BREAD MACHINE WHITE BREAD RECIPE

Steps:
- Add the ingredients in the order listed to the bread maker pan. The ingredients are listed in the order that Cuisinart machines require them to go. Check your brand's manual for the correct order to add ingredients. If it differs, add them in the order that your manual states.
- Select the basic/white bread setting. Choose the 2 lb loaf size and your preferred crust color. *see notes for making a smaller loaf
- Optional: At the end of the last kneading cycle, remove the kneading paddle. If you miss this step, remove the paddle using oven mitts after the bread cools.
- When baking is complete, remove from the bread pan immediately. Cool on a wire rack for at least 15-30 minutes before slicing.

SOFTEST SOFT BREAD WITH AIR POCKETS USING BREAD MACHINE
I played around with basic white bread recipes quite a bit and finally have come up with the perfect soft, fluffy, white bread with air pockets. Maybe a little too soft to slice right away. But if you let it cool a bit, it shouldn't be a problem. Toasted with a little butter and jam, it is a slice of heaven!

Steps:
- Pour warm water into the pan of bread machine and stir honey into warm water until dissolved. Add yeast to the mixture and let stand until yeast begins to foam, about 10 minutes. Add flour, olive oil, and salt to the bread pan in the order recommended by the manufacturer.
- Select soft setting if machine has that option; otherwise select regular setting and start the machine. Let finished bread cool before slicing.

SOFTEST EVER BREAD MACHINE BREAD
My sister gave me this recipe soon after I brought home my bread machine. It's a staple in our house. Soft and fluffy and great for sandwiches or just to eat fresh out of the oven! UPDATE 3/25/2005 - I made this using the dough cycle of my bread maker today but baked it in the oven and it turned out perfectly! I baked it at 350°F for 25-30 minutes.

Steps:
- Place the water, sugar and yeast in the pan of the bread machine.
- Let the yeast dissolve and foam for 10 minutes.
- Add the oil, flour and salt to the yeast.
- Select Basic or White Bread setting, and press Start.
- You can also use the dough cycle of your bread maker and then place in a greased loaf pan; punch down and let rise again and then bake at 350 for 25-30 minutes or until done.

LIGHT BREAD MACHINE SANDWICH BREAD
I have been experimenting for awhile trying to make a bread machine sandwich bread that turns out as airy and light as a hand kneaded loaf. This is what I have come up with. I STRONGLY urge making it exactly as indicated the first time. Good luck! Comments and suggestions are always welcome.

Steps:
- Heat water to 120 degrees. I use a meat thermometer to check the temperature. Do not guess at the temperature of your water. Too hot or too cold makes a difference.
- Add sugar to water and stir until dissolved. (Note: If you do not dissolve the sugar, you will not get the same result.).
- Add 2 packages of RAPID RISE yeast to the water. (Note: regular yeast will not give you the same result.).
- Let mixture sit for 10 minutes. That seems to be the best amount of time. Anything more than 20 minutes seems to have a negative effect on the results. If you skip this step you won't get the fluffiness you're looking for. This should be in ADDITION to your bread machine rise.
- Spray bread machine pan with non-stick spray.
- Pour yeast mixture into pan. (My bread machine directions say always pour dry ingredients in first, but this works for me).
- Add oil. (I've tried this recipe with 4T of oil and no butter and 4T of butter and no oil, but did not get the same result.).
- Add melted butter. Salted or unsalted butter doesn't seem to make a difference. If I use unsalted butter, I up the salt to 1 1/2 teaspoons.
- Add flour.
- Add beaten egg.
- Add salt.
- Select medium crust, white bread and 2-pound loaf cycle.
- Remove the bread from the bread pan after the cycle has finished and place on a rack so the bottom doesn't get soggy. Try to resist taking that first slice while it's still warm. Sometimes I do -- sometimes I don't. :-) Lasts about 2 weeks in a refrigerator. Lasts about 3 days if kept out.
- You can take this basic recipe and add whatever spices you enjoy. I've used garlic, oregano, basil, etc. I haven't tried cheese yet, but if someone out there does would love to know how it turns out!

- Place the ingredients into the pan of a 1 ½ to 2 pound bread machine in the order recommended by the manufacturer.
- Select the program for basic white bread. Press Start.
- When the baking completes, remove the pan from the machine. Allow the bread to cool in the pan for about 5 minutes. Remove the bread from the pan, sometimes this requires a shake to get the bread out of the pan. Set the loaf on a wire rack to cool.
- Store, in a bread box, bread bag or well wrapped on the counter for 4 days, or freeze for up to 3 months.

- Place all ingredients except melted butter in the pan of your bread machine according to manufacturer's directions.
- Select dough cycle.
- Check dough after 5 minutes mixing and add 1 to 2 tablespoons of water (or more) if needed.
- When cycle is complete, remove dough to a lightly floured board and punch down.
- Divide dough in half and roll each half to 3/4" thickness.
- Cut with a 2 1/2" round biscuit cutter and place on greased baking sheet.
- Brush tops with melted butter, cover and let rise in a warm place until doubled (about 1 hour).
- Bake at 350° for 10 to 15 minutes or until lightly browned.
