LEMON DRESSED FRUIT SALAD



Lemon Dressed Fruit Salad image

This refreshing fruit salad is summertime in a bowl. We adored everything about this recipe. The mixture of fruit is perfect. A bit tangy from the lemon and sweet from the honey, the dressing has the right balance of flavors. It's divine when mixed with the fruit. This is a delicious fruit salad for any gatherings this summer.

1 fresh pineapple, cut into chunks
1 qt strawberries, quartered
1 c blueberries, fresh
2 kiwi fruit, peeled and cubed
1 nectarine, cubed
1 Tbsp lime juice ~ 1-2 fresh limes
2 tsp honey
1/8 tsp ground cinnamon
DRESSING
2 Tbsp mayonnaise, light
2 Tbsp lemon yogurt
1 Tbsp honey
1 Tbsp lemon juice, fresh
1 Tbsp orange juice
1 Tbsp lemon zest, grated

Steps:

  • 1. Cut pineapple into chunks. Wash and quarter strawberries. Peel kiwi and cut into small cubes. Cut nectarine into small pieces.
  • 2. In a large bowl combine pineapple, strawberries, blueberries, kiwi, and nectarine.
  • 3. In a small bowl, mix lime juice, honey, and cinnamon until everything is well mixed.
  • 4. Pour over fruit. Cover it and put in refrigerator until ready to use.
  • 5. Make the dressing. In a small container (or bowl), mix mayonnaise and yogurt together.
  • 6. Zest the lemon prior to cutting it for lemon juice. When finished zesting, cut lemon in half and juice it into a small bowl.
  • 7. Add in honey, fresh lemon juice, and orange juice to the yogurt-mayo mixture. Blend until there are no lumps.
  • 8. Add zest from lemon to dressing.
  • 9. Pour dressing on fruit prior to serving.
  • 10. Gently toss to combine dressing and fruit.

1 medium cantaloupe, peeled, seeded and cubed
1 pound fresh strawberries, halved
1 fresh pineapple, peeled and cubed
2 large Granny Smith apples, cubed
2 cups seedless red or green grapes
1/2 cup dried cranberries
3/4 cup orange juice
1/3 cup lemon juice
2 tablespoons minced fresh mint
1 teaspoon ground cinnamon
1/2 cup sweetened shredded coconut, optional

Steps:

  • In a large bowl, combine the first six ingredients. In a small bowl, whisk orange juice, lemon juice, mint and cinnamon. Drizzle over fruit; toss lightly to coat. If desired, top with coconut before serving.

1 papaya, peeled, seeded and cut into 1-inch chunks
2 bananas, peeled and sliced 1/2-inch thick
1 mango, peeled, stoned and cut into 1-inch chunks
1 cup pineapple, cut into 1-inch chunks
1 pint strawberries, hulled and halved
2 tablespoons fresh lemon juice
2 tablespoons fresh lime juice
1 tablespoon dark rum
2 tablespoons sugar, or to taste
1 bunch mint, leaves only, coarsely chopped
Tiny sprigs of mint, for garnish

Steps:

  • In a large glass serving bowl or picnic container, combine all the fruits and toss very gently to mix. Sprinkle the lemon and lime juices, rum (if using), sugar and mint over the top and again toss gently to mix. Garnish with tiny mint sprigs before serving.

½ cup water
3 1-inch strips of lemon zest
1 cinnamon stick
2 tablespoons lemon juice
4 mango, pitted, peeled, and cut into chunks
4 white peaches, pitted and cut into bite-sized pieces
2 Granny Smith apples - peeled, cored, and sliced
4 (6 ounce) containers fresh raspberries
¼ cup finely chopped fresh mint
2 tablespoons lemon juice

Steps:

  • Place the sugar, water, lemon zest, cinnamon, and 2 tablespoons of lemon juice into a small saucepan. Bring to a boil; reduce heat to medium-low and simmer 10 minutes. Strain the syrup through a mesh strainer; refrigerate until cold.
  • Place the mango, peaches, apple, raspberries, mint, and 2 tablespoons of lemon juice into a mixing bowl. Pour the chilled syrup overtop and gently stir to combine.

This recipe came about when son Sam and daughter Amber conspired to "help" make breakfast one Saturday morning. We always figure one piece of fruit for each person eating (5 people = 5 fruits). Cooking time is figured for letting fruit sit for a few minutes make make its own syrup--you can skip this step if someone is "starving!"

2 apples, washed, quartered, cored
1 orange, peeled, sectioned
1 banana, peeled
1 (15 ounce) can crushed pineapple, drained
1/4 cup walnuts, chopped
3 tablespoons brown sugar
1 tablespoon cinnamon

Steps:

  • Cut fruits into bite-size pieces over a large serving bowl.
  • Sprinkle nuts over the top.
  • In a separate (small) bowl, mix sugar and cinnamon; sprinkle over fruits & nuts; mix well.
  • This creates its own syrup if you let it rest for about 15 minutes.
  • NOTE: Substitute "in-season" fruits (berries, melons) or go with "tropical" fruits (mango, kiwi) for a different flavor.
  • VARIATION: Zap in the microwave for a bit to serve it warm--this is great to serve over panny cakes or waffles, too!

1 cup honeydew, cubed
3 tangerines, sectioned
3 medium nectarines, cut into 1/2 in cubes

1/4 cup orange juice
1 teaspoon cinnamon

Steps:

  • whisk together cinnamon, honey and orange juice.
  • toss fruit together, reserving blueberries and raspberries.
  • toss sauce with fruit.
  • add blueberries and raspberries last so you don't mush them up.
  • let sit in fridge for at least a half an hour for flavors to develop.
