SIMPLE LEMON-HERB ROASTED SALMON

Simple Lemon-Herb Roasted Salmon image

This go-to recipe uses a fish's best friends: butter, herbs and lemon. Roasting at a high temperature lets you lightly brown the fillets on foil, without having to use a skillet, so there's minimal cleanup. Make this quick entree often, and use the time you save to try a new side dish to go with it.

Provided by Food Network Kitchen

Categories     main-dish

Time 15m

Yield 4 servings

Number Of Ingredients 6

Olive oil, for the foil
Four 5- to 6-ounce skinless salmon fillets
Kosher salt and freshly ground black pepper
1 tablespoon unsalted butter, cut into 4 pieces
1 tablespoon chopped fresh dill and/or parsley
Half a lemon

Steps:

  • Position an oven rack in the top of the oven, and preheat to 450 degrees F. Line a rimmed baking sheet with foil, and brush with oil.
  • Place the salmon fillets, evenly spaced, in the middle of the prepared baking sheet. Sprinkle the tops with 3/4 teaspoon salt and a few grinds of pepper. Bake until the outside is opaque and slightly firm to the touch and the inside flakes easily (insert a small paring knife between layers to check; the color will vary from bright pink (rare) to pale pink to orange (well-done)), 8 to 12 minutes, depending on the desired doneness.
  • Remove the fillets from the oven, top each with a piece of butter and let melt over the top and down the sides. Sprinkle with herbs, lemon juice and salt to taste. Transfer the salmon to serving plates with a spatula. Serve hot or at room temperature.

HERB AND LEMON SAUCE FOR SHRIMP AND PASTA

Herb and Lemon Sauce for Shrimp and Pasta image

Very yummy and spicy. Lower the amount of oregano and basil to reduce spiciness, and use less red pepper flakes to lower the heat. To ease cooking and prevent burning or overcooking, have all the ingredients chopped and prepared in separate bowls for quick addition to the skillet. I serve this with steamed broccoli and garlic bread.

Provided by Spankie

Categories     < 30 Mins

Time 25m

Yield 4 serving(s)

Number Of Ingredients 13

1/2 cup butter
1 large lemon, juice and zest of, grated (need 1/4 cup lemon juice)
6 large garlic cloves, chopped
1/2 teaspoon red pepper flakes
2 teaspoons dried basil (I generally use 1 slightly teaspoon)
2 teaspoons dried oregano (I generally use 1 teaspoon)
1 lb medium shrimp, shelled and deveined
1/2 cup fresh parsley, finely chopped
2 green onions, both white and green portions finely chopped
salt
fresh ground black pepper (lots!)
1/4 cup freshly grated parmesan cheese
3/4 lb pasta (I prefer angel hair in this recipe)

Steps:

  • Cook pasta according to package directions only until just al dente; drain; set aside.
  • Melt the butter in a large, heavy skillet (I love making this in my wok!). Add lemon zest, garlic, red pepper flakes, basil and oregano; saute over medium heat 2 minutes.
  • Add shrimp and saute until opaque, about 4 minutes. Note that shrimp should almost be fully cooked at this stage, but not completely, so don't overcook this step or shrimp will be tough.
  • Add parsley, green onions, salt and pepper, and cook 1 minute longer.
  • Stir in lemon juice and cook another minute, then add the cooked pasta and parmesan cheese; toss well and serve immediately.
  • Serve with additional parmesan cheese, if desired.

  • Cook the pasta according to package instructions for al dente, reserving 1/2 cup of the liquid from the cooked pasta when draining.
  • While the pasta cooks, pour the olive oil in a small saucepan. Add the garlic and cook over medium heat for a few minutes until the garlic JUST starts to turn golden (more than that and the garlic will burn and taste bitter). Remove from the heat.
  • Slice the lemon in half and squeeze the juice into the oil, being careful not to get seeds in it. Toss the drained pasta with the garlic lemon oil. Add a little of the reserved pasta water to help move things around in the pan and coat the noodles evenly.
  • Place the small pan that you heated the oil and garlic back on the burner on low heat. Add the Panko bread crumbs to the pan and stir them around a little to toast them. Watch the breadcrumbs closely! Toasting them only takes a minute and they will burn if you aren't careful. Add the dried basil, oregano, kosher salt, black pepper, and red pepper flakes to the breadcrumbs. Toss to combine.
