Honey Lemon Chicken image

Succulent chicken in a fresh and zesty sauce with a hint of sweetness.This honey lemon chicken is ready in 20 minutes.

2 large chicken breasts ((around 200g/7oz each), sliced in half to make 4 thin chicken breasts)
3 tbsp plain/all purpose flour
½ tsp salt
½ tsp black pepper
½ tsp paprika
1 tbsp olive oil
2 tbsp unsalted butter
2 cloves garlic (minced)
120 ml (1/2 cup) chicken stock
4 tbsp fresh lemon juice ((juice from approx. 1.5 lemons))
3 tbsp honey
1 lemon sliced into half-moon slices
1 tbsp freshly chopped parsley
Cooked rice, (spaghetti/linguine or orzo)

Steps:

  • Place the chicken breasts on a tray or board. Mix together the flour, salt, pepper and paprika. Coat both sides of the chicken with the flour mixture.
  • Heat the oil and butter in a large frying pan over a medium-high heat, until the butter melts.
  • Add the chicken to the pan and cook for 7-8 minutes, turning once, until both sides are golden brown.
  • Add the garlic, stir for 30 seconds (don't let the garlic burn), then add the chicken stock, lemon juice, honey and lemon slices.
  • Bring to the boil and simmer for 5 minutes, until the sauce is slightly reduced.
  • Sprinkle with fresh parsley and serve with rice or pasta.

1 lb / 500g chicken breast (2 pieces)
Salt and pepper
1/4 cup / 35 g flour (any)
1 1/2 tbsp butter
1 tbsp olive oil
1 garlic clove, minced
3/4 cup / 185 ml chicken broth / stock
1/4 cup / 85g honey
1/4 cup / 60 ml lemon juice (fresh)
1 tsp soy sauce
2 tbsp water
Lemon slices
Finely chopped parsley

Steps:

  • Slice each chicken breast horizontally to form 4 steaks in total. OPTIONAL (for more even cooking): Pound to even thickness about 1cm/ 2/5" thick.
  • Sprinkle each side generously with salt and pepper.
  • Place flour in shallow dish. Coat the chicken in the flour, shaking off excess.
  • Mix 1 tsp of the flour (reserved from step 3) with the water. Set aside.

This is enough for 3-4 people, you can double this complete recipe, though you will have to bake it in a much larger baking dish. Serve this with cooked rice.

1 1/2 cups flour
2 teaspoons seasoning salt (or use white salt)
1 1/2 teaspoons paprika
1/2 teaspoon garlic powder (can use up to 1 teaspoon)
1/2 teaspoon pepper
8 pieces chicken (or use one whole chicken cut-up)
1/2 cup butter, melted
1/4 cup honey
1/4 cup lemon juice
1/4 cup butter, melted

Steps:

  • Set oven to 400 degrees.
  • Great a 13 x 9-inch baking pan.
  • In a large heavy plastic bag combine the flour, salt, paprika, garlic powder and pepper.
  • Place one or two pieces of chicken in the bag and toss to coat the chicken.
  • Then dip the floured chicken in the 1/2-cup melted butter.
  • Place in the baking dish skin side up.
  • Repeat with the remaining chicken pieces.
  • Bake uncovered for 30 minutes.
  • Remove from oven and drain off any fat or pan drippings, then turn the chicken over.
  • In a small bowl combine the honey, lemon juice and 1/4 cup melted butter, then pour over the chicken in the baking dish.
  • Cover with foil and return to oven for another 25-30 minutes, or until the chicken is done, basting occasionally with the pan juices.
  • Delicious!

This simple and classic lemon honey sauce is the perfect sweet and sour sauce for grilled chicken, shrimp, or veggies.

4 cloves garlic
4 large lemons
2 tbsp olive oil
1/2 cup honey
1/4 teaspoon kosher salt (OPTIONAL)
1/4 teaspoon freshly ground black pepper (OPTIONAL)

Steps:

  • Mince four garlic cloves. Juice four large lemons and measure out half a cup of juice. Preserve any leftover juice for another use.
  • Heat 2 tablespoons of olive oil in a small saucepan over medium heat until shimmering. Add the garlic and sauté until fragrant, 1 to 2 minutes.
  • Bring the lemon juice and 1/2 cup honey to a simmer. Simmer until the sauce is smooth and slightly thickened, 3 to 4 minutes.
  • Season with 1/4 teaspoon black pepper and 1/4 teaspoon kosher salt.
  • Remove it from the heat and let it cool completely. (Sauce will thicken slightly when cooled.)
