LORI'S LEMON-PEPPER CHICKEN LEG QUARTERS
A simple twist (no pun intended) on a classic. I'm not a fan of chicken breast as the meat can be bland so I use the leg quarters for greater flavor. Quick and delicious lemon-pepper chicken. Hope you enjoy as much as I do! I like to serve this with garlic noodles, pan-seared asparagus, and buttered wheat rolls.

Steps:
- Coat the leg quarters with lemon-pepper, salt, and parsley. Let sit in the refrigerator, covered, for 2 hours.
- Preheat the oven to 400 degrees F (200 degrees C).
- Heat olive oil in a skillet over medium-high heat. Sear chicken, skin-side down, to help crisp the skin, about 5 minutes per side. Transfer to a roasting pan.
- Bake in the preheated oven until no longer pink in the centers and juices run clear, about 1 hour. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

Steps:
- Trim off any excess fat, pieces of bone or cartilage. Spread out the skin on the chicken so it lays flat. Lightly toss with avocado oil then season liberally on all sides of the chicken leg quarters
- Place leg quarters in a cast iron skillet and bake for about 20 minutes at 400 degrees f. Next add sliced lemon and butter to the pan in between the chicken quarters. Continue cooking in the oven until the chicken reaches an internal temperature of 175-185 degrees F.
- Ladle some of the juices in the bottom of the pan over the chicken and garnish with fresh parsley.

LEMON-ROSEMARY-GARLIC ROASTED CHICKEN QUARTERS
This is an awesome toss-together main dish with five-star results. I didn't have have a whole roaster chicken but wanted all the flavor and crispy chicken skin one would expect from a roasted chicken. It turned out juicy, tender and seasoned just right with perfectly browned, crisp skin to top it all off. I roasted the chicken atop a layer of quartered potatoes and onions, which turned out tender and full of flavor from cooking in the chicken juices. My hubby declared this finger-licking, extra napkin-needing delicious, and I hope you enjoy too!

- Preheat oven to 400°F.
- In a small roasting pan or other metal baking dish, arrange pealed and quartered potatoes. Drizzle with 1 tbs. olive oil and season with 1/4 teaspoons salt and 1/4 teaspoons pepper. Toss to coat, arrange in a single layer then arrange chunks of onions throughout the potatoes.
- Rub chicken quarters with 1/4 teaspoons salt, 1/4 teaspoons pepper, chicken bouillon powder, rosemary, garlic and olive oil.
- Arrange quarters atop potatoes in roasting pan, drizzle chicken and potatoes sticking out from underneath with melted butter. Then squeeze the lemon atop all.
- Roast uncovered for 35-40 minutes at 400°F.
- Then increase oven temperature to 425 F and roast for another 10-15 minutes until skin is lightly browned and crispy, and juices run clear from the thickest part between the drumstick and thigh.
- Remove from oven and allow to rest for 10 minutes before serving.

- Arrange chicken in shallow bowl or baking dish.
- Whisk together remaining ingredients and pour over chicken.
- Cover with plastic wrap and refrigerate at least 4 hours.
- Heat grill to medium-high heat.
- Place chicken on grill until browned on all sides (about 10 minutes) turning once or twice.
- If using gas grill reduce heat to low and cook 20 minutes (check for doneness,continue cooking until chicken is no longer pink,if needed) If using charcoal,move chicken to edges of grill,cover and cook over indirect heat,check for doneness at 20 minutes,continue cooking if needed.
