This recipe is easy to make and very healthy. You may substitute other firm fleshed fish such as ocean perch or grouper.

2 (6 ounce) fillets red snapper
¼ teaspoon garlic powder
salt and ground black pepper to taste
¼ cup picante sauce
½ lime, juiced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place a sheet of aluminum foil onto a baking sheet, and grease lightly.
  • Place fillets onto the foil, and sprinkle with garlic powder, salt, and pepper. Spoon picante sauce over fillets, and squeeze lime juice over the top. Bring the sides of the foil together, and fold the seam to seal in the fish.
  • Bake in preheated oven for 15 to 20 minutes, or until fish flakes easily with a fork.

4 to 5 Thai chilies, thinly sliced
3 cloves garlic, thinly sliced
1⁄2 cup fish sauce
1⁄4 cup fresh lime juice (about 2 limes)
1 tablespoon light brown sugar

Steps:

  • In a small jar add the Thai chilies and garlic. Then add the fish sauce, lime juice, 1 to 2 tablespoons of water and brown sugar. Mix until the sugar is dissolved. Secure an airtight lid. For the best flavor, refrigerate for 2 hours before using.

2 red chillies , deseeded and chopped
2 shallots , chopped
1 garlic clove , chopped
1 lemongrass , outer leaves removed, chopped
small knob ginger peeled and chopped
2 tsp soy sauce
pinch sugar
2 tbsp vegetable oil
2 fillets lemon sole , about 120g each
chives and coriander, to serve

Steps:

  • Make a paste by blending together the chillies, shallots, garlic, lemongrass, ginger, soy sauce and sugar in a blender or coffee grinder, or use a pestle and mortar. Heat the oil in a small frying pan and cook the paste for 2 mins until it has darkened slightly and you can really smell the spices. Season with a little salt if you like, then set aside.
  • Heat the grill to medium. Put the fish onto a grill pan, then use the back of a teaspoon to smear the paste all over, making a thin layer covering the whole fish. Pop under the grill and cook for 10 mins until the fish flakes easily. Serve with rice and steamed bok choy. Sprinkle chives and coriander on the fish to serve, if you like.

1/3 lb white fish fillet (cod, halibut, rockfish, snapper, etc)
1/4 cup chopped onion
1/4 cup chopped green bell pepper
1/4 cup chopped zucchini
1/4 cup chopped yellow squash
1 roma tomato, quartered
2 tablespoons olive oil
1 garlic clove, minced
1 tablespoon red pepper flakes
1/2 lemon
cajun seasoning, to taste

Steps:

  • Preheat oven to 450 degrees.
  • Rinse and dry your fish, and rub each side with some olive oil. Season each side with cajun seasoning.
  • Place fish in the center of a very long piece of foil on a cookie sheet.
  • Toss veggies, garlic, pepper flakes, cajun seasoning and remaining olive oil in a bowl until everything is sufficiently coated.
  • Spread veggie mixture over fish fillet.
  • Squeeze juice of lemon over veggies and fish. I put the rest of the lemon on top of the mixture while it bakes for extra lemon flavor, but you don't have to.
  • Fold foil around fish and vegetables so that a packet is formed.
  • Bake at 450 for 15 minutes.
  • Open foil, place on plate, and dig in!

1 teaspoon chili powder (add more or less accoriding to your taste)
1 teaspoon cumin (add more or less according to your taste)
1 pickle (chopped up, dill or kosher, never use sweet pickles in this)
5 -7 slices jalapeno peppers (pickled or fresh)
1 tablespoon pickled jalepeno pepper juice (from the jars of pickled jalepenos. Yes, that's right, the juice from the jar!)

2 tablespoons melted butter
1 cup flour
1 tablespoon baking powder
1 egg
1 cup club soda
1 tablespoon lemon juice or 1 tablespoon lime juice
salt and pepper

Steps:

  • Mix baking soda, salt, pepper and flour.
  • Add melted butter.
  • Add egg and lemon juice.
  • Add soda. (add more if batter seems too thick.) Batter will be lumpy, but lumps will cook out, so don't over mix.
  • Dip fish or vegetables into dry flour first before dipping into batter. This will help batter stick.
  • Fry veggies first in hot oil (350 degrees), then fish.
  • Drain on paper towels and keep in warm oven while frying.
  • Serve with tartar sauce.

4 tilapia fillets (any boneless fish works, e.g. haddock, sole)
1 egg (binding agent, may need two if they are smaller)
1 lemon
fresh thyme sprig (a few will do, more for garnish or decor)
1/2 cup flour
salt
pepper
chili powder
paprika
cumin
oregano
spices (any that you like!)
vegetable oil (for frying)

Steps:

  • thaw the fish if frozen - rinse it under water and pat dry if you wish.
  • preheat about an inch of oil in a pan.
  • cut the fillets into smaller pieces if you want.
  • crack the egg into a shallow bowl and beat - add a pinch of salt and pepper.
  • prepare the spiced fish fry coating - mix roughly 50:50 flour:spices. I suggest adding a fair amount of salt and pepper, and also chili powder if you like it hot. ANY COMBO OF SPICES WORK, be liberal. MIX UNTIL HOMOGENOUS.
  • dip the fish in egg - let the extra egg drip off (tap against the side of bowl).
  • coat both sides of the egged up fish in the frying coating.
  • carefully (hot oil is dangerous!) fry both sides of the fish in the oil until golden brown on both sides, and the inside of the fish is flaky and white.
  • dry on paper towels lined with a bed of thyme.
  • garnish with lemon wedges and thyme sprigs (optional).
