TART LEMON TIRAMISU

16 ounces mascarpone
One 11- to 12-ounce jar lemon curd
1/2 cup sugar
2 teaspoons finely grated lemon zest, plus more for sprinkling
3/4 cups heavy cream
3/4 cup limoncello
1 tablespoon lemon juice
One 7-ounce package ladyfingers, such as Savoiardi

Steps:

  • Put the mascarpone, lemon curd, sugar and lemon zest in a large bowl and beat with an electric mixer until smooth. In a separate bowl, beat the cream until it holds medium-stiff peaks. Mix a third of the cream into the mascarpone mixture to lighten it, then fold in the remaining cream.
  • Stir together the limoncello, lemon juice and 1/4 cup water in a shallow bowl. Working one at a time, quickly dip half of the ladyfingers in the liquid, turning to coat both sides, and arrange in an even layer in an 8-inch glass baking dish. Spread half of the cream mixture over the ladyfingers and smooth evenly. Repeat with the remaining ladyfingers and the rest of the cream. Sprinkle some lemon zest over the top, then cover with plastic wrap and refrigerate at least 6 hours and preferably overnight.

*6 egg yolks
3 tablespoons sugar
1 pound mascarpone cheese
1 1/2 cups strong espresso, cooled
2 teaspoons dark rum
24 packaged ladyfingers
1/2 cup bittersweet chocolate shavings, for garnish

Steps:

  • In a large bowl, using an electric mixer with whisk attachment, beat egg yolks and sugar until thick and pale, about 5 minutes. Add mascarpone cheese and beat until smooth. Add 1 tablespoon of espresso and mix until thoroughly combined.
  • In a small shallow dish, add remaining espresso and rum. Dip each ladyfinger into espresso for only 5 seconds. Letting the ladyfingers soak too long will cause them to fall apart. Place the soaked ladyfinger on the bottom of a 13 by 9 inch baking dish, breaking them in half if necessary in order to fit the bottom.
  • Spread evenly 1/2 of the mascarpone mixture over the ladyfingers. Arrange another layer of soaked ladyfingers and top with remaining mascarpone mixture.
  • Cover tiramisu with plastic wrap and refrigerate for at least 2 hours, up to 8 hours.
  • Before serving, sprinkle with chocolate shavings.

LEMON TIRAMISU TRIFLE

1/4 cup fresh lemon juice
1/4 cup granulated sugar
12-ounces cream cheese, softened
One 8-ounce jar prepared lemon curd
2 cups heavy cream
22 hard ladyfinger cookies
3 cups mixed raspberries and sliced strawberries
Powdered sugar, for garnish
Whipped cream, for serving

Steps:

  • In a small measuring cup, mix the lemon juice with the sugar and 1/4 cup water until the sugar is dissolved. Set aside.
  • Place the cream cheese, lemon curd and heavy cream in a food processor and process until smooth and a bit fluffy.
  • To assemble the tiramisu, place half the ladyfingers in the bottom of an 8-inch square baking dish, breaking a few to fit, and drizzle with half of the lemon syrup. Top with half the lemon cream and 1 cup mixed berries. Repeat the layers, using the remaining ladyfingers, syrup and lemon cream.
  • Cover with plastic wrap and chill at least 8 hours or overnight. Before serving, top with the remaining 2 cups of berries and dust with powdered sugar. Serve with whipped cream on the side.

VILLA MARIA'S LEMON TIRAMISU

5 egg whites
5 tablespoons/71 g sugar, plus extra if desired
Juice of 1/2 lemon
2 cups/470 ml whipping cream
1 cup/235 ml limoncello liqueur (lemon-flavored), plus an extra splash
Freshly grated zest of 1 lemon, plus more for sprinkling
1 cup/235 ml water
40 Italian 'Savoiardi' lady finger cookies
Lemon-infused white chocolate, chopped, for topping

Steps:

  • In a clean bowl, whisk the egg whites, sugar, and lemon juice together until you achieve white fluffy peaks.
  • In a separate bowl, whisk the whipping cream until fluffy. Fold in the egg white mixture, a splash of limoncello, the lemon zest and carefully fold into the whipping cream.
  • In another bowl, combine 1 cup limoncello with water. Add more water (to dilute the limoncello) and sugar, if desired.
  • Lightly dip both sides of each lady finger cookie in the limoncello mixture. The exterior of the cookie should be wet while the interior should remain somewhat dry. Arrange the dipped cookies in one tightly packed layer on the bottom of a cake pan. Spread 1/2 of the cream mixture evenly over the cookies, making sure the cookies are completely covered. Add a second layer of dipped lady fingers, and then evenly spread the remaining cream mixture on top. Sprinkle the top with lemon zest and lemon-infused white chocolate.
  • Unlike the traditional tiramisu, this version can be served immediately.

2 ‚ÅÑ3 cup sugar
1 ‚ÅÑ2 cup hazelnut liqueur (such as Frangelico)
1 ‚ÅÑ2 cup toasted and skinned hazelnuts
Grated zest of 1 lemon
2 cups heavy cream
1 ‚ÅÑ2 teaspoon ground cinnamon
5 tablespoons sugar
1 pound mascarpone cheese (at room)

48 crisp Italian ladyfingers or Savoiardi cookies

Steps:

  • For the lemon-hazelnut syrup: in a small saucepan, combine the lemon juice, 1‚ÅÑ2 cup water, and the sugar over medium heat. Bring to a boil, reduce the heat, and simmer for 5 minutes, stirring occasionally, until the sugar has dissolved. Take the pan off the heat and allow the syrup to cool, about 20 minutes. Stir in the hazelnut liqueur.
  • For the tiramisu: in a food processor or blender, pulse the hazelnuts until finely chopped (but not a paste). Add the lemon zest and pulse once to combine. Set aside.
  • In the bowl of an electric mixer fitted with the whisk attachment, whip the heavy cream in a large bowl until thick. Add the cinnamon and 2 tablespoons of the sugar and continue to whip until the cream holds soft peaks. In another bowl, beat together the remaining 3 tablespoons sugar and the mascarpone cheese for 30 seconds. Mix one-quarter of the whipped cream into the mascarpone mixture. Using a rubber spatula, fold in the remaining whipped cream. Set aside.
  • Pour the lemon-hazelnut syrup into a small, shallow bowl. Dip 16 of the ladyfinger cookies in the syrup. Line the bottom of a 13 x 9 x 2-inch serving dish or other decorative serving dish with the dipped cookies, trimming the cookies, as necessary, to form an even layer. Spread one-third of the mascarpone mixture over the cookies. Sprinkle with one-third of the hazelnut mixture.
  • Form 2 more identical layers, each consisting of 16 dipped ladyfinger cookies and ending with a layer of the mascarpone mixture sprinkled with the hazelnut mixture. Cover and refrigerate for at least 6 hours or preferably overnight. Remove the tiramisu from the refrigerator at least 1 hour before serving.

1 package (3.4 ounces) instant lemon pudding mix
1 cup 2% milk

24 crisp ladyfinger cookies
2 teaspoons grated lemon zest

Steps:

  • Beat first 5 ingredients on medium speed until blended, 2-3 minutes (do not overbeat)., Whisk lemon juice and sugar in a shallow bowl until sugar is dissolved. Quickly dip 8 ladyfingers into lemon juice, allowing excess to drip off; place in a single layer in an 8-in. square dish. Spread a third of the mascarpone mixture over top. Repeat layers twice., Sprinkle with lemon zest. Refrigerate, covered, at least 2 hours before serving.
