Steps:
- Line a plate with a paper towel and set aside. Heat a large nonstick skillet over medium-high heat. Fry the bacon, stirring occasionally, until crisp, 4 to 5 minutes. Remove the bacon to the lined plate with a slotted spoon or spatula.
- Remove all but 2 tablespoons of grease from the skillet, reserving the remaining grease. Fry the eggs in the bacon fat for 2 to 3 minutes. Remove to a plate and cover with a paper towel to keep warm.
- Add 1 more tablespoon bacon grease and turn up the heat to high. Add the sweet potatoes, parsnips, Brussels sprouts, onion, garlic and some salt and pepper, then cook, stirring occasionally, for 3 to 4 minutes. Deglaze the pan with 1/4 cup of water, then put the lid on and steam for 1 to 2 minutes.
- Place fried eggs on top of hash and sprinkle over the bacon, diced tomatoes, goat cheese, parsley and basil.

- Heat a cast iron skillet over medium heat. Add the chopped bacon/pancetta and cook until it has reached its desired crispness. Stir frequently. Once it is cooked, transfer the bacon to a paper towel lined plate. Meanwhile, heat a second skillet over medium heat with coconut oil. Add chopped parsnip, beet, and sweet potato. Cook 5-7 minutes until vegetables beginning to soften. Add the chopped apple and zucchini. Continue cooking, stirring often, until sweet potatoes are fork tender. Finally, fold in the kale and cooked bacon/pancetta. Sprinkle in the cinnamon and garlic powder. Season with sea salt. Cook just until the kale has wilted and is a vibrant green. Remove from heat and serve immediately.

- Heat oil in a large skillet over medium-high heat. Add potatoes and fennel and cook 5 to 6 minutes until golden. Add red onion, celery and chicken; cook and stir 4 to 6 minutes, until vegetables are tender and chicken is golden.

- Arrange sausages on an ungreased 15-in. x 10-in. x 1-in. baking pan.
- Bake at 375ºF for 15-20 minutes, turning links once or until sausage is cooked through and lightly browned; drained.
- Allow to cool slightly.
- Slice sausage into 1/4 -inch coins.
- In a large bowl, whisk eggs, milk and seasonings.
- Add sausage, hash browns, cheese, bell pepper and onions.
- Pour into a greased 13-in. x 9-in. x 2-in. baking dish.
- Cover and refrigerate overnight.
- Remove from refrigerator 30 minutes before baking.
- Bake, uncovered at 350ºF for 65-70 minutes or until a knife inserted in the center comes out clean.
- Let stand 10 minutes before serving.
- Serve with salsa or picante sauce.
