Thin Lemon Pancakes with Sweetened Sour Cream and Blueberries image

Fold crepe-like lemon pancakes into triangles, and top them with sweet-and-tangy blueberries and cream.

2/3 cup milk
6 tablespoons all-purpose flour
4 tablespoons granulated sugar
2 teaspoons grated lemon zest plus 2 teaspoons fresh lemon juice
Kosher salt
2 large eggs
2/3 cup sour cream
2 tablespoons unsalted butter
1 cup blueberries
Confectioners' sugar, for dusting

Steps:

  • Puree the milk, flour, 2 tablespoons of the granulated sugar, the lemon zest, a large pinch of salt and the eggs in a blender.
  • Whisk the sour cream, lemon juice, a pinch of salt and the remaining 2 tablespoons granulated sugar together in a small bowl.
  • Heat 1 tablespoon of the butter in a large nonstick skillet over medium heat. Pour half of the batter into the skillet and cook until set, without flipping, 2 to 4 minutes. Gently slide onto a plate. Make another pancake with the remaining butter and batter. Cut each pancake in half and set on a dessert plate.
  • Fold the pancake halves into triangles and dollop with the sweetened cream and top with the blueberries. Sprinkle with confectioners' sugar and serve.

1/3 cup sour cream
3/4 cup cake flour
3/4 cup buttermilk or 3/4 cup milk

1 1/2 teaspoons lemons, zest of
1 1/2 teaspoons baking powder
1 pinch cinnamon
1 pinch salt

Steps:

  • In a large bowl, whisk together ricotta, sour cream, butter, vanilla, milk, egg yolks, sugar, cinnamon, salt, and lemon zest until completely homogenized.
  • Sift flour and baking powder on top and blend completely.
  • In a separate bowl, beat the egg whites to stiff peaks and gently fold into batter – the batter should be just thin enough to pour- if too thick, add more milk.
  • Pour by ¼ cups onto prepared 375 degree griddle and cook 2-3 minutes on first side, then flip and cook 1-2 minutes more, or to your liking.

3 tablespoons sugar
2 teaspoons baking powder
1 teaspoon kosher salt
3/4 cup milk, plus more if necessary
1/2 cup plain Greek yogurt (see Cook's Note)
2 large eggs
2 teaspoons lemon zest
1 teaspoon vanilla extract
Unsalted butter or nonstick cooking spray, for cooking
Blueberry Topping, recipe follows
1 1/2 cup frozen blueberries
1/4 cup sugar
2 tablespoons lemon juice

Steps:

  • Whisk together the flour, sugar, baking powder and salt in a large bowl. Whisk together the milk, yogurt, eggs, lemon zest and vanilla in a separate bowl. Stir the wet ingredients into the dry until just combined. If the mixture is too dry, add 1 to 2 tablespoons of milk to thin it out. Allow the batter to rest at least 15 minutes.
  • Preheat a griddle or nonstick skillet over medium-low heat and preheat the oven to 200 degrees F.
  • Coat with the griddle or skillet with butter or nonstick spray. Ladle the pancake batter on the griddle. Cook until bubbles begin to form and the bottom of the pancake is golden brown, 2 to 3 minutes. Flip and cook an additional 2 minutes. Repeat with the remaining batter. Keep the pancakes warm in the oven until ready to serve. Top with Blueberry Topping and serve warm.
  • Combine the blueberries, sugar, lemon juice and 1/4 cup water in a small saucepan and cook over medium heat. Use a fork to gently mash some of the blueberries and release their juices. Cook until the sugar completely dissolves, 5 to 7 minutes.

1 cup sour cream or plain yogurt
3 eggs, separated
1/2 teaspoon baking soda
1 cup all-purpose flour
Dash salt

Butter or grapeseed or other neutral oil as needed

Steps:

  • Beat together the ricotta or cottage cheese, sour cream or yogurt and egg yolks. Combine baking soda, flour, salt and sugar. Beat egg whites until fairly stiff but not dry.
  • Heat a griddle or large skillet over medium-low heat while you finish batter. Stir flour mixture into cheese mixture, blending well but not beating. Stir in lemon juice and zest, then gently fold in beaten egg whites; they should remain somewhat distinct in batter.
  • Add about 1 tablespoon butter or oil to griddle or skillet and coat surface. When it is hot, add batter by the heaping tablespoon, making sure to include some egg white in each spoonful. Cook until lightly browned on bottom, 3 to 5 minutes, then turn and cook second side. Serve immediately.

1/4 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
2 eggs

1 cup regular sour cream or 1 cup light sour cream
1 teaspoon vanilla
butter or margarine, for cooking pancakes
fresh blueberries (optional)
fresh raspberry (optional)

Steps:

  • Microwave 2 tbsp (30 mL) butter in a small bowl until melted.
  • In a large bowl, using a fork, stir flour with sugar, baking powder and salt. Make a well in centre.
  • In a medium bowl, whisk eggs with milk, sour cream, melted butter and vanilla.
  • Pour into flour mixture and stir just until mixed.
  • Immediately melt about 1 tsp (5 mL) butter in a large frying pan set over medium heat. (Or save time by cooking on a large griddle or simultaneously in 2 pans.) Use a 1/4-cup (50-mL) measure to pour batter into hot pan. Depending on size of pan, add 1 to 3 more pancakes. Cook until surfaces are covered with bubbles and edges are lightly browned, from 2 to 3 minute Turn and continue to cook until pancakes are golden, from 2 to 3 minute.

1 1/2 teaspoons kosher salt
1/2 cup sour cream
3/4 cup plus 1 tablespoon milk
2 extra-large eggs
1 teaspoon pure vanilla extract
1 teaspoon grated lemon zest
Unsalted butter
2 ripe bananas, diced, plus extra for serving
Pure maple syrup

Steps:

  • Sift together the flour, sugar, baking powder, and salt. In a separate bowl, whisk together the sour cream, milk, eggs, vanilla, and lemon zest. Add the wet ingredients to the dry ones, mixing only until combined.
  • Melt 1 tablespoon of butter in a large skillet over medium-low heat until it bubbles. Ladle the pancake batter into the pan to make 3 or 4 pancakes. Distribute a rounded tablespoon of bananas on each pancake. Cook for 2 to 3 minutes, until bubbles appear on top and the underside is nicely browned. So I asked for the recipe, and here it is! These are the lightest pancakes I've ever had, it's almost criminal to put a little butter and syrup on them. This is now the only recipe I ever use.

1/3 cup nonfat sour cream or 1/3 cup reduced-fat sour cream

3/4 cup low-fat buttermilk
1 tablespoon sugar
