LILAC JELLY

Steps:
- 1. Put blossoms in a large jar and pour boiling water over them.
- 2. Let steep for 8 hours or overnight.
- 3. Strain and squeeze flowers dry. You should have 2 1/4 cups of infusion. Add more water, if needed.
- 4. Place infusion, lemon juice, and pectin in large heavy pot.
- 5. Bring to a rolling boil.
- 6. Add sugar, stirring.
- 7. Return to boil. Boil for 1 minute, stirring constantly.
- 8. Remove from heat. Skim off foam, if needed. Note: adding 1 teapoon butter before sugar cuts down foaming
- 9. Ladel in hot jars, leaving 1/4 inch head space.
- 10. Wipe rim, screw on lids.
- 11. Put in water bath (warm to hot water) - be sure that water is 1 inch over jars.
- 12. Process for 10 minutes.
- 13. Remove and cool.

- Pour 4 cups boiling water over the top of the lilac blossoms and allow the tea to infuse for about 10 minutes. It should be a turquoise color (which will change to pink when lemon juice is added). If it's not, you can add a few mashed blueberries of blackberries at this step for color, but that's optional.)
- Strain the lilac tea into a saucepan or jam pot. Add the lemon juice, which will adjust color, but it's also required to balance the sugar in the recipe and help the pectin set, so don't skip the lemon!
- Bring the mixture to a boil and add the powdered pectin, stirring to dissolve. Allow the mixture to boil for 1 minute before adding sugar. (Note: Do not add the sugar at the same time as the pectin, or before the pectin, or the jell will not set.)

- Cut the lilac flowers from your tree, then remove the flower petals until you have 2 cups of firmly packed blossoms.
- Add the blossoms to a quart-sized canning jar and cover to the jar neck with boiling water. Cover the jar and let it cool, then place in the fridge overnight to steep.
- The next day strain the flowers, pressing or squeezing to remove as much liquid as possible. You should have 3 1/2 to 4 cups of liquid, make up the difference with water.
