You'll be head over heels for this homey holiday dessert. It's ready to eat in an hour and pretty too!

1/2 cup butter, melted
1/3 cup packed brown sugar
1 can (8 oz) pineapple slices in juice, drained, 1/4 cup juice reserved
1 1/4 cups all-purpose flour
1/2 cup granulated sugar
1 teaspoon ground ginger
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1/4 cup molasses
1/4 cup milk
2 eggs
1/2 cup whipping cream, whipped
8 maraschino cherries with stems

Steps:

  • Heat oven to 350°F. In 9-inch round pan, mix 2 tablespoons of the melted butter and the brown sugar; spread evenly to cover bottom of pan. Cut pineapple slices in half; arrange 4 halves over brown sugar mixture in center of pan. Cut remaining halves in half again; arrange pieces around edge of pan.
  • In large bowl, mix flour, sugar, ginger, baking soda, cinnamon, nutmeg and salt. With spoon or wire whisk, beat in remaining 6 tablespoons melted butter, 1/4 cup reserved pineapple juice and all remaining gingerbread ingredients until smooth. Spoon batter carefully over pineapple; spread to cover.
  • Bake 30 to 35 minutes or until toothpick inserted in center comes out clean.
  • Run knife around side of pan to loosen. Place heatproof serving plate, upside down, over pan. Turn plate and pan over; remove pan. Cut into wedges. Serve with whipped cream and cherries.

3/4 c butter. divided
1 1/2 c brown sugar, firmly packed, divided
2 c pineapple, coarsely chopped. i used a 16 oz. can of crushed pineapple that i had
1 1/2 c flour
2 tsp ground ginger
1 tsp ground cinnamon
1/4 tsp ground cloves
3/4 tsp baking soda
1/2 tsp salt
1/2 c hot water
1/2 c molasses
1 large egg

Steps:

  • 1. Preheat oven to 350 degrees. Melt 6 tablespoons of butter in 10 in. cast iron skillet, or heavy ovenproof pan, over medium heat. Swirl melted butter to coat sides of pan.
  • 2. Remove from heat, stir in 1 cup brown sugar, then add pineapple in one layer. Set aside.
  • 3. Stir together the flour, ginger, cinnamon, cloves, baking soda and salt in a large bowl. Set aside.
  • 4. Melt the other 6 tablespoons of butter in a small pan. Remove from the heat and stir in hot water, molasses and the 1/2 cup brown sugar. Whisk in the egg.
  • 5. Add the butter mixture to the flour mix. Stir until well blended. Gently pour over the pineapple in the skillet.
  • 6. Bake 35 - 40 minutes or until a toothpick comes out clean. Cool in pan 10 minutes, then invert onto a round dish. Serve warm or room temperature.

1 (20 ounce) can pineapple slices
1/2 cup margarine, softened,divided
1 cup packed brown sugar, divided
10 maraschino cherries
1 egg
1/2 cup dark molasses
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/2 teaspoon salt

Steps:

  • Preheat oven to 350°F.
  • Drain pineapple slices; reserve 1/2 cup syrup.
  • In 10-inch cast iron skillet, melt 1/4 cup margarine.
  • Remove from heat.
  • Add 1/2 cup brown sugar and stir until blended.
  • Arrange pineapple slices in skillet.
  • Place 1 cherry in center of each slice.
  • In large mixer bowl, beat remaining 1/4 cup margarine and 1/2 cup brown sugar until light and fluffy.
  • Beat in egg and molasses.
  • In small bowl, combine flour, baking soda, ginger, cinnamon and salt.
  • In small saucepan, bring reserved pineapple syrup to a boil.
  • Add dry ingredients to creamed mixture alternately with hot syrup.
  • Spread evenly over pineapple slices in skillet.
  • Bake 30 to 40 minutes or until wooden pick inserted in center comes out clean.
  • Let stand in skillet on wire rack 5 minutes.
  • Invert onto serving plate.

1/4 cup brown sugar
1/2 teaspoon baking soda
1 teaspoon ground ginger
3/4 teaspoon ground cinnamon
6 cups hot brewed coffee
1 cup half-and-half
1 1/2 cups sweetened whipped cream
1 teaspoon ground cloves

Steps:

  • In a small bowl, mix together molasses, brown sugar, baking soda, ginger and cinnamon until well blended.
  • Cover and refrigerate for at least 10 minutes.
  • Add about 1/4 cup coffee to each of the 6 cups.
  • Stir about a tablesoon of the spice mixture intor into each cup until dissolved.
  • Fill each cup to within an inch of the top with coffee.
  • Stir in half and half to taste and garnish with whipped cream and ground cloves.

1 lb pear
2 tablespoons fresh ginger, peeled, grated, divided
1 tablespoon lemon juice
cooking spray
2 tablespoons sugar
1/2 cup brown sugar
1/4 cup butter, softened
1 large egg
1/2 cup low-fat buttermilk
1/4 cup molasses
1 cup flour
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/4 teaspoon dry mustard
1/4 teaspoon clove
1/4 teaspoon nutmeg
1 teaspoon powdered sugar
mint leaf (optional)
raspberries (optional)

Steps:

  • Heat oven to 350 F Peel, core, and slice pears lengthwise into 1/4" slices.
  • Combine 1 Tbls ginger, lemon juice, and pear slices.
  • Coat a 9" x 2" round cake pan with cooking spray; sprinkle with granulated sugar.
  • Arrange pears in bottom of pan in a circular pattern.
  • Combine brown sugar and butter in a large mixer bowl; beat at medium speed until well blended.
  • Beat in egg.
  • Add buttermilk, molasses, and 1 Tbls ginger; beat until well blended.
  • Combine flour and remaining ingredients EXCEPT powdered sugar.
  • Add flour mixture to batter; stir until well blended.
  • Pour over pears.
  • Bake 40 minutes or until cake springs back when touched lightly in center.
  • Cool in pan 20 minutes on wire rack.
  • Sprinkle a serving plate with powdered sugar.
  • Invert cake onto serving plate.
  • When completely cool, garnish with mint leaves and raspberries.

3 3/4 cups all-purpose flour
1 tablespoon cocoa powder
4 teaspoons ground ginger
1 1/2 teaspoons ground cloves
2 teaspoons ground cinnamon
1/2 teaspoon baking soda
1 teaspoon salt
1 1/4 teaspoons black pepper, freshly ground
1 cup unsalted butter, at room temperature
3/4 cup and 2 tbsp granulated sugar
1 large egg
1/2 cup blackstrap molasses
2 tablespoons light corn syrup
1 cup confectioners' sugar
2 tablespoons water

Steps:

  • To make the dough, stir together the flour, cocoa powder, ginger, cloves, cinnamon, baking soda, salt, and pepper in a mixing bowl. Set aside.
  • Using a stand mixer fitted with the paddle attachment, beat the butter on medium-high speed until creamy. Slowly add the granulated sugar and mix on medium speed until the mixture is completely smooth and soft. Stop the mixer and scrape down the sides of the bowl with a rubber spatula as needed.
  • Add the egg and mix well. Add the molasses and corn syrup and beat until incorporated. Stop the mixer again and scrape down the sides of the bowl.
  • Add the flour mixture and beat on low speed until a dough forms that pulls away from the sides of the bowl and all the ingredients are well incorporated.
  • Remove the dough from the bowl, flatten it on a large piece of plastic wrap into a rectangle about 1 inch thick, cover the dough with the plastic wrap, and refrigerate overnight.
  • Preheat the oven to 350 degrees. Line a baking sheet with parchment paper or a nonstick liner.
  • Unwrap the dough and place on a floured work surface. If using a plaque with a design, roll out the dough 1/3 inch thick, lightly dust the top with flour, press your cookie molds over the dough, and then cut out the shapes with a small knife and place on the prepared baking sheet, spacing them about 1 inch apart. Alternatively, using the mold as a guide, cut around it with a small knife, flip the mold over so the design is facing you, and place the dough over it, pressing it into the design. Unmold the shapes onto the prepared baking sheet, leaving about 1 inch between them.
  • If using a patterned rolling pin, lightly dust the lined baking sheet with flour and transfer the dough to the pan. Lightly dust the top of the dough with flour and roll it into a rectangle about 1/3 inch thick with a plain pin. Then, using the patterned pin, roll over the dough with enough pressure to ensure a clear impression of the design. Trim the sides with a small knife. It is not necessary to cut into smaller sizes before baking.
  • Bake the cookies until lightly golden along the sides but still soft to the touch in the centers, 7 to 15 minutes. The timing will depending on the size of the individual cookies, or if you have made a single large patterned piece that will be cut after baking.
  • While the cookies are baking, prepare the glaze. In a small bowl, whisk together the confectioners sugar and water until smooth.
  • When the cookies are ready, remove from the oven and let cool on the pan on a wire rack for about 10 minutes. Then, while the cookies are still warm, using even strokes, brush a light coat of glaze on the top of each cookie, evenly covering it.
  • Let the cookies cool completely. When the glaze dries, it should leave a shiny, opaque finish. If you have used a patterned pin to make a single large plaque, cut into the desired sizes with a small, very sharp knife. At the bakery, we cut them into 3-by-4-inch rectangles, but 1 1/2 by 4 inches makes a nice smaller size.

2 large Granny Smith apples, peeled, cored and thinly sliced
1/3 cup brown sugar
1/3 cup sugar
1 egg
1/4 cup plus 2 tablespoons boiling water
1/4 cup plus 2 tablespoons molasses
1 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground ginger
1/2 teaspoon ground cinnamon
Vanilla ice cream or creme fraiche

Steps:

  • Preheat the oven to 350 degrees. Butter 8 cups of a muffin tin. Melt 1/4 cup of butter in a medium skillet over medium heat. Add the apples and saute until soft, about 5 minutes. Add the brown sugar and stir until melted. Divide the mixture among the muffin cups and set aside.
  • Cream the remaining 1/4 cup butter with the sugar. Mix in the egg. Slowly mix in the boiling water and then the molasses. Sift the dry ingredients together and then stir them into the batter.
  • Divide the batter among the muffin cups. Bake until the top springs back when touched, about 25 minutes.
  • Using a serrated knife, cut off just enough of the top of the cakes to make them level. Turn the cakes out of the tin. Immediately place on plates with a scoop of ice cream or a dollop of creme fraiche and serve.

  • In a 13"x9" baking dish, spread out the pineapple.
  • Sprinkle the DRY yellow cake mix over the pineapple.
  • Pour 2 cups of diet drink over cake mix.
