LIGHT CARAMEL CORN

Light Caramel Corn image

I'm a diabetic. (Trivia fact: Diabetics have no dietary restrictions.) My nutritionist gave me this great recipe for caramel corn out of a diabetic cookbook. It's light, filling, and makes a great snack. It's a hit with the kids and many of my friends. The popcorn can be fresh popped or out of a microwave. I'm not sure exactly how much popped popcorn is in a microwavable bag, but I usually use a full bag.

Time 11m

Yield 2 , 2 serving(s)

Number Of Ingredients 3

6 cups popped popcorn
2 tablespoons butter
2 tablespoons honey

Steps:

  • Pop the popcorn and put it into a bowl. Make sure there is some extra room in the bowl if possibble. You'll need that room when you toss the popcorn.
  • In a small microwave safe bowl, microwave together the butter and honey, only until melted. Over heat it, and it WILL burn (trust me, I've done it.).
  • Using a regular spoon, drizzle 2 spoonfuls of the butter/honey mixture over the popcorn and toss thoroughly. THIS IS CRUCIAL. Put any more on at once and it won't turn out right.
  • Repeat step three. Most of the mixture will be gone before it seems like you're getting anywhere with this. Be patient, and when the honey/butter is all gone, enjoy:).

CLASSIC CARAMEL CORN

This recipe I really liked, but I found it a little sweet for my taste. However, I liked how much corn it covered. Reminded me a little of popcorn balls.

Categories     Dessert

Time 1h

Yield 16 cups, 16 serving(s)

Number Of Ingredients 8

cooking spray, to taste (I used my butter wrapper insides instead)
4 quarts popped popcorn
1 cup brown sugar
1/2 cup light corn syrup or 1/2 cup dark corn syrup
1/2 cup butter
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon pure vanilla extract

Steps:

  • Spray large shallow roasting pan with cooking spray. I used my butter wrappers instead of spraying. Add popcorn and place in preheated 250 degree oven while preparing caramel.
  • Mix brown sugar, corn syrup, salt, butter, and salt in a 2-quart saucepan. I skipped the salt because I was using salted popcorn, but your personal preference here. Stirring constantly, bring to a boil over medium heat.
  • Boil 5 minutes without stirring. Remove from heat. Stir in baking soda and vanilla and mix well.
  • Pour syrup over warm popcorn and stir evenly to coat.
  • Bake for 45 minutes, stirring occasionally. Remove from oven and spread on foil that has been sprayed with cooking spray. (I skipped the cooking spray here too).
  • Cool and break apart. Store in tightly covered container. (I think the purpose of the tightly covered container is so you can't open and eat it as quickly).

CARAMEL CORN

Caramel Corn image

This is always a huge success, no matter when I serve it. Kids and adults alike love it. Very addictive!

Provided by Marg CaymanDesigns

Categories     Dessert

Time 1h20m

Yield 12 serving(s)

Number Of Ingredients 8

2 (3 1/2 ounce) bags microwave popcorn, popped (I use light butter flavored)
1/2 cup butter
1 cup packed dark brown sugar
1/4 cup light corn syrup
1/2 teaspoon salt
1/4 teaspoon baking soda
1/2 teaspoon vanilla
1 -2 cup nuts (optional)

Steps:

  • Preheat oven to 250°F Spray large baking sheet or roasting pan with cooking oil spray and set aside.
  • In a large sauce pan, melt butter over low heat. Add next 3 ingredients and bring to a boil, stirring constantly. Cover, reduce heat and gently boil without stirring for 4-5 minutes.
  • Remove from heat and carefully add soda and vanilla (it will froth and foam). Mix real well.
  • Remove unpopped kernels from popcorn (see tip below). Spread popcorn (& nuts if using) out on pan. Pour caramel mixture over popcorn and mix well. Don't worry if every kernel isn't coated. It will get better distributed when you stir it while it is baking.
  • Bake 1 hour, stirring every 15 minutes. Cool completely. Break apart and store in tightly sealed container.
  • Tip: the easiest way to get the kernels out is to put all the popcorn in a large bowl. Shake it slightly so the kernels settle to the bottom of the bowl, then transfer the popcorn, handful by handful to the roasting pan, leaving the kernels behind.

THE EASIEST AND BEST CARAMEL CORN I'VE EVER MADE

The Easiest and Best Caramel Corn I've Ever Made image

Oh LORD, have mercy! LOL! This stuff is the kind-of snack you sit down in front of the tv with and you look down and it's all gone! The best part about this recipe is (other than the end product) the fact no candy thermometer is necessary.

Provided by Redneck Epicurean

Categories     Lunch/Snacks

Time 1h10m

Yield 1 1/2 gallon bag

Number Of Ingredients 7

2/3 cup unpopped popcorn
2 tablespoons oil (for popping)
1 cup butter
2 cups brown sugar
1 teaspoon salt
1/2 cup corn syrup
1 teaspoon baking soda

Steps:

  • Preheat the oven to 200°.
  • Spray your largest cookie sheets.
  • Pop the popcorn in the oil and set aside. I do this in two batches. Place in a very large bowl. (Plastic bowls work really well because the caramel won't stick; you could also spray the bowl with a bit of Pam).
  • Over medium heat in a heavy saucepan, melt butter and stir in brown sugar, salt and syrup. Bring to a rolling boil.
  • When it starts to boil, boil a full 5 minutes stirring constantly with a wooden spoon. (I used a plastic spatula and ended up sacrificing it)
  • Remove from the heat and add the soda. Pour caramel directly on the popcorn and stir to coat completely.
  • Pour popcorn onto the sheets and bake for 1 hour, stirring every 15-20 minutes. Allow to cool and break into pieces. Store in zip-top bags.

  • Heat the coconut oil in a very large saucepan over medium high heat. Once the oil is HOT add the corn kernels and a pinch of salt. Stir to coat the corn kernels evenly. Place the lid on the saucepan and shake the pan every 10-15 seconds until the corn starts to pop. Once the kernels start popping, shake the pan continuously and vigorously. Listen closely to the popcorn, when you hear the popping begin to slow, 1 to 2 seconds between pops, remove the pan from the heat. DO NOT wait for every kernel to pop or you'll burn the popcorn. Take the saucepan off the heat and pour popcorn into a large bowl. Set aside.
  • Place butter in small pot over medium. Add the brown sugar and corn syrup then stir until the sugar dissolves and butter melts. Bring to a boil, then turn heat down to low and allow it to simmer for 4-5 minutes without stirring.
  • After it has simmered, stir the mixture and continue to simmer for 5-6 minutes, stirring every 30 seconds. The caramel mixture will start to become a deep golden brown color. Turn off the heat and add in the salt, baking soda, and vanilla extract; stir well.
