PRAWN BRUSCHETTA WITH LEMONY FENNEL SALAD



Prawn bruschetta with lemony fennel salad image

Make a luxurious and light treat for two, or double up for a delicious dinner party starter

1 fennel bulb, thinly sliced through the root, green fronds reserved
1 heaped tbsp roughly chopped dill
zest and juice ½ lemon , plus wedges, to serve
1 tbsp olive oil
4 small slices rustic wholemeal bread , or two large cut in half
1 garlic clove , halved
140g cooked prawns
handful rocket

Steps:

  • Bring a pan of water to the boil then add the fennel slices for 2-3 mins until just tender. Drain well and toss with reserved fennel fronds, dill, lemon zest and juice, 2 tsp olive oil and seasoning.
  • Brush the slices of bread with remaining oil. Place in a hot griddle pan (or under a grill) and toast on both sides until lightly charred. Rub one side of each slice with the garlic, then divide the fennel salad between them. Top with the prawns, then the rocket and serve.

4 slices from a baguette , sliced on an angle
1 tsp olive oil
2 garlic cloves , thinly sliced
1 large red chilli , deseeded and sliced
200g raw king prawns , butterflied (see tip, below)
juice 1 lemon
small bunch coriander , leaves chopped
2 large handfuls rocket

Steps:

  • Toast the bread and keep warm. Heat the oil in a wok, then cook the garlic and chilli until sizzling. Turn the heat up, add the prawns, then cook until pink. Remove from the heat, then add the lemon juice and coriander. Season, then serve piled on toast with rocket leaves.

To butterfly the shrimp, make a shallow cut all the way along the back of the shrimp. You will see a blackish line - pull it out with the tip of your knife. As the shrimp cooks, it will curl into a 'butterfly' shape.

8 ounces jumbo shrimp, raw, butterflied
1 lemon, juice
2 tablespoons cilantro, chopped
2 ounces arugula

Steps:

  • Toast the bread and keep warm.
  • Heat the oil in a wok or frying pan and cook the garlic and chili until sizzling.
  • Turn the heat up, add the shrimp and cook until pink.
  • Remove from the heat, then add the lemon juice and cilantro.
  • Season and serve piled on the toast and scattered with arugula.

This fabulous dish, which uses shrimp instead of the Australian yabby, is ample enough to serve for a light lunch. It's hard to pick up, so serve it on plates at the table. The grilled flavors and the fresh mint will be nicely highlighted by the 1998 Cape Mentelle Sémillon-Sauvignon Blanc from Australia.

10 ounces frozen baby lima beans
1/3 cup mint, finely chopped
1/3 cup parsley, finely chopped
2 tablespoons white wine vinegar
3 tablespoons extra virgin olive oil
salt & freshly ground black pepper
8 slices sourdough bread, 1/2 -inch-thick slices (cut from a round loaf)
1 garlic clove
4 tablespoons unsalted butter, softened
1 teaspoon lemon zest, finely grated
8 -10 large shrimp (shelled, halved lengthwise and deveined)

Steps:

  • Cook the lima beans in a medium saucepan of boiling water until tender, about 8 minutes; drain. Transfer to a bowl and let cool slightly. Stir in the mint, parsley, vinegar and 2 tablespoons of the olive oil. Season with salt and pepper.
  • Toast the bread. Rub the slices with the garlic clove and drizzle with the remaining 1 tablespoon of olive oil.
  • Preheat the broiler. In a small bowl, mash the butter with the lemon zest and season with salt and pepper. Spread the butter all over the shrimp and set them in a broiling pan. Broil for 3 to 5 minutes, turning the shrimp once.
  • Mound the lima salad on the toast and top with the shrimp. Sprinkle with salt and pepper and serve immediately.
