This orzo salad recipe is a fresh, delicious side dish or vegetarian lunch! If you make it ahead of time, save the herbs to add at the last minute. I also recommend tossing the salad with a drizzle of olive oil before serving.

1½ cups dry orzo pasta
1 recipe Greek Salad Dressing
1 tablespoon red wine vinegar
1 tablespoon fresh lemon juice
½ teaspoon oregano
¼ teaspoon sea salt
2 Persian cucumbers (halved vertically, and sliced ¼-inch thick)
2 cups halved cherry tomatoes
1 cup cooked chickpeas (drained, and rinsed)
4 ounces feta cheese (cut into ¼-inch cubes)
⅓ cup thinly sliced red onion
½ cup pitted Kalamata olives
1 cup fresh basil and/or mint leaves
Freshly ground black pepper

Steps:

  • Bring a large pot of salted water to a boil. Prepare the pasta according to the package directions, or until slightly past al dente. Drain the orzo and toss it with a little olive oil, so that it doesn't stick together. Spread onto a baking sheet to cool.
  • Prepare the Greek Salad Dressing and add in the red wine vinegar, lemon juice, oregano, and sea salt.
  • In a large bowl, toss together the cooked orzo, cucumbers, tomatoes, chickpeas, feta, red onion, and olives. Drizzle the dressing over the salad, add half the herbs, season with freshly ground black pepper, and toss to coat. Garnish with the remaining herbs and serve.

3 tbsp butter
3 cloves garlic (minced)
1/4 cup Spanish onion (minced)
16 oz Orzo pasta
2 cups Kale (packed down and sliced)
1 Zucchini (minced)
12 oz Spinach
2 tbsp Thyme
2 1/2 cups Chicken broth
1/2 cup Sherry
2 tbsp Lemon juice
1/2 tsp Lemon rind
1/2 cup Table cream
3/4 cup Parmigiano-Reggiano (grated)
Salt & pepper (to taste)
1 cup Bocconcini (sliced)

Steps:

  • Melt butter in a large pan over medium-high heat. Add the garlic and onion and sauté for 1 minute.
  • Stir in the orzo. Cook until golden and toasted, about 3 minutes. Stir in the zucchini, spinach, kale, thyme and lemon zest. Cook until spinach is wilted. Add 1/2 cup broth, sherry and lemon juice. Season with salt and pepper.
  • Slowly add in the remaining broth. Bring to a boil over high heat, then reduce to a simmer. Stirring often, simmer 9-10 minutes, or until the orzo is al dente and the dish becomes creamy.
  • Stir in the cream and Parmesan. Cook for another 3 minutes to thicken.
  • Serve Warm Orzo Lemon Salad family-style. Garnish with sliced Bocconcini cheese.

1/2 tablespoon better than bullion chicken stock
1 lb orzo pasta
1 teaspoon minced fresh dill
2 tablespoons minced fresh parsley

8 tablespoons extra light olive oil (prefer the Canola) or 8 tablespoons canola oil (prefer the Canola)
1/2 teaspoon true lemon (granulated lemon, 6 packets)
1/2 teaspoon garlic powder
1/2 teaspoon soy sauce
1/3 cup pine nuts
2 cups Baby Spinach
1 teaspoon sea salt
1 cup cherry tomatoes (optional)

Steps:

  • 1. Bring six cups of water and chicken stock to a boil.
  • Cook Orzo for 7 minutes (al dente).
  • Drain pasta and stir in the colander to release moisture and heat for approximately 2-3 minutes.
  • In a large bowl mix/incorporate fresh herbs (rosemary, basil, parsley), oil, soy, salt, granulated lemon, and salt.
  • Add the cooked orzo (should still be quite warm) and stir until orzo is coated evenly.
  • While the orzo is still warm add spinach and pine nuts.
  • salt to taste.
  • Add tomatoes if you like.

1 cup orzo
2 ½ cups chicken broth
½ teaspoon dried oregano
½ tablespoon butter

Steps:

  • Using a vegetable peeler, peel off two large strips of lemon zest.
  • Bring orzo, broth, oregano and lemon zest to a boil. Reduce heat to a simmer and cook 13-15 minutes uncovered until the orzo is tender.
  • Remove from heat and stir in butter. Rest 5 minutes.
  • Juice half of the lemon over the orzo, add mint or parsley and stir. Season with salt & pepper to taste.

Easy Lemon Orzo Pasta Salad image

An easy orzo pasta salad recipe with summer produce and a quick lemon dressing.

1 cup uncooked orzo pasta
1 large lemon
1/4 cup extra virgin olive oil
salt and pepper to taste
1 heaping cup fresh basil leaves, chopped
2 large tomatoes, diced

Steps:

  • Cook orzo in very salty water until just barely al dente.
  • Reserve 1/2 cup of pasta water.
  • Drain orzo and set aside.
  • While the orzo cooks, use a microplane to zest your lemon. Place zest into a large mixing bowl.
  • Cut zested lemon in half and squeeze lemon juice into your mixing bowl. Be careful not to let any lemon seeds fall into the bowl!
  • Add olive oil, salt, and pepper to bowl and whisk to combine. Set aside.
  • Add reserved 1/2 cup pasta water to your lemon juice mixture and whisk to combine. The sauce will look watery, but don't worry - the orzo will soak the liquid up as it cools!
  • Add cooked, drained orzo to lemon juice mixture and stir to combine.
  • Let orzo cool for 10-15 minutes.
  • Add basil and tomatoes to orzo. Stir to combine. Taste and add salt or pepper as necessary.
  • Serve immediately or transfer to an airtight container and chill until ready to serve. Top with an extra sprig of basil for garnish if you like.

1 tbsp olive oil
1 tbsp butter
1 red onion , finely chopped
1 garlic clove , finely grated
½ tbsp light brown soft sugar
350g orzo
50ml extra virgin olive oil
1 large lemon , juiced
1 small bunch of basil , finely chopped
1 small bunch parsley , finely chopped
2 tbsp capers , drained and rinsed
50g flaked almonds , lightly toasted

Steps:

  • Heat the olive oil and butter in a non-stick frying pan over a medium heat, and fry the onion for 10-15 mins, or until golden and caramelised. Add the garlic and sugar and cook for a further 3 mins. Season to taste.
  • Cook the orzo following pack instructions. Drain, then toss with a little of the extra virgin olive oil and leave to cool completely. Whisk the remaining oil with the lemon juice and set aside.
  • Toss the orzo with the sticky onion and garlic, the lemony dressing, herbs and capers, along with half the toasted almonds. Season. Spoon onto a sharing plate and top with the rest of the almonds. Will keep in the fridge for up to three days.

1 bunch fresh asparagus, cut into 1-inch pieces
1 pint grape tomatoes or 1 pint cherry tomatoes, halved
1 lemon, zested and juiced

2 tablespoons fresh parsley, minced
kosher salt
fresh ground pepper
parmigiano-reggiano cheese, grated (optional)

  • Bring 2 large pots of water to boil. Add a big pinch of salt in each.
  • To one pot, add asparagus and blanch, about 2 to 3 minutes, depending on the thickness of your asparagus. Place blanched asparagus in a bowl of ice water to stop the cooking and keep them green.
  • To the second pot, add the orzo. Cook per package instructions. When tender, drain and place in a large bowl. Add blanched asparagus and tomato halves.
  • Mix olive oil, lemon zest, lemon juice, garlic, salt and pepper in a small bowl. Stir into orzo and vegetables. Stir in parsley and grated Parmigiano Reggiano (omit the cheese to make this vegan.)

3 tablespoons olive oil for pan + more for finished dish, as desired
1 medium sweet Vidalia onion, diced small
1 medium zucchini, diced into half moons
one 15-ounce can garbanzo beans, drained and rinsed (I use low salt)
2+ teaspoons kosher salt, or to taste
1+ teaspoon freshly ground black pepper, or to taste
2 teaspoons Italian seasoning
1 teaspoon dried oregano
2 to 4 cloves garlic, pressed or finely minced
5 ounces fresh spinach (about 4 giant handfuls)
1/2 English cucumber, diced into small half moons
1 pound sliced cherry or grape tomatoes, or to taste
1/4 to 1/3 cup cup fresh basil loosely measured, chiffonade (in ribbons); or to taste
1 teaspoon lemon zest, or to taste
3 tablespoons lemon juice, or to taste
6 ounces crumbled feta cheese

Steps:

  • To a large pot, add the orzo and cook according to package directions. Drain and return to pot or very large bowl; set aside.
  • While orzo is cooking, to a large skillet add 3 tablespoons olive oil, onions, and cook for about 3 minutes; stir intermittently.
  • Add the zucchini, garbanzo beans, season with 1 teaspoon salt, 1 teaspoon pepper pepper, Italian seasoning, oregano, and cook for about 3 more minutes, or until zucchini is slightly softened; stir frequently to ensure even cooking.
  • Add the garlic, stir to combine, and cook for about 1 minute, or until fragrant.
  • Transfer the onion and zucchini mixture to the large pot with the drained orzo.
  • Add the spinach (looks like a lot but it will wilt) and stir to incorporate. Stir for about 2 minutes, or until it begins to wilt from the carryover heat.
  • Add the cucumbers, tomatoes, basil, lemon zest, lemon juice, and stir well to incorporate.
  • Add the feta and stir to combine. Tip - If you want the feta to remain more intact, don't add it until the orzo has cooled down a bit, or it will melt, which is totally fine, you just won't see the white crumbles.
  • Taste, and as desired, add additional salt and pepper. I added an additional approximately 2 additional teaspoons salt and 1 teaspoon pepper because it's a very large quantity of food.
  • If desired, drizzle in additional olive oil. I added another approximately 2 tablespoons for flavor and so that the orzo doesn't stick as it cools.
  • Serve immediately. Recipe can be served warm, at room temp, or chilled.

  • Cook pasta as you normally would in a pot of salted water, until it's al dente. Reserve 1/4 cup of the pasta water (you probably won't need it, but reserve it just in case), then drain the orzo and set aside.
  • While the pasta is cooking, combine lemon juice, olive oil, lemon zest, 1/2 cup water (not the salted water), salt, and pepper in a bowl and set aside. Then, slice the tomatoes, zucchini and basil and set aside.
  • Transfer the cooked orzo to the bowl with the lemon juice and let it set for 10 minutes. In that time, the pasta will soak up the lemon juice, olive oil and water, which is good because we don't want it to be dry. If for some reason it is, pour in the reserved pasta water.
  • Then, add in the tomatoes, zucchini, basil, and feta cheese and stir to combine. Enjoy as-is, or add extra feta and/or black pepper on top!

Lemon Orzo Pasta Salad with Cucumbers and Olives image

We love this light orzo pasta salad - it doubles as a side, can be the main event or works well topped with grilled chicken or Adam's favorite, shrimp! Use your favorite tender herbs in this - we love using of one or a combination of mint, dill, basil, parsley or cilantro.

Number Of Ingredients 12

1 1/2 cups (8 ounces) dried orzo pasta
Salt and fresh ground black pepper
1/4 cup extra-virgin olive oil
1 teaspoon Dijon mustard
1/2 teaspoon honey
1 teaspoon finely grated lemon zest
2 to 4 tablespoons fresh squeezed lemon juice, depending on taste
1 medium English cucumber, diced
1 large tomato, diced or 8 ounces halved cherry tomatoes
1/2 cup coarsely chopped fresh herbs; use any combination of fresh parsley, cilantro, basil, dill or mint
1/2 cup pitted olives, halved
1 cup canned or jarred and drained artichoke hearts, chopped, see notes

Steps:

  • Bring a large saucepan of salted water to a boil. Add orzo and cook until tender, 6 to 10 minutes (check box for actual cook time). Drain.
  • While the orzo cooks, in a large bowl, whisk the oil, mustard, honey, lemon zest, lemon juice, 1/2 teaspoon of salt, and 1/4 teaspoon pepper. Add the drained orzo to the dressing and mix well.
  • Stir in the cucumber, tomato, herbs, olives and artichokes. Taste for seasoning and adjust with salt and/or pepper as needed. Enjoy warm or cover then refrigerate until cool, about 1 hour.

  • Fill a 5 qt saucepan halfway with water and add a large pinch of salt. Bring to a boil over high heat. Add the orzo and return to a boil. Reduce heat to medium-low and cook the pasta for about 2 minutes less than the box indicates. You want the orzo to be just cooked, but still firm. While the pasta is cooking, add the frozen peas to the bottom of the colander that you will be using to drain the orzo.

Before serving, give the salad one last stir to redistribute the dressing and break up any pasta that stuck together. Taste for seasoning and add salt and pepper if needed.
