1 1/2 cups all-purpose flour
2 teaspoon baking powder
1/2 teaspoon salt
1 cup Greek yogurt
1 cup sugar
3 large eggs
2 tablespoon lemon zest
1 teaspoon vanilla extract
1/2 cup vegetable oil
1 1/2 cups blueberries (fresh or frozen)
1 tablespoon all-purpose flour
1/3 cup lemon juice (freshly squeezed)
1 tablespoon sugar
1 cup icing sugar
1/4 cup lemon juice (freshly squeezed)
1 teaspoon vanilla extract
milk, if needed to thin out the glaze

Steps:

  • Preheat the oven to 350 F degrees. Grease an 8.5x4.5x2.5 inch loaf pan with butter or cooking spray then flour it.
  • In a large bowl whisk together the 1 1/2 cups of flour, baking powder and salt. Set aside. In another bowl, whisk together the yogurt, sugar, eggs, lemon zest, vanilla extract and vegetable oil.
  • Add the wet ingredients to the dry ingredients and whisk until combined.
  • In another small bowl mix together the blueberries with the 1 tbsp of flour. This will prevent the blueberries from sinking to the bottom of the loaf. Gently fold the blueberries into the batter.
  • Pour the batter into the prepared loaf pan and bake for 50 minutes or until an inserted toothpick in the center of the loaf comes out clean. Each oven is different so baking time could vary greatly. Mine took about 1 hour and 10 minutes to be completely done.
  • While the loaf is baking make the lemon syrup by cooking the lemon juice and 1 tbsp of sugar in a small saucepan just until the sugar dissolves and the mixture is clear. Set aside.
  • Make the lemon glaze by whisking the icing sugar, lemon juice and vanilla extract. This glaze needs to be quite runny, so add milk as needed, about a tbsp at a time until the desired consistency is achieved.
  • When the cake is done, remove it from the oven and allow it to cook in the loaf pan for about 10 minutes. Remove from loaf pan onto a baking rack, then place the baking rack over a baking sheet. Poke holes in the cake using a skewer or toothpick then pour the lemon syrup all over the cake. Allow it to cool.
  • Once the cake is cooled, drizzle with the lemon glaze, cut into slices and serve.

Steps:

  • Preheat oven to 200°C/390°F (180°C fan forced).
  • Line loaf pan: Butter and line a loaf pan with parchment / baking paper. The picture pan is 21 x 11 x 7 cm (8.3 x 4.5 x 2.75") which makes a nice tall loaf.
  • Coat blueberries: Toss blueberries in flour (less flour sticks if dry, more if frozen). This helps keep them suspended in the batter.
  • Whisk Dry ingredients in a bowl.
  • Add Wet ingredinets: Make a well in the Dry ingredients. Add Wet ingredients. Whisk until incorporated.
  • Fold in blueberries: Fold in blueberries, including any flour remaining in the blueberry bowl.
  • Bake: Pour into the prepared tin. Bake for 50 minutes, then cover with foil. Bake for a further 15 - 25 minutes, or until a skewer comes out clean. Check after 15 minutes, then if the skewer comes out with batter on it, bake a further 10 minutes.

½ cup (4 oz.) unsalted butter, soften
1 cup sugar
1 lemon, zest
½ cup milk
2 large eggs
1 ½ cups all-purpose flour
1 ½ tsp baking powder

1 ½ cup (8 oz.) fresh blueberries
¼ cup sugar
1 lemon (¼ cup), juice

Steps:

  • Preheat the oven to 350 degrees F. Grease and line a 8x4 (or 9x5) loaf pan with parchment paper.
  • Using a whisk or electric mixer, cream together the butter, sugar, and lemon zest. Add the milk and eggs then mix until combined.
  • Mix together the flour, baking powder, and salt together and then slowly add to the batter in batches, whisking in between, until well incorporated and the batter is smooth. Using a spatula, gently fold in most of the blueberries, reserving a small handful of blueberries.
  • Pour the batter into the loaf pan and sprinkle the remaining blueberries on top. Bake for 45-60 minutes, until a wooden skewer comes out clean in the center.

2 cups sugar
2 cups sultanas or 2 cups mixed dried fruit
2 ounces butter
3 cups flour
1 teaspoon mixed spice

Steps:

  • Heat gently together in a pot on stove top the water, sugar, dried fruit and butter until butter melts and sugar dissolves.
  • Allow to cool for a few minutes then stir in flour and spices and baking soda.

This recipe is every bit as good as my Lemon Zucchini Loaf, which is saying a lot! It's moist and flavorful, with that lovely tart hit of lemon from the glaze that's brushed over it while it's still hot from the oven. Give this one a try. You won't be disappointed.

Number Of Ingredients 12

1-1/2 cups + 1 Tbsp. all purpose flour, divided
2 tsp. baking powder
1/2 tsp. salt
1 cup full-fat sour cream or Greek yogurt
1 cup sugar
3 large eggs
Lemon zest from 1 lemon
1/2 tsp. vanilla extract
1/2 cup vegetable oil or melted margarine
1 heaping cup blueberries, fresh or frozen
1 cup powdered sugar
1/4 cup fresh lemon juice (juice from 1 lemon - top up with bottled if necessary)

Steps:

  • Preheat the oven to 350 degrees F. Grease the bottom and sides of a 9x5" loaf pan, a mini-loaf pan, or a cupcake pan. (or you can use cupcake liners.)
  • Wash and dry a small - medium sized lemon. Grate all of the zest from the lemon, and squeeze all the juice. If needed, add bottled lemon juice to get ¼ cup of juice.
  • In a large bowl, beat together sour cream or yogurt, sugar, eggs, lemon zest, vanilla, and oil or melted margarine.
  • On top of the wet ingredients, pile the flour, then sprinkle over the flour the baking powder and salt. Stir the dry ingredients together first, then slowly fold the dry ingredients into the wet, just until incorporated. In a separate bowl mix the blueberries with 1 Tbsp. of flour and then gently fold them into the mixed batter.
  • Pour the batter into the prepared pan and bake until a toothpick inserted in the center comes out clean:
  • - 55 minutes - 1 hour for a single loaf
  • - 30 - 35 minutes for 8 mini loaves
  • - 20-25 minutes for 12 cupcakes
  • Remove from oven and allow to cool in the pan for 5 minutes for mini loaves or cupcakes; 10 minutes for a single loaf. Transfer to a wire rack and put a sheet of waxed paper underneath to catch the drips of the glaze.
  • Whisk together the powdered sugar and lemon juice and brush over the top and sides of the loaf; or tops only of mini loaves or cupcakes Allow glaze to set/harden before serving.

BLUEBERRY STREUSEL LOAF CAKE

Baking it at a higher temperature for the first 20 to 25 minutes helps achieve a crisp topping, while finishing it at a lower temperature helps ensure a moist center. This recipe calls for fresh blueberries, but frozen work, too. If you use frozen, don't thaw them first, and keep in mind that they may release additional liquid during baking, which will add more color to the loaf. Steps:

  • Make the streusel: In a medium bowl, stir the flour, oats, sugar, baking powder, cinnamon and salt together to combine. Add the cubed butter and toss until each cube is fully coated in flour.
  • Cut the butter into the flour mixture with your hands or a pastry cutter until the mixture forms large clumps. Refrigerate while you make the batter.
  • Heat the oven to 400 degrees. Lightly grease a 9-by-5-inch loaf pan with nonstick spray.
  • Make the cake: In a medium bowl, toss the blueberries with 1/4 cup/30 grams all-purpose flour. In another medium bowl, whisk the remaining 2 cups/260 grams flour with the baking powder, baking soda and salt to combine.

  • Remove the bowl from the mixer and, using a silicone spatula, fold in the blueberries (and any remaining flour in the bowl with them) by hand until they are evenly distributed throughout the batter.
  • Pour half of the batter into the prepared pan and spread it into an even layer. Crumble half of the streusel on top in an even layer. Pour the remaining batter into the loaf pan, spread into an even layer and crumble the remaining streusel on top. The loaf pan will be just over 3/4 full. Place it on a parchment-lined baking sheet.
  • Transfer the loaf to the oven and bake for 20 to 25 minutes, until the bread has risen about 1/2 inch above the edge of the loaf pan. Lower the temperature to 325 degrees and bake until a toothpick inserted into the center comes out clean, 45 to 55 minutes, tenting the loaf with foil if it's browning too quickly.
  • Set the cake on a wire rack and let cool in the pan for 15 to 20 minutes, then run an offset spatula around the outside edge and gently unmold the cake onto a wire rack. Cool completely before slicing and serving.

1 tablespoon confectioners' sugar
¾ cup white sugar
¼ cup melted butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
  • Grate the zest from the lemon onto a small plate. Cut the lemon in half, and squeeze the juice from both halves. Make a topping by whisking together 1 teaspoon of the lemon zest, 1 tablespoon of the lemon juice, and the confectioners' sugar in a small bowl. Set aside.
  • Whisk together the white sugar, melted butter, eggs, sour cream, the remaining lemon zest, and the remaining lemon juice in a large bowl until evenly blended. Stir in the milk; set aside.
  • Whisk together the flour, baking powder, and salt in a separate large bowl. Remove 3 tablespoons of the flour mixture and set aside. Make a well in the center of the flour mixture; pour the milk mixture into the well and stir the batter just until combined.
  • Fold the frozen blueberries into the reserved 3 tablespoons of the flour mixture, then fold the blueberries into the batter. Pour the batter into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 60 minutes.
  • Remove from oven; immediately poke holes all over the top of the loaf with a toothpick, and pour the topping evenly over the loaf. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

Steps:

  • Preheat oven to 350 degrees. Toss one cup of the blueberries in a bowl with one-half tablespoon flour and set aside. Butter a 9-by5-by-3-inch baking pan and dust with one-half tablespoon flour.

  • Cream together the softened butter and the sugar until the sugar is fully mixed into the butter with spatula or electric mixer.
  • Add beaten eggs, milk and vanilla to your bowl and mix well until combined.
  • In a second bowl add 2 cups of flour, baking powder and salt and combine until mixed.
  • Add the flour mixture to the wet ingredients and stir until just combined. Be careful not to overmix.
  • In a small bowl add blueberries and sprinkle with a teaspoon of flour, then stir the blueberries so the flour mixes evenly.
  • Fold half of the blueberries into the batter, then add the batter to the pan. Add the remaining blueberries to the top of the batter and swirl with a spoon.
  • (Optional) Sprinkle the top of the loaf with 1-2 tablespoons of sugar. A course sugar works best, see the notes for more details.
  • Bake in the oven for 70-85 minutes or until completely cooked through. Check with a toothpick by inserting into your loaf ( I start checking at 60 minutes to be safe- ovens can sometimes vary), and making sure the toothpick doesn't have raw batter clinging to it. (It may have blueberry, that's ok!)
  • Let the blueberry bread cool for 10-15 minutes, then remove from the pan. It slices a lot easier if you let the bread cool completely. Enjoy!

3/4 cup sugar, divided in two bowls
2 egg whites
2 lemons, rind of, grated
1 cup flour, divided

1/3 cup fat free sour cream
3 cups mixed berries, divided (fresh or frozen)

Steps:

  • Preheat oven to 350°F, and grease and flour a 9"x11" cake pan. (grease normally, then toss about 3 tablespoons inside and shake around until all sides are floured, then discard the remaining flour.)
  • With an electric mixer beat the cream cheese and half of the sugar together in a large bowl.
  • Mix in the egg whites and lemon peel. Then in a separate bowl add 1 cup of the flour and baking soda and mix well.
  • Add this to the cream cheese mixture alternately with sour cream, making sure to mix well after each addition.
  • Pour the cream cheese mixture into the cake pan. Then toss 2 cups of the berries with left over 1/4 cup sugar and 2 teaspoons of flour on top of the batter.
  • Now bake it for 40-45 minutes, or until a wooden skewer comes out clean.
  • Garnish with the remaining cup of berries and dust with icing sugar before serving. You can serve it cold or slightly warm. its a very nice light spring dessert.

2 1/4 cups all-purpose flour
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp fine salt (reduce to a pinch if using salted butter)
1 pint fresh blueberries (*or see Notes below for frozen blueberries)
1/2 cup unsalted butter (at room temperature)
1 cup granulated white sugar
2 large eggs (at room temperature)
2 tsps vanilla
3/4 cup buttermilk (at room temperature *see Notes below for how to make your own buttermilk)
Icing/Confectioners' sugar (for garnish)

Steps:

  • Preheat oven to 350F with rack in centre of the oven.
  • Grease and line a 9x5 or 4x11 loaf pan with parchment paper that overhangs the sides by about 1 inch. Set aside.
  • In a medium bowl, whisk together the flour, baking powder, baking soda and salt. Set aside.
  • In another medium bowl, toss the fresh blueberries with 1 Tbsp of the flour mixture. Set aside.
  • In a large bowl with an electric mixer or the bowl of a stand mixer fitted with a paddle attachment, beat together the butter and sugar at medium speed until light in colour and fluffy, about 3 minutes. Add the eggs, one at a time, beating well between each addition.
  • *Take a moment at this point to scrape down the bowl well, especially the bottom of the bowl, where unincorporated butter sometimes hide. After scraping, beat for 30 seconds to incorporate any bits.
  • Beat in the vanilla.
  • With the mixer on low, mix in half of the flour mixture, then add all of the buttermilk, followed by the remaining flour mixture. Scrape down the sides of the bowl and mix in.
  • Remove the mixer bowl from the mixer. Use a rubber spatula to gently fold in the blueberries and any excess flour in the bowl with the blueberries.
  • Spoon the batter into the prepared loaf pan, mounding it slightly in the centre.
  • Bake the loaf for 55-60 minutes, or until a skewer inserted into the middle of the cake comes out clean.
  • Allow the loaf to cool in the pan for 10 minutes, then gently lift it out of the loaf pan by grabbing the edge of the parchment along the sides. Place onto a cooling rack. Allow to cool a few minutes more, then gently remove the parchment. Allow the loaf to cool completely.
  • Serve garnished with some icing/confectioners' sugar, if desired.

2 cups sugar
4 large eggs
2/3 cup butter, melted & cooled
1 teaspoon vanilla extract
3 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1 cup milk
4 tablespoons grated lemon zest
2 cups fresh blueberries
4 tablespoons all-purpose flour
4 tablespoons lemon juice, freshly squeezed
1 cup icing, sifted

Steps:

  • Preheat oven to 350 deg F.
  • Butter two 8 x 4 inch loaf pans and line the bottom and two long sides of the pans with parchment paper. I use one sheet and let it overhang a bit, then use the parchment to lift the loaf out of the pan when ready.
  • In a large bowl, beat together the butter, sugar, eggs and vanilla extract until mixed.
  • In a separate bowl, combine the flour, baking powder and salt and stir with a fork.
  • Add the flour mixture to the egg mixture, alternating with the milk. Mix just until combined.
  • In the bowl that you mixed the flour in, add the blueberries, lemon zest and 4 tablespoons of flour, tossing gently until coated. The flour will help prevent the berries from sinking to the bottom.
  • Carefully and quickly fold the berries into the batter, then divide the batter equally between the prepared pans.
  • Bake in preheated oven for between 45 - 55 minutes, or until a cake taster inserted into the centre of the loafves comes out clean.
  • Cool the loaves in the pan for 15 minutes, then remove from the pan using the parchment paper handles and let cool on a rack.
  • LEMON GLAZE:.
  • Combine the juice and icing sugar in a bowl and beat with a mixer until smooth. Drizzle the top of the cooled loaf with the glaze, letting it pour down the sides.
