For the cake
1 cup vegetable oil, canola oil, or olive oil, plus more for coating the pan
3 cups (384 grams) all-purpose flour, divided
1 1/2 cups (300 grams) granulated sugar
1/4 cup finely grated lemon zest (from about 4 medium lemons)
4 large eggs
2 cups (452 grams) plain whole-milk yogurt (regular or Greek)
1 1/2 teaspoons vanilla extract
1 tablespoon plus 1 teaspoon baking powder
1 teaspoon kosher salt
For the glaze
1 cup powdered sugar
1 1/2 tablespoons freshly squeezed lemon juice
1 tablespoon freshly grated lemon zest (optional)

Steps:

  • Arrange oven rack, preheat the oven, prepare Bundt pan: Arrange a rack in the middle of the oven. Preheat the oven to 350°F. Generously coat a 12-cup Bundt pan with olive oil. Dust with 2 tablespoons of the flour and tap out any excess; set aside.
  • Mix sugar and lemon zest together: Place the sugar and lemon zest in a large bowl and rub together with your fingertips until the sugar is moist and the mixture is fragrant, about 30 seconds.
  • Add wet ingredients to the sugar: Crack the eggs into the bowl with the sugar and lemon zest and whisk vigorously until pale yellow and frothy, about 1 minute. Whisk in the yogurt, olive oil, and vanilla extract.
  • Add the dry ingredients: To the bowl with the wet ingredients, whisk in the baking powder and kosher salt. Add the flour and stir with a rubber spatula until just combined and all the flour is incorporated. (A few small lumps in the batter are fine, be sure to not overmix.)
  • Transfer to prepared pan and bake: Transfer the batter to the prepared pan and use a spatula to spread it out evenly. Bake until the cake is lightly browned and a cake tester inserted into the center comes out clean with just a few crumbs, about 45 minutes.
  • Cool the cake and release from Bundt pan: Cool on a wire rack for 15 minutes. Carefully flip it out of the pan onto a wire rack. Cool completely before glazing.
  • Make the glaze, drizzle and serve: Whisk together the powdered sugar and lemon juice in a medium bowl until smooth. Drizzle the glaze over the cooled cake and sprinkle the top with lemon zest, if desired. Let stand for at least 10 minutes to allow the glaze to set before slicing and serving.

1/2 teaspoon kosher salt
1 cup plain whole-milk yogurt
1 1/3 cups sugar, divided
3 extra-large eggs
2 teaspoons grated lemon zest (2 lemons)
1/2 teaspoon pure vanilla extract
1/2 cup vegetable oil
1/3 cup freshly squeezed lemon juice
1 cup confectioners' sugar
2 tablespoons freshly squeezed lemon juice

Steps:

  • Preheat the oven to 350 degrees F. Grease an 8 1/2 by 4 1/4 by 2 1/2-inch loaf pan. Line the bottom with parchment paper. Grease and flour the pan.
  • Sift together the flour, baking powder, and salt into 1 bowl. In another bowl, whisk together the yogurt, 1 cup sugar, the eggs, lemon zest, and vanilla. Slowly whisk the dry ingredients into the wet ingredients. With a rubber spatula, fold the vegetable oil into the batter, making sure it's all incorporated. Pour the batter into the prepared pan and bake for about 50 minutes, or until a cake tester placed in the center of the loaf comes out clean.
  • Meanwhile, cook the 1/3 cup lemon juice and remaining 1/3 cup sugar in a small pan until the sugar dissolves and the mixture is clear. Set aside.
  • When the cake is done, allow it to cool in the pan for 10 minutes. Carefully place on a baking rack over a sheet pan. While the cake is still warm, pour the lemon-sugar mixture over the cake and allow it to soak in. Cool.
  • For the glaze, combine the confectioners' sugar and lemon juice and pour over the cake.

1 teaspoon baking soda
1 teaspoon baking powder
1/2 cup lemon juice

1 cup plain yogurt

Steps:

  • Pre-heat oven to 350°F Grease and flour bunt pan.
  • In a large bowl, beat butter until fluffy. Slowly beat in sugar.
  • Add eggs, one at a time.
  • Add lemon juice and zest; mix well.
  • In a separate bowl, combine dry ingredients.
  • Fold in dry ingredients into egg and butter mixture. Mix just until blended.
  • Fold in yogurt last.
  • Bake for 40 minutes or until done.
  • Remove cake from pan and while warm top with a lemon glaze made from 1 cup powdered sugar and the juice of one lemon. If glaze is too thin add a little more powdered sugar.

2 1/2 cups granulated sugar, divided
4 extra-large eggs, at room temperature
1/3 cup grated lemon zest (6 to 8 large lemons)
3 cups flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon kosher salt
3/4 cup freshly squeezed lemon juice, divided
3/4 cup buttermilk, at room temperature
1 teaspoon pure vanilla extract
2 cups confectioners' sugar, sifted
3 1/2 tablespoons freshly squeezed lemon juice

Steps:

  • Preheat the oven to 350 degrees F. Grease and flour 2 (8 1/2 by 4 1/4 by 2 1/2-inch) loaf pans. You may also line the bottom with parchment paper, if desired.
  • Cream the butter and 2 cups granulated sugar in the bowl of an electric mixer fitted with the paddle attachment, until light and fluffy, about 5 minutes. With the mixer on medium speed, add the eggs, 1 at a time, and the lemon zest.
  • Sift together the flour, baking powder, baking soda, and salt in a bowl. In another bowl, combine 1/4 cup lemon juice, the buttermilk, and vanilla. Add the flour and buttermilk mixtures alternately to the batter, beginning and ending with the flour. Divide the batter evenly between the pans, smooth the tops, and bake for 45 minutes to 1 hour, until a cake tester comes out clean.
  • Combine 1/2 cup granulated sugar with 1/2 cup lemon juice in a small saucepan and cook over low heat until the sugar dissolves. When the cakes are done, allow to cool for 10 minutes. Remove the cakes from the pans and set them on a rack set over a tray or sheet pan; spoon the lemon syrup over them. Allow the cakes to cool completely.
  • For the glaze, combine the confectioners' sugar and the lemon juice in a bowl, mixing with a wire whisk until smooth. Pour over the tops of the cakes and allow the glaze to drizzle down the sides.

1/4 cup cornmeal
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup light brown sugar
1/3 cup grapeseed oil
2 tablespoons Cointreau liqueur (optional)
1 teaspoon vanilla extract
2 large eggs, at room temperature
7 ounces low-fat Greek yogurt
2/3 cup blueberries
glaze
3 tablespoons lemon juice
2 tablespoons light brown sugar
1 tablespoon Cointreau liqueur (optional)

Steps:

  • To make cake: Preheat oven to 350°F Grease and flour 9x5 inch loaf pan.
  • Sift together 1 cup plus 3 tablespoons flour, cornmeal, baking powder, and salt in bowl.
  • Beat brown sugar; oil; Cointreau, if using; and vanilla in separate bowl with electric mixer until smooth. Beat in eggs.
  • Alternately add flour mixture and yogurt to egg mixture until combined.
  • Toss blueberries with remaining 1 tablespoon flour, and fold into batter. Pour into prepared pan, and bake 70 minutes, or until toothpick inserted in center comes out clean. Cool 10 minutes.
  • To make glaze: Whisk together all ingredients in small bowl. If not using Cointreau, add 1 tablespoon water.
  • Unmold cake, and poke top all over with wooden skewer. Brush cake with glaze. Cool completely before serving.
