Melt in your mouth riblets slow cooked in the oven, then finished off on the grill slathered with homemade BBQ sauce.

Number Of Ingredients 6

2 -3 lbs pork riblets
1 cup ketchup
2 tablespoons red mine vinegar
2 tablespoons packed light brown sugar
2 teaspoons garlic powder
1 teaspoon ground black pepper

Steps:

  • Mix ketchup, garlic powder, pepper, brown sugar and vinegar. Adjust to taste. Set aside.
  • Pre heat oven to 250.
  • Spinkle both sides of riblets with ground sea salt and pepper.
  • wrap in a single layer in heavy foil, making sure that all sides and sealed.
  • Cook in oven 2.5 - 3 hours.
  • Take out of oven and remove foil.
  • Pre heat grill to medium.
  • Place riblets on grill and grill on both sides until dry, about 2 minutes per side (the sauce will not stick otherwise).
  • Slather with BBQ sauce and continue grilling until sauce is think and carmelized.

NIF'S LAST MINUTE RIBS OR PORK RIBLETS



Nif's Last Minute Ribs or Pork Riblets image

I went to a surprise party tonight. I decided at the last minute to make ribs and they went over really well with everyone! These were very tender and had lots of flavour. The best part? They are incredibly easy to make and are the quickest ribs I have ever made. You can also use regular sized ribs - these were good for an appetizer at the party. Enjoy!

3 lbs pork riblets, racks (pork ribs cut in half)
water
4 garlic cloves, peeled, whole
1 tablespoon peppercorn
1 tablespoon sea salt
3 bay leaves
favourite dry seasoning (I used Nif's Basic Dry BBQ Rub)
freshly ground salt and pepper

Steps:

  • In a large pot, bring enough water to cover the ribs to a gentle boil. Add salt, pepper, whole garlic cloves and bay leaves to the water. Meanwhile remove the silver skin from the back of the racks and cut rib racks in half. Add ribs to water. Boil for 30 minutes and strain.
  • Preheat oven to 350°F.
  • Cut rib racks into individual ribs and place in a baking pan lined with tin foil, for easier clean up. Sprinkle ribs with seasoning and toss. ***If you are using a salty seasoning, be careful not to use too much and don't use salt at the end. Cover with foil. Bake for 30 minutes.
  • Meanwhile, place a wire rack on a cookie sheet. I lined the sheet with tin foil as well. Place ribs on the rack.
  • Broil ribs until they are medium brown. In my oven, they are done after 4 minutes under a high broil setting. If you have time, you can turn them over and broil the other side. Sprinkle with freshly ground sea salt and pepper to taste. Do not add the salt if your seasoning is salty.
  • Make sure you taste them! I added more of my dry rub seasoning at this point because they needed a bit more flavour.

8 ounces beef broth
4 ounces soy sauce
2 tablespoons brown sugar
2 lbs pork riblets
1/2 cup Italian dressing (your preference, I use NoName because I only use it for marinating)
1 tablespoon finely chopped ginger or 1 teaspoon ground ginger
2 teaspoons soy sauce
1 teaspoon dijon-style mustard

Steps:

  • Combine beef broth, soy sauce and brown sugar.
  • Pour marinade over pork riblets.
  • I let my riblets marinate for about 6 hours, but I would even marinate them longer though they taste great as is.
  • Combine the Italian dressing, ginger, soy sauce and mustard; refrigerate.
  • About an hour before serving, remove riblets from marinade and place them in the pan for cooking in the oven.
  • Pour baste over all the riblets.
  • Place riblets in a preheated 350 degree Fahrenheit oven for an hour (or until done with your oven).
  • Alternately, you can broil or grill ribs, as desired, turning and basting frequently with the sauce.

These are SO easy and good, you'll wonder why you ever paid so much for ribs at a restaraunt. I often use country-style ribs instead of baby back.

3 lbs pork baby back ribs, cut into several pieces
1 cup ketchup
1/4 cup cider vinegar
3 tablespoons dark brown sugar
3 tablespoons Worcestershire sauce
1 teaspoon liquid smoke
1/2 teaspoon salt

Steps:

  • Place ribs in a large pot with enough water to cover.
  • Bring to a boil, reduce heat, and cover.
  • Simmer for 1 hour or until meat is tender.
  • Meanwhile, mix the rest of ingredients in a medium saucepan.
  • Bring to a boil, reduce heat, and simmer for 30 minutes, stirring often.
  • Heat oven broiler. (Can also be grilled.).
  • Line a broiler pan with foil and place the ribs, meat side down on the rack.
  • Brush with half of the sauce.
  • Broil 4 inches from the heat source for 6-7 minutes.
  • Turn over, brush with the remaining sauce and broil for 6-7 more minutes, or until edges are slightly charred.

I guess I would describe it as sweet, spicy and slightly tangy. If you would like it to have a little more kick, you could add 1/4 teaspoon more of chili powder. Please feel free to tweak my recipe to make it your own. I look forward to your comments.

1/4 cup yellow mustard
1/2 cup light brown sugar

1/4 teaspoon dried basil
1 1/2 teaspoons Worcestershire sauce
