GNOCCHI WITH PEAS, SPINACH AND LEMON
Easy and delicious, this one starts with store-bought gnocchi and frozen peas, so it's ready in less that 30 minutes!

- Bring a large pot of water to a boil and salt it generously.
- While waiting for the water to boil: In a large skillet, bring the frozen peas, cream, red pepper flakes garlic and salt to a simmer over medium heat. Cover skillet, reduce heat to medium-low and simmer until peas are tender, about 5 minutes. *If your skillet doesn't have a lid, place a large baking sheet over-top of the skillet to cover. Be careful removing. It gets hot!
- Remove lid from the skillet and add the spinach. Cook, stirring, over medium-low heat, until the spinach is wilted. Remove the skillet from the heat and stir in the lemon zest and juice.
- When water is boiling, add gnocchi and boil until gnocchi floats to the top, about 2 minutes. Remove gnocchi to skillet with a large slotted spoon (reserving the gnocchi cooking water). Add Parmesan to the skillet as well as splash of the gnocchi cooking water. Return the skillet to the heat and cook, stirring, until just re-warmed through, adding a bit more gnocchi cooking water if necessary to thin out the sauce.
- Spoon into bowls. Season well with salt and freshly ground pepper and garnish with a bit more lemon zest, if you like.

LEMONY GREEK CHICKEN, SPINACH AND POTATO STEW
If your favorite Greek foods are the lively vegetable dishes, this meal-in-a-bowl stew is for you. A simple mix of lemon, garlic and lots of herbs enliven the potatoes and spinach and using ground meat ensures a lot of flavor in very little time. Ground turkey or pork would be just as good, if you prefer. Russets can be substituted for Yukon golds, but their texture will be more grainy and less creamy. Mature spinach or frozen spinach works best here because of its mellow flavor, as opposed to baby spinach, which is more tannic. Add the amount of dill that sounds best to you, or if you don't like it, swap in a few tablespoons of fresh parsley or mint.

- In a large pot or Dutch oven, warm the oil over high heat. Add the onion, garlic and salt and cook, stirring, until the onion and garlic are softened and just starting to brown, 5 minutes. (Decrease the heat to medium-high if necessary to prevent scorching.)
- Decrease the heat to medium-high and add the chicken, rosemary, oregano, red-pepper flakes and several generous grinds of black pepper. Cook, breaking up the chicken into crumbles, until the meat starts to lose its translucent pinkness and is turning white, about 2 minutes. Add the potatoes and stir well to combine. Add the chicken broth and half the lemon juice, scraping up any browned bits on the bottom. Bring to a rolling boil and then lower the heat to maintain a very brisk simmer. Simmer until the potatoes are nearly tender, 15 minutes.
- Add the spinach and dill, to taste. Continue to simmer briskly until the potatoes are tender, about 5 minutes more. Taste and add some or all of the remaining lemon juice, as well as more salt and pepper, if desired. Serve in bowls topped with feta and crushed pita chips.

- In a large 12-inch skillet, stir in peas, cream, half and half, and a pinch of salt. Bring the mixture to a gentle simmer over medium-low heat. Cook, covered, until the peas are just tender, about 5 minutes.
- Add the spinach and continue cooking, covered for the first 2 minutes and then uncovered. Toss the spinach in the hot cream mixture until wilted. Remove from heat and stir in lemon zest and juice.
- Meanwhile, cook gnocchi in a pot of boiling salted water (3 tablespoons salt for 6 quarts water) until just tender according to the package directions. Reserve 1/2 cup pasta-cooking water, then drain gnocchi.
- Add gnocchi and parmesan cheese to the cream mixture and toss to coat. Thin sauce with reserved cooking water as needed. Season with salt to taste and top with additional parmesan cheese, if desired.
