EASY GREEK LEMON RICE IN A RICE COOKER



Easy Greek Lemon Rice In A Rice Cooker image

Super easy, very delicious!

Number Of Ingredients 10

3 cups basmati rice
2 tablespoons olive oil
1/2 medium onion (sliced)
5 cloves garlic (sliced)
1 large lemon - zested and then juiced
1 teaspoon salt
1/2 teaspoon cumin
1/2 teaspoon oregano
1 tablespoon fresh dill - more for the top
Chicken broth

Steps:

  • I rinsed 3 cups of white basmati rice until the water ran clear and then let the rice sit in water while I prepped the other ingredients.
  • In a saucepan on the stove, heat your olive oil. Add the onions and garlic and the salt, cumin, and oregano. Saute. Add the lemon zest and the three cups of basmati rice, drained. Add the lemon juice to the rice and stir it well to coat your rice with the olive oil, herbs, and lemon.
  • Transfer to your rice cooker - or continue cooking on the stovetop.
  • I transferred the very flavorful rice to my rice cooker and added enough chicken broth to go a little higher than the 3 cup mark for white rice.
  • Turn it on! That's it!
  • At the end, I added additional lemon juice and fresh dill. I had read in some places to add additional butter at the end, but I did not do that. It tasted fine! I will definitely try to add butter on another day - I usually don't say no to butter.

Number Of Ingredients 7

1 cup long grain rice
1 1/2 cups chicken stock
1 pinch salt
1 large garlic clove
2 teaspoons lemon zest, freshly grated
2 tablespoons unsalted butter
2 tablespoons fresh Italian parsley

Steps:

  • Place rinsed rice in the rice cooker bowl of your rice cooker.
  • Add the chicken stock and salt; stir to combine, then place the garlic in the center on top of the rice.
  • Close the cover and set for the regular cycle.
  • When the machine switches to the Keep Warm cycle, add the lemon zest, butter, and parsley; stir to combine.
  • Close the cover and let the rice steam for 10 minutes.
  • Fluff the rice with a wooden or plastic rice paddle or wooden spoon.
  • This rice will hold on Keep Warm for 1-2 hours.
  • Before serving, remove garlic and discard.
  • Serve hot.

Excellent seasoned rice!. This is a rice cooker recipe and I used my basic 1 liter (1 quart) Cook and Warm rice cooker. Easy and delicious.

1 Tbsp butter
1 c dry jasmine rice, rinsed and drained
1 3/4 c chicken broth
1 Tbsp lemon or lime juice
1 tsp dried thyme
1/8 tsp lemon pepper

Steps:

  • 1. Turn your rice cooker to the Cook setting and melt the butter.
  • 2. When the butter is melted, stir in the drained rice and coat with the butter, cook, stirring often, to lightly brown the rice, takes just a few minutes.
  • 3. Stir in the broth, lemon juice, thyme, and lemon pepper.
  • 4. Place the cover on the cooker and allow the Cook cycle to complete as indicated by it switching to the Warm setting.
  • 5. Fluff with a rice paddle.
  • 6. Serve as a side with any dish. Enjoy.
  • 7. I enjoyed this is some pressure cooked duck.

This is a recipe that my neighbor taught me when I was young. It is very good and goes with any chicken dish. Even my picky 4 year old eater eats it!

1 tablespoon butter
1 cup uncooked white rice
1 (14.5 ounce) can chicken broth
1 tablespoon fresh lemon juice
1 tablespoon fresh thyme leaves

Steps:

  • Melt butter in a medium saucepan over medium-high heat, and stir in the rice. Cook rice, stirring frequently, until browned, about 5 minutes.
  • Mix chicken broth, lemon juice and thyme into the rice. Cover, and reduce heat to low. Cook 20 minutes, until liquid has been absorbed. Fluff with a fork before serving.

  • Heat olive oil in a large sauce pan (with a lid) over medium high heat. Sauté onions until soft, approximately 5 minutes.
  • Stir in chicken broth, water, lemon juice and all seasonings. Bring to a boil then reduce heat to LOW, cover, and cook 12-15 minutes, or just until water is evaporated and rice is tender, stirring once at 8 minutes and replacing lid. If your liquid is evaporated but your rice is still quite undercooked (keeping in mind it will steam for 10 minutes once removed from heat), then add a little additional liquid and continue to cook.
