sliced
1/4 cup fresh lime juice
1 teaspoon lime zest
1/4 cup sugar

Steps:

  • Combine the lime juice, sugar, and 1/4 cup water in a small saucepan and bring to a boil. Stir constantly, cooking until sugar dissolves.
  • Refrigerate until cool.
  • Slice cake and plate it on individual plates. Top with strawberries.

225g xylitol (see tip below)

125ml sunflower oil
1 tbsp milk
200g 0% fat Greek yogurt
1 lemon, juice only
50g xylitol

Steps:

  • Preheat the oven to 180C/ 160C fan/ Gas 4. Grease and line a 1.2 litre loaf tin (22cm x 13cm width, 7cm depth) with baking parchment. Mix together the flour, baking powder, xylitol and lemon zest in a large bowl.
  • Mix the eggs, sunflower oil, milk and yoghurt together in a separate bowl or jug and stir them into the flour mixture.
  • Spoon into a tin and smooth the surface. Transfer to the oven immediately, bake on the middle shelf of the oven for 1 hour - 1 hour 10 mins. Check after 50 mins, if the cake is becoming too dark, cover loosely with foil.
  • Just before the end of cooking time, make the drizzle by heating the lemon juice and xylitol. Stir over a low heat until the xylitol has dissolved. Once the cake is cooked, take it out of the oven and pour over the drizzle.
  • Cool in the tin before turning it out.

225g golden caster sugar
4medium eggs
2 limes , grated zest and juice
250g self-raising flour , sifted with a pinch of salt, plus extra flour
25g ground almond
100g each blueberry and raspberries
8 tbsp lime juice (about 4 limes)
1 lime , grated zest
140g golden caster sugar

Steps:

  • Line the base and sides of a 20cm/8in square cake tin (not loose-based) with greaseproof paper and butter the paper. Set oven to 180C/Gas 4/fan oven 160C.
  • Cream the butter and sugar together until light. Gradually beat in the eggs, adding a little flour towards the end to prevent curdling. Beat in the lime zest, then fold in the flour and almonds. Fold in enough lime juice - about 3 tablespoons - to give you a good dropping consistency (the mixture should drop easily from the spoon when tapped).
  • Fold in three quarters of the blueberries and raspberries and turn into the prepared tin. Smooth the surface, then scatter the remaining fruit on top - it will sink as the cake rises.
  • Bake for about 1 hour (cover with foil if beginning to brown too much), or until firm to a gentle prod in the centre. A skewer pushed into the centre should be clean when removed.
  • Meanwhile make the syrup: put the lime juice, zest and sugar in a small saucepan. Put over a gentle heat and stir, without allowing to bubble. The sugar should dissolve a little. As soon as the cake comes out of the oven, prick all over with a skewer then spoon the syrup over it. To store, cool before wrapping in paper and/or foil.
  • Carefully remove the cake from the tin, discard the lining paper and cut into 12 pieces to serve.
