Mashed Red Potatoes make an ideal side dish for your holiday table and are easy enough to make any time!

2 pounds red potatoes (cut into 1-inch cubes (7 or 8 small red potatoes))
4 tablespoons butter (1/4 cup)
1 tablespoon minced garlic (about 3 large cloves)
1/2 teaspoon fine sea salt
1/3 cup extra virgin olive oil
minced chives (for garnish, optional)

Steps:

  • Place raw red potato cubes in a large steamer basket over a large pot of boiling water. Cover and steam until very tender, 25 to 30 minutes.
  • When potatoes are nearly tender, melt butter in a small saucepan. Add garlic; cook and stir until fragrant, about 1 minute. Add salt and olive oil; stir until just heated through. Remove from heat.
  • Transfer tender potatoes to a large bowl. Pour olive oil mixture over and mash with a potato masher to desired consistency. Garnish with chives if desired and serve.

3/4 pound small red bliss potatoes, quartered
12 whole roasted garlic cloves
1/2 cup heavy cream
2 tablespoons butter
Salt and freshly-ground black pepper
1 tablespoon chopped green onion, for garnish

Steps:

  • In a saucepan cover unpeeled potatoes with cold water and bring to a boil. Cook just until tender -- do not overcook or potatoes will be watery. Drain well, return pan with potatoes to low heat and shake to dry. Squeeze in garlic cloves, cream, butter, and salt and pepper to taste. Mash together with a potato masher until ingredients are combined but potatoes are still lumpy.

Mashed red potatoes are the perfect side dish for any occasion. Removing excess starches and boiling until fork tender ensures a fluffy and creamy texture.

8 cups water
1 ½ teaspoon kosher salt (divided)
2 pounds red potatoes
2 tablespoons unsalted butter
½ cup half-and-half
black pepper (as needed for seasoning)
1 tablespoon chopped chives

Steps:

  • In a large pot add 2 quarts (8 cups) of water and 1 teaspoon salt, bring to a boil.
  • Cut potatoes into quarters and add to a colander. Rinse under cool water to remove the starches. The water should run clear, about two to three times. Drain and add to the boiling water.
  • Cook potatoes until fork-tender, about 15 minutes.
  • Drain using a colander and then rinse with hot water to remove any residual potato starches, 30 seconds.
  • Add well-drained potatoes back to the pot and use a potato masher to lightly break them down until smooth.
  • Add butter and gently fold in.
  • Microwave half-and-half for 45 seconds until warmed, about 120ºF (49ºC).
  • Whisk together half-and-half and ½ teaspoon salt.
  • Gradually fold into potatoes in three additions, until the half-and-half is absorbed. If needed rewarm the potatoes over medium heat, stirring occasionally.
  • Taste and season with salt and pepper as desired.
  • Garnish with black pepper and chives.

15 -18 small red potatoes, leave skin intact
3 teaspoons salt
1 teaspoon pepper
1/2 cup 1% low-fat milk
1/2 teaspoon coarse black pepper
1/2 teaspoon garlic powder
1 tablespoon butter, melted

Steps:

  • Bring water to a boil in a large stockpot. Add the potatoes, 2 teaspoons of salt, and pepper and leave to a roiling boil for approximately 25 minutes or until fork tender. Strain the potatoes, reserving 1 cup of the liquid.
  • Return potatoes to the stockpot and mash lightly with a potato masher adding the reserved liquid, milk, remaining 1 teaspoons of salt, black pepper, and garlic powder. Stir to combine-being careful not to over-mash. At the last, fold in the melted butter and serve immediately.

1 head garlic
1 tablespoon extra-virgin olive oil
1 teaspoon fresh thyme leaves
Kosher salt and freshly ground black pepper
5 pounds russet potatoes, peeled and cut into 2-inch chunks
2 cups low-sodium chicken broth, hot, plus more if needed
3 tablespoons chopped fresh chives
Flaky sea salt

Steps:

  • Preheat the oven to 375 degrees F.
  • Slice the top third off the head of garlic. Place on a piece of aluminum foil and drizzle with the olive oil. Sprinkle with the thyme leaves and some kosher salt and pepper, then place the top back on the garlic. Wrap in the foil and roast until the garlic is brown and very soft, about 45 minutes.
  • Meanwhile, cover the potatoes with cold water in a large pot. Add 1 tablespoon of kosher salt to the water and bring to a simmer over medium-high heat, about 15 minutes. Simmer until the potatoes are fork-tender, another 15 to 20 minutes.
  • Drain the potatoes and return them to the pot. Add the hot chicken broth. Squeeze the roasted garlic out of its skin into a small bowl, drizzling in any olive oil from the foil. Mash the garlic smooth with a fork. Add the garlic to the potatoes and mash until smooth using an immersion blender fitted with the whisk attachment. Add more broth as needed. Once smooth, add three-quarters of the chives and some sea salt and black pepper, then mix through.
  • Tip into a serving bowl and garnish with the remaining chives.

1 tablespoon kosher salt
1 ½ cups half-and-half
½ cup butter
½ cup sour cream
2 teaspoons kosher salt
1 teaspoon ground black pepper

Steps:

  • Place potatoes and 1 tablespoon kosher salt into a large pot and cover with water; bring to a boil. Reduce heat to medium-low, cover, and simmer until tender, 25 to 35 minutes. Drain and transfer potatoes to a large bowl.
  • Mix half-and-half and butter in a small saucepan over medium-low heat until heated through and butter is melted, 5 to 10 minutes.
  • Blend potatoes with an electric hand mixer in the large bowl until mashed. Slowly pour 3/4 the cream-butter mixture into blended potatoes; mix on lowest speed until fully incorporated.
