1 quart hot chicken stock
2 tablespoons olive oil
3 tablespoons chopped shallots or red onion
8 ounces sliced and julienned Margherita® prosciutto
2 cloves garlic, chopped
16 ounces Arborio rice
1 lemon, zested and juiced
1 cup dry white wine, such as Pinot Grigio
1 pound (26 to 30 count) raw shrimp, peeled and deveined
6 tablespoons butter
4 ounces freshly grated Romano cheese
Fresh arugula for garnish
1 tablespoon chopped parsley

Steps:

  • Heat chicken stock in separate pan.
  • In large 4 quart pot, heat olive oil on medium heat. Saute shallots and prosciutto for 3 minutes. Add garlic; saute for 2 minutes.
  • Turn up heat to Medium-High. Add rice and lemon zest, cook 2 to 3 minutes, stirring constantly. Add lemon juice and wine until reduced.
  • Add one 8-oz. ladle chicken stock to rice until absorbed. Keep the rice at just a simmer; continue process for 10 to 15 minutes. Add shrimp before last ladle of stock.
  • Add butter and Romano cheese, stir in well. Place in serving bowl and top with fresh arugula and parsley.

5 tablespoons extra-virgin olive oil
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1 pound extra-large shrimp (peeled and deveined)
1 small fennel bulb (chopped (about 1 cup))
1 small onion (chopped (about 1 cup))
1 large clove garlic (smashed, peeled, chopped)
1 cup Arborio rice (about 6 1/2 ounces)
1/4 cup dry white wine
3 cups low-sodium chicken broth (plus extra as needed)
1/4 cup fresh lemon juice (from 1 large lemon)
Zest of 1 large lemon
3 cups arugula

Steps:

  • Heat 2 tablespoons of the oil in a heavy large saucepan over medium heat. Add the shrimp and sprinkle with 1/2 teaspoon of the salt and 1/4 teaspoon of the pepper. Cook until the shrimp are just opaque in the center, about 3 minutes. Remove the pan from the heat. Transfer the shrimp and juices to a bowl to cool.
  • Add the remaining 3 tablespoons oil to the pan. Add the fennel and onions. Cook until tender, about 4 minutes. Add the garlic and cook until aromatic, 30 seconds. Add the rice. Stir until well coated and translucent in spots, about 2 minutes. Add the wine. Cook until the wine is absorbed, stirring often, about 2 minutes. Add the broth, lemon juice, zest, and the remaining 1 1/2 teaspoons salt and 1/4 teaspoon pepper. Increase the heat and bring to a boil, stirring often. Reduce the heat to medium-low. Simmer until the rice is just tender but still has some bite and the risotto is creamy, stirring often, 13 to 14 minutes.
  • Mix in the arugula. Stir until the arugula wilts, about 30 seconds. Add the shrimp. Mix in additional broth if needed, 1/4 cup at a time, until the risotto is creamy.
  • Spoon the risotto into 4 shallow soup bowls.

2 cloves garlic, minced
1 cup Arborio rice
2 cups low-sodium chicken broth, divided

½ pound bay scallops

1 cup fresh snow peas, trimmed and halved crosswise
1 medium red bell pepper, diced

Steps:

  • Heat olive oil in a large, heavy-bottomed saucepan over medium-low heat. Cook the leek and garlic until soft, about 5 minutes. Stir in the rice, and cook for 5 minutes more, stirring frequently.
  • Pour in 1 1/2 cups of the chicken broth, and bring to a boil over high heat, stirring occasionally. Reduce heat to medium-low, and simmer, uncovered for 5 minutes, continuing to stir. Pour in the remaining chicken broth and wine, increase heat to medium, and cook for about 5 more minutes, stirring constantly.
  • Add the scallops, shrimp, peas, and red pepper. Cook, stirring constantly, until the remaining liquid is almost absorbed, and the seafood has cooked, about 5 minutes. When the rice is just tender and slightly creamy, season with Parmesan cheese, basil, lemon juice, and pepper.

1 medium onion, diced
4 tablespoons butter
1 lemon, zest and juice of
1 cup arborio rice
2 cups chicken broth
2 cups water
3/4 cup grated parmesan cheese
2 tablespoons freshly chopped parsley
additional parmesan cheese (to garnish)

Steps:

  • Sautee onion in butter until soft.
  • Stir in lemon zest.
  • Add rice to onion mixture.
  • Stir well to coat all grains of rice.
  • Adjust heat to low-medium.
  • Add 1/2 cup of broth plus 2 Tbsp lemon juice.
  • Broth should simmer, reduce and thicken.
  • Add another 1/2 cup of broth.
  • Stir until absorbed.
  • Add another 1/2 cup of broth and repeat process with remainder of broth and then water- 1/2 cup at a time.
  • If necessary, add more water.
  • When rice is done (tender but not mushy), remove from heat and stir in parmesan cheese and parsley.
  • Season with salt, pepper and the remainder of lemon juice.
  • Serve with grated parmesan on top.

2 cups water
3/4 lb asparagus, trimmed and cut into 1 inch pieces
1 small onion, finely chopped
4 tablespoons unsalted butter, divided

3/4 lb medium shrimp, peeled and deveined
1 tablespoon grated lemon zest

Steps:

  • Bring broth and water to a simmer in a medium saucepan. Add asparagus and simmer, uncovered, until just tender, about 4 minutes. Transfer asparagus with a slotted spoon to an ice bath to stop cooking, then drain. Keep broth barely simmering, covered.
  • Cook onion in 2 tbsp butter with 1/4 tsp salt in a 4 qt heavy saucepan over medium heat, stirring occasionally, until softened, about 5 minutes.
  • Add rice and cook, stirring constant;y, 1 minute. Add wine and simmer, stirring constantly until absorbed.
  • Stir in 1/2 cup broth mixture and briskly simmer, stirring frequently, until absorbed. Continue adding broth, 1/2 cup at a time, stirring frequently and letting each addition be absorbed before adding the next, until rice is creamy and tender but still al dente (it should be the consistency of thick soup), about 18 minutes. There will be some left-over broth mixture.

I adapted this recipe from Rachel Ray's 365: No Repeats cookbook. Be careful not to overcook the shrimp or they will be rubbery. The estimate for the amount of liquid will vary depending on the several factors, but you should be safe with at least 6 cups of pre-heated liquid, you can expect your rice to be done once you have added 4-6 cups. Start checking for texture after the 4th cup is added.

3 garlic cloves, minced
1 cup onion, finely chopped
1 1/3 cups arborio rice
1/2 cup white wine
6 cups chicken stock, heated
1 lb shrimp, peeled and deveined
1 lemon, zested
15 ounces artichoke hearts, drained and chopped
2 sprigs rosemary, finely chopped
1 cup parmigiano-reggiano cheese, grated

Steps:

  • Saute garlic and onions in olive oil over medium-high heat for 2 to 3 minutes or until soft.
  • Add rice and saute another 2-3 minutes.
  • Add wine and cook 1 minute.
  • Add the warm stock about 1 cup at a time.
  • Cook uncovered and stirring frequently until all stock is absorbed.
  • Add remaining stock 1 cup at a time repeating this procedure about 1 cup of liquid remains to be added.
  • Add shrimp, lemon zest, artichoke hearts and rosemary with the final addition of liquid.
  • Cook for a total of approximately 20 minutes or until the rice is al dente and the risotto is starcy. The shrimp will be cooked when they turn pink.
  • Add the cheese and juice of one lemon.
  • Season with salt and pepper.

2 cups water
1 tablespoon extra-virgin olive oil
1 small to medium onion, chopped

1 cup Arborio rice
2 lemons
1/2 cup white wine
1/2 teaspoon sugar
2 tablespoons butter, cut into small pieces
1/2 cup grated pecorino cheese, a couple of handfuls
2 tablespoons slivered mint leaves
A handful basil tops, shredded or torn
Salt and freshly ground black pepper

Steps:

  • In a large pot, heat the stock and 2 cups water over medium low heat.
  • In a risotto pot or large skillet with a rounded bottom, heat the extra-virgin olive oil over medium to medium-high heat. Add the onions and garlic to pan and saute to soften 3 to 4 minutes Stir in the rice and add the zest of 1 lemon. Heat the rice for 1 to 2 minutes, then add the wine and cook until evaporated. Add in the hot stock, a few ladles at a time, and stir for a minute with each addition, to develop the starch and the creamy aspect. Total cooking time will be about 18 minutes or so. Keep adding stock each time the pan starts to become dry at the edges. While the rice cooks, peel and supreme or section the flesh of a lemon and finely chop. Sprinkle with a 1/2 teaspoon sugar. When rice is cooked to al dente, stir in the butter, lemon sections, juice of 1 lemon, the cheese and herbs. Season with salt and pepper, to taste, and transfer to a serving bowl. Serve immediately.

1/4 cup plus 2 tablespoons extra-virgin olive oil, plus more for drizzling
1/2 Spanish onion, finely diced

1 cup arborio rice
1/2 cup dry white wine (or use chicken stock)
1 cup freshly grated parmesan cheese
2 tablespoons minced fresh chives, plus more for topping
Grated zest of 1 lemon, plus 1 teaspoon juice
Freshly ground pepper

Steps:

  • Bring the chicken stock to a simmer in a large saucepan over medium heat.
  • Meanwhile, heat 2 tablespoons olive oil in a separate large saucepan over medium heat. Add the onion and a touch of salt and cook, stirring often, until the onion is tender, about 8 minutes. Add the rice and cook, stirring, until toasted, about 2 minutes. Add the wine and cook until evaporated, 2 to 4 minutes.
  • Add 1 cup simmering chicken stock to the rice and cook, stirring constantly, until absorbed. Repeat, adding the stock 1 cup at a time, until the rice is al dente and creamy in texture, about 20 minutes. (You might not use all of the stock.)
  • When the rice is al dente, remove from the heat and stir in the cheese, chives and lemon juice. Stir in the remaining 1/4 cup olive oil.
  • Divide the risotto among shallow bowls. Drizzle with olive oil, top with the lemon zest and more chives, and season with salt and pepper.

2 tbsp. Butter
1 1/2 lb. Shrimp (I Used U10 Size; Huge!)
1 whole Onion, Finely Diced
4 cloves Garlic, Minced
2 c. Arborio Rice
1 c. Dry White Wine
5 c. Vegetable Broth, Heated (give Or Take)
1 whole Lemon, Zest And Juice
1/2 tsp. Salt
1 tsp. Black Pepper
2 tbsp. Heavy Cream
18 whole Basil Leaves, Chopped Plus Extra For Serving
Grated Parmesan Cheese For Sprinkling

Steps:

  • Heat the butter in a large skillet over medium-high heat. Add shrimp in a single layer and cook both sides until opaque in the middle, about 3 minutes. Remove to a cutting board and chop roughly. Set aside.Return the skillet to the stovetop (do not wash it) and add the onion and garlic. Stir and cook for 2 to 3 minutes, or until onion starts to turn translucent. Reduce heat to medium-low. Add dry Arborio rice to the pan and stir it around for a couple of minutes, taking care not to burn it. Pour in wine and stir gently, allowing the rice to absorb the liquid. After the wine is absorbed, begin adding warm broth 1/2 cup to 1 cup at a time, allowing the rice to cook and absorb the liquid each time. Stir occasionally as you go, and add the salt and pepper during one of the broth additions. After 4 cups of broth have been absorbed, taste the rice. It should have a slight bite, but if it seems undercooked, add additional broth and cook it until it absorbs until the risotto is the perfect doneness. Zest and juice the lemon and add both the zest and the juice to the risotto toward the end of cooking. Stir in the heavy cream, the basil, and serve immediately with extra lemon zest and Parmesan cheese on top.

ASPARAGUS RISOTTO WITH SHRIMP AND LEMON

1 1/2 lbs large asparagus, trimmed
4 cups chicken broth, preferably reduced salt
1/2 cup shallot, chopped
2 tablespoons olive oil
1 cup arborio rice (short grain)
1 teaspoon lemon, zest of, finely chopped
1/2 cup dry white wine
1 lb shrimp
salt
fresh ground pepper

Steps:

  • Put asparagus into a large skillet of salted, boiling water.
  • Return to a boil; boil about 3 minutes or until tender-crisp.
  • Drain well; spread on paper towel to cool.
  • Cut into 1-inch lengths; set aside.
  • In a small saucepan, bring broth to a simmer; reduce to lowest heat and keep warm.
  • In a larger saucepan, sauté shallot in olive oil over medium heat for about 3 minutes or until soft.
  • Stir in rice to coat.
  • Cook rice, stirring constantly, until rice is opaque (1-2 minutes).
  • Stir in lemon zest.
  • Deglaze with white wine, stirring constantly.
  • Stir in 1/2 cup hot broth, cook over medium heat, stirring constantly, until broth has been absorbed and mixture thickens.
  • Simmer the risotto; adjust heat as necessary.
  • Continue process, using a half-cup of hot broth at a time, making sure the rice absorbs the liquid before adding more.
  • Continue adding broth until it's all used.
  • When rice is just tender, stir in reserved asparagus and shrimp.
  • Cook, stirring constantly, until shrimp is pink.
  • The risotto should be very creamy, and not soupy nor sticky.
  • Season to taste with salt and pepper.

1/4 cup olive oil
2 tablespoons butter
2 shallots, finely chopped
1 1/2 cups risotto rice (vialone, arborio or carnaroli)

12 large tiger shrimp, in the shell split down the centre
salt & freshly ground black pepper
2/3 cup shredded fresh basil leaf

  • Pour the stock into a saucepan and place over medium heat, bring to a boil then reduce to a simmer.
  • In another saucepan, heat half the oil and all the butter. Add the shallots and cook gently for 5 minutes, then add the rice and stir until well coated. Pour in the vermouth and stir until absorbed by the rice.
  • Add a ladleful of hot stock, keep stirring the simmering rice until the liquid is almost completely absorbed. Now add another ladleful of stock and continue cooking, adding more stock only when the previous liquid has been completely absorbed.
  • After 15 to 20 minutes, the rice will be creamy and cooked but still slightly al dente. Preheat the broiler and place the shrimp on a baking sheet, shell-side down. Season them with salt and pepper, then drizzle over the remaining olive oil. Broil the shrimp just until they turn opaque, 2 to 3 minutes.
  • Stir the herbs, zest and juice (you should have about 2/3 cup (150 mL) into the rice. Season with salt and pepper, then divide the risotto between 6 plates and top with the cooked shrimp.

3 tablespoons olive oil
1 pound 16/20 shrimp (peeled and deveined)
1 teaspoon salt
1/2 teaspoon ground black pepper
10 tablespoons butter (divided)
6 cloves garlic (minced)
1 1/2 cups white wine
1 1/2 tablespoons lemon juice
2 tablespoons fresh parsley (chopped)
For the Risotto:
3 cups chicken stock
2 tablespoons olive oil
4 tablespoons butter (divided)
2 shallots (minced)
3 cloves garlic (minced)
1 cup Arborio rice
1/2 cup Parmesan cheese (shredded)

Steps:

  • Gather the ingredients for the shrimp.
  • Heat the olive oil on high heat in a large skillet. Season the shrimp with the salt and pepper.
  • Sear the shrimp to golden brown on both sides. Remove the shrimp from the heat.
  • Turn the heat to medium-low. Add 2 tablespoons of the butter to the pan and add the minced garlic. Sauté until fragrant, about 1 minute.
  • Add the white wine and lemon juice to deglaze the pan. Allow the sauce to reduce by about a third. This will take about 5 minutes.
  • Whisk in the remaining butter and the parsley. Set aside the sauce in a small saucepan.
  • Wipe out the shrimp pan and gather your ingredients for the risotto. Heat the chicken stock in another small saucepan.
  • Heat the olive oil and 2 tablespoons of the butter in the large skillet. Once the butter has melted, add the shallots and garlic. Sauté on medium-low heat until the shallots are translucent, about 2 minutes.
  • Add the Arborio rice and toss to coat in the oil and butter. Sauté until the rice is very lightly browned.
  • Add a ladleful of the hot stock and stir until the stock is absorbed. Repeat, adding a ladle or two of stock at a time, until the rice is al dente, and you have used most of (or all of) the stock. This will take about 20 minutes. The rice will be creamy.
  • Turn off the heat and top with another ladleful of stock, the remaining 2 tablespoons of butter, and the Parmesan cheese. Stir to combine and cover with a lid. Heat the shrimp sauce until simmering. Toss the shrimp into the sauce to warm them back up.
  • Ladle the risotto into warm bowls and top with an equal amount of shrimp and sauce. Top with more Parmesan cheese and chopped parsley. Serve immediately with a glass of white wine .

1 1/2 pounds peeled and deveined shrimp
4 cloves garlic, minced

2 cups arborio rice
1 cup dry white wine
About 5 cups vegetable broth

1 lemon, zested and juiced, plus extra lemon zest, for garnish
2 tablespoons heavy cream
18 fresh basil leaves, chopped, plus extra for serving

Steps:

  • Heat the butter in a large skillet over medium-high heat. Add the shrimp in a single layer and cook on both sides until opaque in the middle, about 3 minutes. Remove to a cutting board and cut in half. Set aside.
  • Return the skillet to the stovetop (do not wash it) and add the garlic and onion. Stir and cook until the onion starts to turn translucent, 2 to 3 minutes. Reduce the heat to medium low. Add the rice to the skillet and cook, stirring, for a couple of minutes, taking care not to burn it. Pour in the wine and stir. Once the wine is absorbed, begin adding the broth 1/2 to 1 cup at a time, allowing the rice to cook and absorb the liquid each time. Stir occasionally as you go and add the salt and pepper during one of the broth additions. After 4 cups of broth have been absorbed, taste the rice. It should have a slight bite, but if it seems undercooked, add additional broth for the rice to absorb and cook until the risotto is to your liking.
  • Add both the lemon zest and juice to the risotto towards the end of cooking. Stir in the heavy cream, shrimp and basil, then serve immediately with extra lemon zest and Parmesan cheese on top.

2 tablespoons olive oil
3/4 pound shrimp, peeled and deveined
1/2 cup diced onions
1 clove minced garlic
3/4 cup risotto or Arborio rice
1 heaping tablespoon lemon zest, plus juice of 1/2 lemon
1/3 cup white wine
3 1/2 cups chicken broth, or more as needed
Salt and ground black pepper

Steps:

  • In a heavy-bottom pot such as a Dutch-oven, add 1 tablespoon of olive oil and heat up over medium-high heat. Brown the shrimp on both sides without fully cooking them through, about 1 minute per side. Remove and set aside on a plate.
  • In the same pot, add the remaining tablespoon olive oil, then add the onions and garlic. Saute for 5 minutes, then add the risotto and cook, stirring gently, to toast it. Add the lemon zest and juice and turn the heat to medium; add the white wine. Continue stirring until most of the wine has cooked off, 5 to 7 minutes. Slowly add about 1/2 cup of chicken broth, and cook, stirring frequently, until the liquid has been absorbed; then add another 1/2 cup chicken broth. Continue doing so in this manner until the risotto is fully cooked through and the liquid has been completely absorbed. (You may need more or less than the 3 1/2 cups of chicken broth.)
  • Season with salt and pepper to taste, then add the shrimp back in. Toss to incorporate and cook until the shrimp are cooked all the way through, 2 to 3 minutes. Divide evenly into 2 bowls and serve!

¾ cup grated parmesan cheese
3 Tbsp. assorted fresh herbs, like basil, parsley and/or chives

Steps:

  • Instructions Preheat oven to 350˚F. In a small to medium heavy, oven-safe pot with a lid (like a Dutch oven), heat 1 Tbsp. of the butter over medium heat. Add the leek and sauté until it begins to soften but not brown, about 2 minutes. Stir in the garlic and sauté for 30 seconds more. Add rice and sauté, stirring constantly, until you begin to smell the rice toasting and it begins to sizzle, about 1 minute. Carefully add the wine to the pan and continue stirring until the wine appears to evaporate. Stir in the lemon zest and 3 cups of the chicken stock and bring to a simmer. Cover the pot and transfer to oven to bake for 15 minutes. Return the pot to the stove over low heat. Remove lid and give it a good stir. Feel free to add more chicken stock until it reaches a consistency you like, then fold in the remaining 2 Tbsp. of butter, parmesan cheese and herbs. For an extra pop of lemon, add lemon juice to taste. Season to taste with salt and pepper. Toss the shrimp in salt and pepper to taste. Heat the olive oil in a large skillet over medium heat. Once hot, add the shrimp and cook, flipping occasionally, until shrimp are pink and cooked through, about 3-4 minutes. Serve shrimp over risotto.
