2 tablespoons butter
2 cups sliced fresh mushrooms
2 garlic cloves, minced
4 sole fillets (4 ounces each)
1/4 teaspoon paprika
1/4 teaspoon lemon-pepper seasoning
1/8 teaspoon cayenne pepper
1 medium tomato, chopped
2 green onions, thinly sliced

Steps:

  • In a large skillet, heat butter over medium-high heat. Add mushrooms; cook and stir until tender. Add garlic; cook 1 minute longer. Place fillets over mushrooms. Sprinkle with paprika, lemon pepper and cayenne., Cook, covered, over medium heat 5-10 minutes or until fish just begins to flake easily with a fork. Sprinkle with tomato and green onions.

SOLE WITH LEMON-CAPER SAUCE

Number Of Ingredients 12

4 fillets of lemon sole
1 1/4 teaspoons kosher salt
2 tablespoons extra-virgin olive oil
4 tablespoons unsalted butter, at room temperature
1/3 cup all-purpose flour, for dredging
1/4 cup capers, drained and rinsed
1 clove garlic, minced
1/2 cup chicken stock
1/4 cup freshly squeezed lemon juice (from about 1 1/2 lemons)
1/2 teaspoon Calabrian chili paste
1/2 teaspoon chopped fresh oregano
2 tablespoons chopped fresh Italian parsley

Steps:

  • Using a paper towel, dry the sole fillets very well. Season the fish evenly with 1 teaspoon salt. Heat a medium skillet over high heat. Add 1 tablespoon olive oil and 1 tablespoon butter to the pan. When the butter is fully melted and the bubbles have subsided, dredge both sides of 2 fillets in the flour. Shake off the excess flour and add the fish to the skillet. Reduce the heat to medium high. Cook the fillets until beginning to brown around the edges on the first side, 2 to 3 minutes. Using a fish spatula, flip the fish gently and cook for another 30 seconds. Remove the fillets to a plate and continue with the remaining 1 tablespoon olive oil, 1 tablespoon butter and fish.
  • When all 4 fillets are cooked and out of the skillet, add the capers and garlic and cook over medium heat, stirring, until fragrant, about 15 seconds. Add the chicken stock and lemon juice and stir, scraping up the bits from the bottom. Season with the remaining 1/4 teaspoon salt. Simmer for about 2 minutes to reduce the liquid slightly. Finish the sauce by stirring in the remaining 2 tablespoons butter, chili paste and oregano. Spoon the sauce over the fish, sprinkle with the parsley and serve.

1 box (540 g) High Liner Pan-Sear Selects Lemon Pepper sole fillets 4 pack, or choose to use any of your favourite Pan-Sear Selects products
Caprese Salad:
4 vine tomatoes, sliced
1 ball large Buffalo mozzarella ball, sliced
3 tablespoons (45 ml) extra virgin olive oil
1 bundle fresh basil
juice of 1 lemon
1 tablespoon (15 ml) balsamic glaze
To taste salt and pepper
Basil crème :
4 tablespoons (60 ml) sour cream
1.5 tablespoons (22,5 ml) Parmesan cheese, grated
1.5 tablespoons (22,5 ml) basil leaves, chopped

Steps:

  • Pan sauté the fillets on a medium low heat for 20-22 minutes; flip halfway.Gently mix sliced tomatoes with lemon juice, olive oil and season with salt & pepper to make the Caprese Salad.Mix the sour cream, Parmesan cheese and basil leaves to make the Basil Crème.Plate the Caprese salad with layers of tomatoes, mozzarella & fresh basil leaves.Drizzle the salad with balsamic glaze.Pair the salad with the cooked Lemon Pepper Sole fillets topped with a dollop of Basil CrèmeEnjoy!

1 teaspoon minced shallot
1/4 teaspoon minced garlic
1 teaspoon Dijon mustard (I use Maille whole grain)
1/2 teaspoon honey
1 1/2 tablespoons capers, with their liquid
1 tablespoon fresh lemon juice
1 tablespoon vinegar (I use red wine variety)
1 teaspoon fresh parsley, chopped
1/4 teaspoon black pepper
1/2 cup extra virgin olive oil
1 lb mixed greens
16 grape tomatoes, halved
1/2 cup kalamata olive, pitted
1/2 cup feta cheese, crumbles
1/2 red onion, sliced thin

Steps:

  • Combine dressing ingredients in cruet or jar. Shake well to combine ingredients. This can be done in advance.
  • Divide salad greens into four dishes. Top with tomatoes, olives, feta, and onion.
  • Shake dressing and pour over salad. (You may not need all the dressing).

handful of basil leaves
2 tbsp extra virgin olive oil
2 tbsp balsamic vinegar

Steps:

  • Arrange the slices of tomato and mozzarella on a platter, alternating between slices of each, and sprinkle over the basil leaves. Season generously with salt and black pepper, then drizzle over the olive oil and vinegar. Serve straightaway.
