LEMON SNOW BARS
I got this recipe from a co-worker many years ago. She always brought these to our office luncheons.

Steps:
- 1. Stir together flour and powdered sugar; cut in butter until mixture clings together. Pat into 8-inch square pan. Bake for 10-12 minutes until just golden brown.
- 2. Beat eggs; add sugar and lemon juice. Beat until thick and smooth. Add 2 Tbsp. flour and baking powder. Pour over baked layer. Bake at 350° for 20-25 minutes. Sift powdered sugar over.
- 3. Cool, cut into bars. Makes 16 (2x2") squares.

Steps:
- For crust, combine 1 1/3 cups flour, 1/4 cup sugar, and 1/2 cup butter. Beat at low speed, 2 to 3 minutes.
- Press on bottom of ungreased 8 inch square baking pan.
- Bake at 350 degrees for 15 to 20 minutes.
- For filling, combine 3/4 cup sugar, eggs, 2 tbsps. flour, baking powder and lemon juice. Beat at low speed 1 to 2 minutes.
- Pour over hot crust.
- Continue baking for 18 to 20 minutes or until filling is set.
- Sprinkle with powdered sugar; cool.
- Cut into bars.

- Place ice cream & rums in blender.
- Blend until smooth.
- Pour into glass.
- Garnish with a sprinkle of freshly grated nutmeg.
- Add Candycane & serve.

SNOWDRIFT BARS
This is delicious and so irresistibly good. A great addition to the dainty tray, especially at holiday time!

Steps:
- Melt butter, add sugar, lightly beaten eggs and coconut. Cook over low heat until thickened.
- Remove from heat, add vanilla and cool.
- Add remaining ingredients, spread in a 9 inch pan and chill.
- When cooled, frost with cream cheese icing.
- ICING: Blend the cream cheese, butter and vanilla, beat til smooth and creamy. Add in the icing sugar, more if needed for desired consistency. Spread the amount of icing you wish to use for the cake and refrigerate the rest, find the extra icing great to have on hand to ice muffins or cupcakes.
- Cooking time includes chilling time.

- Stir 1/2 cup sugar and 2-2/3 cups flour together. Cut in butter; mix until crumbly. Pat into the bottom of a greased 13"x9" baking pan. Bake at 350 degrees for 15 to 20 minutes; remove from oven. In a separate bowl, mix together eggs, lemon juice and remaining sugar and flour, blending well. Pour over baked crust and return to oven for an additional 20 minutes. Cool. While still slightly warm, dust with powdered sugar. Makes about 1-1/2 dozen.

- Heat oven to 350°F. In large bowl, break up cookie dough. Stir or knead in flour and lemon peel until well blended. (DO NOT EAT RAW COOKIE DOUGH AFTER COMBINING WITH FLOUR.) Shape dough into 24 (1 1/4-inch) balls. Roll balls in coarse sugar to coat completely. Place 2 inches apart on ungreased cookie sheet.
- Bake 10 to 12 minutes or until edges are golden brown. Cool 1 minute; remove from cookie sheet to cooling rack. Cool completely, about 5 minutes.
- To make frosting, in large bowl, beat marshmallow creme, butter and vanilla with electric mixer on medium speed until blended. Beat in powdered sugar until fluffy. Place frosting in decorating bag fitted with tip.
- Place a dollop of lemon curd in center of each cookie. Pipe frosting around and on top of lemon curd.
