Light Chocolate Chip Oatmeal Pancakes for Two image

I have experimented many times and have been improving - this recipe gives instructions from my experiences for the best results that I've had so far. Oatmeal pancakes form scratch for two servings, or a hearty single serving. Uses egg whites and nonfat milk and no added sugar.

Number Of Ingredients 9

1/2 cup rolled oats
1/4 cup nonfat milk
1/4 cup water
3 tablespoons whole wheat flour
1 egg white
1 teaspoon baking soda
1/2 teaspoon white vinegar
1 tablespoon chocolate chips
1 tablespoon Splenda granular (more or less to own personal preference)

Steps:

  • Pour water and milk over oats, let sit for 10 minutes, or until oats has noticeably soaked some of the liquid.
  • Add baking soda, splenda and flour.
  • Mix in egg white and white vinegar to combine well.
  • Stir in chocolate chips.
  • Spray skillet and set over high heat.
  • Wait until well heated, about 5 minutes.
  • Add batter, 1 tbsp at a time, and tilt the pan so that it spreads and the size becomes bigger.
  • Wait until bubbles set, about 1 minute, before flipping.
  • Repeat for the remaining batter until finished.
  • Serve hot!

From the Krusteaz website. I haven't tried them yet, but they sound like something my preschooler would enjoy! I think they'd also be a good dessert for after "breakfast for dinner" meals.

2 cups buttermilk pancake mix (calls for Krusteaz brand)
1/4 cup light brown sugar, packed
1/4 teaspoon salt
1 1/4 cups milk
1 egg
3 tablespoons melted butter
1 teaspoon vanilla
1/2 cup mini chocolate chip
1 teaspoon cinnamon
additional butter
cinnamon sugar
3/4 cup rolled oats (quick or old fashioned)
2 teaspoons cinnamon

Steps:

  • Combine pancake mix, brown sugar, chocolate chips (or cinnamon or oats and cinnamon, depending on variety) and salt.
  • Add milk, egg, butter and vanilla.
  • Whisk together until blended; do not over mix (should still have a few lumps).
  • For each pancake, pour 2 tablespoons batter onto lightly greased hot griddle over medium heat (375* F on an electric griddle).
  • Cook 1 1/2 minutes per side, turning only once.
  • Garnish Snickerdoodle Cookie Pancakes with additional butter and sprinkle with cinnamon-sugar.
  • Garnish Chocolate Chip Cookie Pancakes with whipped cream and additional mini chocolate chips or as desired.
  • Garnish Oatmeal Cookie Pancakes with jam or as desired.

"This recipe yields just a short stack of oat pancakes that's perfect for one or two," reports Florence Groves of Vancouver, Washington. "When we used to travel in our motor home, I'd measure out the dry ingredients for individual batches in resealable bags, then just combine with an egg, buttermilk and butter for a quick meal."

3/4 cup quick-cooking oats
1/2 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon sugar
1 egg
1 cup buttermilk
3 tablespoons butter, melted

Steps:

  • In a bowl, combine the oats, flour, baking soda and sugar. Combine the egg, buttermilk and butter; stir into the dry ingredients just until moistened. , Pour batter by 1/3 cupfuls onto a greased hot griddle. Turn when bubbles form on top; cook until second side is golden brown.
