1 (250 g) packet fresh fettuccine pasta
1 (100 g) packet sliced smoked salmon
4 -5 spring onions (shallots)
2 stalks celery
2 tablespoons oil
1/2 cup chopped parsley
1/2 cup capers (optional)
3/4 cup cream or 3/4 cup sour cream
salt (to taste)
fresh ground black pepper
chopped fresh dill

Steps:

  • Cook the fettucine in the usual way, and drain.
  • Finely chop the spring onions, and celery.
  • Heat the oil in a large frying pan.
  • Add onion, celery, parsley and capers.
  • Cook until the onion is soft and clear.
  • Cut the salmon into thin strips.
  • Stir in the salmon and cook further for 1 minute.
  • Add the dill and cream/sour cream and gently simmer for about 5 minutes or until the liquid has reduced to a sauce consistency.
  • Season with salt and pepper.
  • Serve immediately, spooned over the fettucine.

A creamy Alfredo pasta tossed with flakes of hot smoked salmon (or plain cooked salmon). Make sure you follow the steps to toss the sauce and pasta with some of the pasta cooking water - it makes all the difference to create a luscious creamy sauce using only 1/2 cup of cream!

8 oz / 250g dried fettuccine
3 tbsp / 50g unsalted butter
1 small shallot ((US) / eschallot (Australia), very finely minced (Note 1))
½ cup / 125 ml heavy cream ((Note 2))
¾ cup / 185 ml freshly grated Parmigiano Reggiano or parmesan ((Notes 3 and 4))
¼ teaspoon salt
Good grind of black pepper
6-7 oz / 180 - 200g hot smoked salmon fillet (, flaked (Note 5))
Fresh parsley ((optional))
Extra Parmigiano Reggiano

Steps:

  • Bring a large pot of salted water to boil. Add the fettuccine and cook until al dente (still firm but just cooked through). (Note 6)
  • Meanwhile, melt the butter in a deep fry pan over medium high heat. (Note 7)
  • Add the shallots and sauté for 2 minutes or until tender.
  • Add the cream and bring to boil. Turn heat down to medium low and simmer for 3 minutes.
  • Remove the fry pan from the heat and stir through the Parmigiano Reggiano, salt and pepper until the sauce is smooth.
  • TAKE OUT 1/2 cup of pasta water PLUS scoop out an extra mug (extra, just in case). Then drain the pasta in a colander.
  • Transfer the pasta and 1/2 cup of reserved pasta water into the fry pan with the sauce. Add salmon. Return the fry pan to the stove over medium heat. Toss very gently to coat the pasta in the sauce and allow the sauce to emulsify (Note 6) for 1 1/2 - 2 minutes, until the sauce coats the pasta - there should be no sauce pooled at the bottom of the skillet. (Note 7)
  • Remove from the stove and serve immediately, garnished with extra Parmigiano Reggiano and fresh parsley, if using.

1/2 lb dry fettuccine pasta
1 (8 ounce) package cream cheese
3/4 cup grated parmesan cheese
1/2 cup margarine
1/2 cup milk
1 teaspoon garlic powder
1/4 teaspoon dried basil
1 pinch ground nutmeg
red pepper, cut
1 tomatoes, seeded and cut
mushroom, cut
smoked salmon, broken into little pieces

Steps:

  • Bring a large pot of lightly salted water to a boil.
  • Add pasta and cook for 8 to 10 mis or until al dente; drain.
  • In a medium saucepan, combine cheeses, margarine, milk, garlic powder, basil and stir over low heat until smooth and creamy about 10 to 15 minutes.
  • Toss sauce vegetables, smoked salmon, sauce and pasta in a large bowl.
  • Sprinkle with nutmeg.

  • Melt butter and whisk in flour. Gradually add milk and sour cream. Season with salt and pepper. Stir until thick.

1 tablespoon margarine
2 garlic cloves, minced
1 tablespoon flour
1 1/2 cups skim milk
2 tablespoons light cream cheese
3/4 cup parmesan cheese
8 ounces smoked salmon
1 lb fettuccine

Steps:

  • Sauté garlic in margarine for 1 minute--do not let it brown.
  • Add flour and incorporate completely.
  • Add skim milk a little at a time and mix until flour has dissolved.
  • Cook on medium heat stirring continuously for 8 minutes.
  • Add cream cheese and mix until incorporated.
  • Cook for 2 minutes.
  • Add parmesan cheese and salmon.
  • Cook fettuccine according to directions and drain.
  • Combine sauce with fettuccine and serve immediately.

  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until al dente. Reserve 1 cup of the pasta water then drain the pasta and put it back into the pot. Place the spinach on top of the pasta.
  • While the pasta cooks, begin making the sauce. Heat the oil in a large pan over medium-high heat. Add the onion and cook for 2 minutes, until it is transparent. Add the garlic and cook for 1 minute.
  • Break the smoked salmon into pieces and add it to the pan along with the cherry tomatoes, artichoke hearts, sour cream, lemon juice, capers, chili flakes, and ½ cup of the pasta water. Bring the pan to a boil and stir until everything is creamy and mixed together. Season to taste with salt and pepper then mix in the dill.
  • Pour the smoked salmon sauce into the pasta pot and mix everything together. If needed, add a splash more pasta water to loosen the pasta.
