2 tablespoons lemon juice
1 tablespoon butter, melted
1/2 teaspoon dried thyme
1/2 teaspoon grated lemon zest
1/4 teaspoon salt
1/4 teaspoon paprika
1/8 teaspoon garlic powder
4 orange roughy, red snapper, catfish or trout fillets (6 ounces each)

Steps:

  • In a small shallow bowl, combine the first seven ingredients; dip fillets on both sides in lemon mixture. , Lightly oil the grill rack. Grill, covered, over medium-hot heat or broil 4 in,. from the heat for 5-10 minutes or until fish flakes easily with a fork.

1/4 cup cilantro, chopped
1 tablespoon capers, chopped
2 green onions, chopped
1 lemon
1 lime
2 cloves garlic, diced fine
1/2 teaspoon salt
1/2 teaspoon pepper

  • place fillets on sheet of tinfoil.
  • place all dry ingredients on fillets.
  • squeeze lemon and lime all over fillets.
  • chop lemon and lime and place in tinfoil.
  • close tinfoil and put on the BBQ.

"I had a friend that had brought me some Orange Roughy Fish one time. Hence the name, I decided upon prepare this fish in a citrus marinade. Turned out tender and flaky. Very delictable & nutritious. Can also be grilled on the grill."

4- 6 oz orange roughy filets
1- 4 oz can frozen orange juice
1 tsp lemon juice (or juice of real lemon)
1 tsp lime juice (or juice of real lime)
1/2 tsp minced garlic
1 Tbsp mrs. dash onion & herb
1 Tbsp mrs. dash table blend
lrg. mixing bowl
lrg. ziploc bag (gallon size)
9 x 11 inch baking pan
foil

Steps:

  • 1. In a bowl, combine the thawed orange juice, lemon juice, lime juice, minced garlic, Mrs. Dash Onion & Herb, and Mrs. Dash Table Blend together. Pour marinade in the ziploc bag, place the 4 orange roughy fillets in the bag and close bag, releasing some air. Completely saturate the fillets in the bag with the marinade.
  • 2. ( I like to prep this the night before so the fish can marinate overnight, enhancing the flavor.)
  • 3. Preheat oven to 425* F. Place the Orange roughy in the 9x11 inch pan w/ all the marinade. Cover the pan with the foil tightly. Place in the oven and bake for 45 minutes. Serve w/ a sprig of mint.

I got this recipe from a community cookbook. It was so easy to prepare and very delicious. It is also healthy and low fat. A great weeknight dish.

5 -7 orange roughy fillets
1/2 cup low-fat mayonnaise
2 teaspoons lemon juice
2 teaspoons lime juice
2 teaspoons Dijon mustard
2 -3 tablespoons fresh dill, chopped
2 tablespoons grated parmesan cheese

Steps:

  • Place fish fillets in a baking dish sprayed with Pam.
  • In a bowl, mix mayo, lemon, lime and mustard.
  • Add in dill and stir well.
  • Spread all of the sauce over the fillets.
  • Then sprinkle with the Parmesan.
  • Bake at 375 for 20 minutes (or until fish is done), then broil for 5 minutes to get top crispy and brown.

4 orange roughy fillets
1 tablespoon butter
1 tablespoon flour
1/4 cup chicken broth
1/4 cup sherry wine
2 tablespoons chives, chopped
1/2 teaspoon basil
1/2 teaspoon thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
1 medium tomatoes, sliced about 1/4 inch thick

Steps:

  • Preheat oven to 300°F.
  • Melt butter in saucepan over med. heat. When melted, stir in flour until smooth.
  • Stir in chicken broth and sherry.
  • Cook until thickened and stir in basil, thyme and chives.
  • Spray a 9x13 inch baking dish with cooking spray and lay orange roughy on bottom.
  • season fish with salt and pepper and layer with tomato slices. Pour sauce over top of tomatoes.
  • Bake for 30-40 minutes or until fish flakes easily.
