SWEDISH TEA CAKES

These cookies keep beautifully when stored in an air-tight container-up to 2 weeks, easily. Perhaps that's why they're so popular come cookie platter season, aka Christmas.

Number Of Ingredients 6

1/2 cup pecan or walnut halves
2 1/2 cups powdered sugar (divided)
1/8 teaspoon teaspoon salt
1 cup unsalted butter
1/2 teaspoon vanilla extract
1 3/4 cups all-purpose flour

Steps:

  • Preheat an oven to 350°F. Lay the nuts on a baking sheet and bake until toasted, about 10 minutes. Set a timer and watch them closely-nuts can go from toasted to burnt in the blink of an eye. Set the nuts aside to cool.
  • Once cool, put the nuts, 1 cup of the sugar, and the salt in a food processor. Pulse until the nuts are finely ground.
  • Cut the butter into 1-tablespoon chunks and drop them in the food processor. Pulse to combine with the ground nuts. Drizzle in the vanilla and pulse a few times. Add the flour and pulse to combine to form a dough.
  • Roll the dough into 1-tablespoon balls and set them on an ungreased baking sheet (feel free to line the sheets with parchment paper for easy clean up).
  • Bake until just turning golden, about 15 minutes.
  • Put the remaining powdered sugar in a wide shallow bowl. Roll the cookies in the sugar to coat them and set them on a cooling rack. When the cookies are completely cool, roll them in the sugar for a second time for a brilliantly white snowy coat.

It's impossible to eat just one of these Swedish cookies. Naturally, they're a favorite with my Swedish husband and children-but anyone with a sweet tooth will appreciate this treat. My recipe is "well-traveled" among our friends and neighbors. -Sue Soderland, Elgin, Illinois

Number Of Ingredients 6

1 cup butter, softened
1 cup sugar
2 teaspoons maple syrup
2 cups all-purpose flour
1 teaspoon baking soda
Confectioners' sugar

Steps:

  • Preheat oven to 300°. In a large bowl, cream butter and sugar until light and fluffy. Add syrup. Combine flour and baking soda; gradually add to creamed mixture and mix well. , Divide dough into eight portions. Roll each portion into a 9-in. log. Place 3 in. apart on ungreased baking sheets. Bake 25 minutes or until lightly browned. Cut into 1-in. slices. Remove to wire racks. Dust with confectioners' sugar.

1 cup butter, softened
½ cup confectioners' sugar
1 ½ teaspoons vanilla extract
2 cups all-purpose flour
1 pinch salt
1 ½ teaspoons baking powder
¾ cup chopped walnuts
⅓ cup confectioners' sugar for dusting

Steps:

  • Beat together the butter and confectioners' sugar till creamy. Add vanilla.
  • Mix the dry ingredients, stir into creamy mixture. Blend well.
  • Add the nuts, mix well, roll the dough out into two balls. Wrap in plastic wrap and chill for at least 1 hour in the refrigerator.
  • Flatten dough out and cut into 15 or 20 equal size pieces, shape into balls. Place on ungreased cookie sheet.
  • Bake at 375 degrees F (190 degrees C) for 10 to 12 minutes till firm but not brown. While still warm roll into confectioners' sugar, let cool and roll again.

1/2 cup margarine (not tub margarine!) or 1/2 cup butter, softened
1/4 cup brown sugar, packed
1 large egg yolk
1 cup flour
1/2 teaspoon baking powder
1/8 teaspoon salt
1 large egg white, fork beaten
2/3 cup nuts, finely chopped (your favourite)
6 tablespoons red jam (your favourite flavour)

Steps:

  • Preheat your oven to 325 F.
  • Cream margarine and brown sugar in a large bowl. Add egg yolk and beat well.
  • Combine flour, baking powder, and salt in a small bowl. Add to margarine mixture, stirring until stiff dough forms. Roll dough into balls, using 2 tsp for each.
  • Dip balls into egg white, then roll in nuts. Arrange balls, about 2 inches apart, ona greased cookie sheet. Dent each one with your thumb.
  • Bake for 5 minutes, then remove from oven and press dents again. Bake for 10 to 15 minutes until golden. Let stand on cookie sheets for 5 minutes before moving to wire racks.
  • Fill each dent with 1 tsp jam - if storing, store without jam and just fill the dents before serving.

I generally make these at the major holidays, especially Christmas. They are very easy, but somewhat time consuming. (Time includes cutting out cookies and frosting time)

2 cups flour
1 cup butter
1/3 cup light cream or 1/3 cup half-and-half
1/4 cup sugar, for dusting cookies

Steps:

  • Cut butter into flour until it resembles cornmeal.
  • Stir in cream until combined.
  • Turn out onto a lightly floured surface.
  • Roll to 1/8 inch thickness.
  • Cut into circles using a 2 inch round cookie cutter.
  • Before baking, prick with a fork and sprinkle with sugar.
  • Bake at 375 F for 8-10 mins on an ungreased cookie sheet.
  • Place two cookies together (sandwich-style) using you favorite butter cream frosting tinted to celebrate the season.

1 cup sugar
1 egg
2 teaspoons vanilla extract
2-1/2 cups self-rising flour
Confectioners' sugar

Steps:

  • Preheat oven to 325°. In a bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in the egg and vanilla. Gradually add flour. Roll dough into 1-in. balls. Place 2 in. apart on ungreased baking sheets; flatten slightly with fingers. , Bake until edges are golden brown, 17-20 minutes. Cool for 2 minutes before removing to wire racks to cool completely. Dust with confectioners' sugar.

2 cups of butter @ room temp
1 1/2 cups of sugar
2 whole eggs
2 egg yolks (save the white)
1 tsp vanilla extract
1 1/2 tsp almond extract
1 tsp butter extract
5 1/4 cups flour
1/2 tsp baking powder
1/2 tsp salt
For decorating: 2 eggwhites
slightly beaten with a few
drops of water. Sugar or
colored sugar to sprinkle
on top of cookie and finely
chopped unsalted for baking
almonds.

Steps:

  • Preheat oven to 375 degrees. Cream butter and sugar until fluffy. Beat in the eggs and egg yolks and the extracts. Add sifted dry ingredients mix well. Chill in frig for about 30 minutes. Now roll out small amounts of dough in about 1 inch thick rope and cut in 2 1/2 to 3 inch long pieces. Place on cookie sheet brush top of cookie with egg white and top with chopped almonds and sprinkle with sugar. Bake @375 degrees for 10 minutes, cool on wire rack.
