ASIAN QUINOA STIR-FRY

This filling and gluten-free vegetarian dinner is full of colourful vegetables, with a tangy sauce of lime juice, garlic and tamari

100g dried quinoa
1 tbsp sesame oil
1 small red onion , thinly sliced
1 garlic clove , grated
thumb-sized piece ginger , grated
½ tsp ground coriander
1 tbsp wheat-free tamari
1 red pepper , cut in 1cm/ 1/2 slices
1 large courgette (about 250g/9oz), sliced
100g green beans , tailed and cut in half
2 tbsp sesame seeds
small pack coriander , roughly chopped
zest and juice 2 limes
pinch of pink Himalayan salt
2 tbsp sesame oil
½ garlic clove , crushed
½ tsp brown rice vinegar
1 tsp wheat-free tamari

Steps:

  • Cook the quinoa following pack instructions and leave to cool.
  • In a large frying pan or wok, pour in the sesame oil, onion, garlic, ginger, ground coriander and tamari and fry on a medium-high heat for 2 mins until the moisture starts to evaporate, then add 3 tbsp water. Leave to fry for 1 min more, add the pepper and fry for another 2 mins.
  • Add 4 tbsp water then after 2 mins, add the green beans and 125ml water.
  • After another 2 mins, add the courgette, 125ml water and leave to cook for 3 mins, then take off the heat.
  • Make the dressing by putting all the ingredients in a jug and whisking until smooth. Mix the quinoa into the veg, add the dressing and mix together with the sesame seeds. Stir through the coriander to serve.

1/2 cup quinoa
1 cup water
1 (6 ounce) can tuna, drained
1 tablespoon low-fat margarine
1 tablespoon lemon juice
1 teaspoon lemon pepper
2 eggs
1/2 cup Baby Spinach
1/2 cup mushroom, sliced
salt, to taste
pepper, to taste

Steps:

  • Bring water and quinoa to boil, then simmer until water is gone, about 10 minutes.
  • Saute tuna in margarine and lemon juice on low in seperate frying pan.
  • Move tuna to side of pan, scramble eggs in other side.
  • Once quinoa is cooked, add to frying pan with spinach, lemon pepper and salt and pepper, mix all ingredients thoroughly.
  • Heat through on low for about 5 minutes, adding sliced mushrooms in the last few minutes.

200g quinoa
5 tbsp olive oil
2 garlic cloves , finely chopped
3 carrots , cut into thin sticks
300g leek , sliced
300g broccoli , cut into small florets
100g sundried tomato , drained and chopped
200ml vegetable stock
2 tsp tomato purée
juice 1 lemon

Steps:

  • Cook the quinoa according to pack instructions. Meanwhile, heat 3 tbsp of the oil in a wok or large pan, then add the garlic and quickly fry for 1 min. Throw in the carrots, leeks and broccoli, then stir-fry for 2 mins until everything is glistening.
  • Add the sundried tomatoes, mix together the stock and tomato purée, then add to the pan. Cover, then cook for 3 mins. Drain the quinoa, then toss in the remaining oil and the lemon juice. Divide between warm plates and spoon the vegetables on top.

This recipe was given to me by a friend when we both lived in Montreal. It's amazing and vegan too (depending on the kind of peanut butter you use). Tastes good with shitake mushrooms. I use miso broth to cook the quinoa.

1 1/2 cups dry quinoa
2 cups broth
3 tablespoons raisins
2 tablespoons sesame oil
1 onion
1 -2 hot pepper
3 garlic cloves
8 -10 mushrooms
1/4 teaspoon salt
1/2 teaspoon turmeric
1 tablespoon cumin
1 (454 g) package tofu
1 cup soymilk
1 lemon juice
1/2 tablespoon peanut butter
1 -2 tablespoon miso
2 cups spinach

Steps:

  • For the quinoa: rinse well, boil stock, add quinoa and let it simmer, covered, until water is absorbed. Remove from heat and add raisins.
  • Sauté oil, onion, hot peppers and garlic on medium for 4 minutes.
  • Add mushrooms, spices, tofu or chickpeas and sauté for 5 minutes more with some salt.
  • Add soymilk and lemon juice.
  • Dissolve peanut butter and miso in hot water. Add to stir fry.
  • When almost ready, add spinach on top to steam.
  • Serve with lime slices.

1 cup frozen chopped broccoli
1/2 cup frozen peas
1 garlic clove
1/2 teaspoon oil
3 ounces light chunk tuna in water
1 teaspoon fish sauce
1 teaspoon soy sauce
1/2 tablespoon chopped fresh basil
1 green onion, julienned

Steps:

  • In small sauce pan, heat oil and fry garlic. Add broccoli and peas and fry about 3-4 minutes.
  • Add tuna and stir fry until tuna is vegetables are slightly tender.
  • Add soy sauce and fish sauce.
  • Remove from heat and stir in basil and green onion.
  • Serve with rice is desired.

  • If you haven’t prepared quinoa yet (*prep/cook time does not include making quinoa), do so first by adding rinsed quinoa to a large saucepan and toasting over medium heat for 2 minutes. Add water and bring to a boil. Once boiling, reduce heat to a simmer, cover, and cook for 18 minutes or until water is absorbed and the quinoa is fluffy. Transfer cooked quinoa to a glass bowl or storage container and refrigerate (uncovered) to cool. Once completely cooled, cover. Will keep in the refrigerator up to 1 week or in the freezer up to 1 month.
  • In the meantime, prepare sauce by adding all ingredients to a mixing bowl and whisking to combine. Taste and adjust flavor as needed, adding more chili garlic sauce for heat, lime for acidity, maple syrup for sweetness, almond butter for nuttiness, or coconut aminos for saltiness and depth of flavor. Set aside.
  • Heat a large skillet (or wok) over medium-high heat. Once hot, add sesame oil (or water), carrots, and one third of the coconut aminos. Cover and cook for 3-4 minutes, stirring occasionally. Carrots take the longest to cook through, so they need a little time on their own.
  • Next, add chopped green onion, broccoli, and cashews (optional), along with another one third of the coconut aminos. Stir, cover, and cook for 2 minutes or until broccoli appears slightly browned.
