Lime leaf and lemongrass infused simple syrup provides a fresh twist and a bright flavor to this Thai style Limeade!

1 cup white sugar
1 cup water
1/3 cup lime leaves (about 20 leaves)
1/4 cup chopped lemongrass stalk
1 cup lime juice (for me, this was about 7 limes)
3 cups cold water + 1 cup ice
Lime wheels for garnish (optional)

Steps:

  • Combine the sugar, 1 cup of water, lime leaves, and lemongrass in a saucepan over medium heat. Allow the simple syrup to steep for 10 minutes. Strain the leaves and lemongrass pieces from the liquid. Let cool for 10 minutes.
  • Combine the cooled syrup with 3 cups cold water and 1 cup of ice. Stir in the lime juice. Serve over ice with lime wheels (if desired).

Limeade made with lemongrass and fresh ginger from the Moosewood Cookbook. I like to use the remaining top of the cleaned lemongrass stalk as a decoration in the pitcher for serving. Note: I estimated cooking time for making syrup and chilling time.

1 stalk lemongrass
3 inches piece fresh gingerroot, peeled and thinly sliced
1 cup sugar
5 1/2 cups water
10 to 12 limes, juice of

Steps:

  • Take one stalk of lemongrass and trim to 6 inches and remove the dry outer layer. Place stalk on a cutting board and use the flat side of a heavy knife to crush it enough to release its fragrant oils. Cut the lemongrass into 1-inch lengths.
  • Combine the lemongrass, ginger, sugar, and 1 cups of the water in a saucepan. Bring to a boil, lower the heat, and simmer for 10 minutes. Stir occasionally.
  • Remove the syrup from the heat. Cool for 10 minutes. Strain it into a pitcher. Discard the ginger and the lemon grass.
  • Add the lime juice and the remaining 41/2 cups water to the pitcher. Chill for 25 minutes. Serve over ice.

Seeds of 2 pomegranates
1 fingerling chile, sliced
1 orange, juiced
1 teaspoon orange zest
1 cup pomegranate juice
1 cup lime juice
1/2 cup organic sugar, pulverized
3 limes, zested
1 stalk lemongrass, chopped
1 bottle vodka
1 bottle dark rum
1 bottle tequila
1 bottle soda water
Ice

Steps:

  • Make the pomegranate mixer: In a bowl, add the pomegranate seeds, chile, orange juice, orange zest and pomegranate juice. Mix.
  • Make the lemongrass mixer: In a bowl, add the lime juice, pulverized sugar, lime zest and lemongrass. Mix.
  • On a buffet table, set up the mixers, bottles of alcohol, soda water, ice and highball glasses. Place some ice into a glass, add a spoonful of mixer, a shot of alcohol and top off with soda water.

4 stalks lemongrass, tough outer leaves removed, cut into pieces
1 inch piece ginger, peeled, roughly chopped
4 cloves garlic
2 shallots, peeled and roughly chopped
2 tablespoons brown sugar
1/2 cup mirin (Japanese cooking wine)
2 tablespoons fish sauce
6 tablespoons canola oil

Steps:

  • Add lemongrass, ginger, garlic, and shallots through feed tube of a food processor with motor running. Process until very finely chopped. Add sugar, mirin, and fish sauce; process until pureed, scraping sides as needed. With motor running, slowly add oil; process until incorporated.

3 lemongrass sticks
5 fresh lime leaves, spines removed
20 g fresh gingerroot, finely grated
6 thai pink shallots, finely chopped
100 ml lime juice
25 ml lemon juice
100 g coriander, chopped
50 g basil, chopped
1 teaspoon garlic, finely chopped
2 teaspoons green chilies, finely sliced
1 teaspoon red chile, finely sliced
3 teaspoons toasted sesame oil
50 ml olive oil
15 g dark brown sugar

Steps:

  • Remove the outer layer of the lemongrass, cut off the hard thinner ends and then crush and chop it.
  • Put it in the jug blender with the lime leaves, ginger, shallots, lime and lemon juices and blend to a smooth paste.
  • Add the herbs, garlic, chillies, oils and sugar and blend again until you get a beautifully green, smooth, thick dressing.
