CLASSIC SCONES WITH JAM & CLOTTED CREAM



Classic scones with jam & clotted cream image

You can have a batch of scones on the table in 20 minutes with Jane Hornby's storecupboard recipe, perfect for unexpected guests

350g self-raising flour, plus more for dusting
1 tsp baking powder
85g butter, cut into cubes
3 tbsp caster sugar
175ml milk
1 tsp vanilla extract
squeeze lemon juice (see tips below)
beaten egg, to glaze
jam and clotted cream, to serve

Steps:

  • Heat the oven to 220C/200C fan/gas 7. Tip the self-raising flour into a large bowl with ¼ tsp salt and the baking powder, then mix.
  • Add the butter, then rub in with your fingers until the mix looks like fine crumbs. Stir in the caster sugar.
  • Put the milk into a jug and heat in the microwave for about 30 secs until warm, but not hot. Add the vanilla extract and a squeeze of lemon juice, then set aside for a moment.
  • Put a baking tray in the oven. Make a well in the dry mix, then add the liquid and combine it quickly with a cutlery knife - it will seem pretty wet at first.
  • Scatter some flour onto the work surface and tip the dough out. Dredge the dough and your hands with a little more flour, then fold the dough over 2-3 times until it's a little smoother. Pat into a round about 4cm deep. Take a 5cm cutter (smooth-edged cutters tend to cut more cleanly, giving a better rise) and dip it into some flour. Plunge into the dough, then repeat until you have four scones. You may need to press what's left of the dough back into a round to cut out another four.
  • Brush the tops with a beaten egg, then carefully arrange on the hot baking tray. Bake for 10 mins until risen and golden on the top. Eat just warm or cold on the day of baking, generously topped with jam and clotted cream. If freezing, freeze once cool. Defrost, then put in a low oven (about 160C/140C fan/gas 3) for a few minutes to refresh.

These scones are so quick and simple. They only have three ingredients and produce deliciously light scones. The bubbles in the lemon soda make them rise. There is no need to rub butter as in the traditional scone recipe. Serve hot with whipped cream and berry jam.

3 cups self-rising flour
1 cup lemon-flavored soda
1 cup heavy cream

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Grease a baking sheet with cooking spray; lightly dust with flour.
  • Sift self-rising flour into a large bowl. Combine lemon soda and cream and pour over the flour. Mix until dough is just combined. Turn dough out onto the prepared baking sheet. Flour your hands and gently pat dough into a large rectangle. Do not overwork the dough. Cut into triangles or squares.
  • Bake in the preheated oven until golden, 10 to 12 minutes.

225 g plain flour
2 teaspoons baking powder
1 lemon
75 g butter
2 tablespoons sugar
1 egg
50 ml milk
1 (8 ounce) jar lemon curd
200 ml clotted cream

Steps:

  • Preheat the oven to gas 6, 200C, fan 180°C Mix the flour, baking powder, lemon zest and a pinch of salt in a bowl. Rub in the butter with your fingertips. Stir in the sugar, egg, and enough milk to make a soft dough. Handle as little as possible to keep it airy.
  • Tip onto a floured surface and pat the dough out to a 2cm (1in) thickness. Stamp out as many scones as you can with a 2.5-3cm (1-1/2in) cutter, then reroll and stamp again (you should get about 20). Put the scones in the oven for 12-15 minutes, until risen and golden. Split while still warm, then cool on wire rack.
  • Fill the scones with lemon curd and cream. Press the tops down gently so they stick.

1 cup heavy whipping cream or 1 cup devon cream
1 tablespoon lemon juice, fresh

Steps:

  • In the bowl of an electric mixer, beat the cream and lemon juice on medium speed until it begins to thicken, approximately 3-4 minutes. Do not scrape the sides of the bowl while mixing.
  • Turn the mixer to high and beat another bew minutes. You wil have a curd-like cream on top and thick cream underneath. Mix together gently. It will have the consistency of pudding before it is set.
  • Serve cold with ripe berries or where ever your imagination takes you.

I originally found this recipe on the back of a C & H sugar bag. I like it because it has a light lemon flavor without being overly sweet.

2 cups all-purpose flour
1/3 cup granulated sugar
1 tablespoon baking powder
1/4 teaspoon salt
1/2 cup golden raisin, coarsely chopped
1 teaspoon lemon peel, finely grated
1 cup whipping cream
2 -4 tablespoons water

Steps:

  • Preheat oven to 375ºF.
  • In a medium bowl, combine flour, granulated sugar, baking powder, and salt; stir in raisins and lemon peel.
  • With a fork, stir in cream and enough water until dough comes together into a rough ball.
  • On a lightly floured surface, knead dough 5 to 6 times. Place on a greased cookie sheet and pat into an 8-inch circle.
  • With a sharp knife, cut halfway through the dough to mark into 12 wedges. Bake 20 to 30 minutes, until golden brown; remove to wire rack to cool.
  • Cut into wedges while still warm, or cool completely before cutting.
  • Serve warm or at room temperature with lemon curd.

1/3 cup sugar
1 tablespoon baking powder
1 tablespoon lemon zest
1/2 teaspoon salt
3/4 cup unsalted butter, cut into pieces and chilled
1 cup half-and-half cream
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 375 °F.
  • Place all dry ingredients in a mixing bowl, or in the bowl of an electric mixer fitted with the paddle attachment.
  • Cut butter into dry ingredients until it resembles coarse meal.
  • Stir together ¾ cup cream and vanilla and add to dough.
  • Mix just until dough comes together.
  • Turn dough onto a lightly floured surface. Roll dough twice to an inch thick, each time folding in half (this is the secret to a flaky scone).
  • Roll dough to ¾-1 inch thick and cut desired shapes.
  • Place on a greased or parchment-lined baking sheet and brush with remaining cream.
  • Bake for 15 to 18 minutes, until tops are nicely browned.
