Categories     main-dish

Time 1h

Yield 4 servings

Number Of Ingredients 10

1/4 cup good olive oil
3 tablespoons minced garlic (9 cloves)
1/3 cup dry white wine
1 tablespoon grated lemon zest (2 lemons)
2 tablespoons freshly squeezed lemon juice
1 1/2 teaspoons dried oregano
1 teaspoon minced fresh thyme leaves
Kosher salt and freshly ground black pepper
4 boneless chicken breasts, skin on (6 to 8 ounces each)
1 lemon

Steps:

  • Preheat the oven to 400 degrees F.
  • Warm the olive oil in a small saucepan over medium-low heat, add the garlic, and cook for just 1 minute but don't allow the garlic to turn brown. Off the heat, add the white wine, lemon zest, lemon juice, oregano, thyme, and 1 teaspoon salt and pour into a 9 by 12-inch baking dish.
  • Pat the chicken breasts dry and place them skin side up over the sauce. Brush the chicken breasts with olive oil and sprinkle them liberally with salt and pepper. Cut the lemon in 8 wedges and tuck it among the pieces of chicken.
  • Bake for 30 to 40 minutes, depending on the size of the chicken breasts, until the chicken is done and the skin is lightly browned. If the chicken isn't browned enough, put it under the broiler for 2 minutes. Cover the pan tightly with aluminum foil and allow to rest for 10 minutes. Sprinkle with salt and serve hot with the pan juices.

HONEY LEMON BAKED CHICKEN

Honey Lemon Baked Chicken image

Sharing today, one of the easiest no-oil healthy baked chicken recipe which you can cook once and use many ways! Add it to salads, stir-fries, tacos, or breakfast wraps! This mild, sweet, tangy chicken adapts any flavors you through on it. Oh- and it is specially great for kids!Baked chicken in refrigerator is my "saving grace" when I have to put dinner or even breakfast on table, under 20 minutes!! Today's Honey Lemon chicken is my special favorite! I like the fact that even when I don't add any flavors, this sweet and tangy chicken is perfect on it's own. I also love packing it, for a protein-side, for lunch Or adding it to a zesty pasta like this one.You all know, I can't cook without spices! I really can't! May be it is my Indian heritage or my never ending love for chilies, spices, and herbs. A year back, I was making recipes for a group... they often had one demand, "Give us something without spice and very simple!". I was like, "Do you mean not even black pepper? I think I have to quit in that case!" lol! Well, fortunately they meant everything else (chilies, curry powders, mace, cloves etc) but black pepper!Eventually, I did make 2-3 ingredient and specially no-spice recipes for them. During that phase, I also learned the benefits of making (and sharing) such simple everyday recipes! Like this Baked Chicken is a 'blank canvas'. You can paint-on any color... I mean 'spice or flavors', you like. Like a touch of cayenne will take this sweet and lemony chicken to a whole new level. Sweet and Spicy, something like Honey-Pepper Glazed Chicken sold in Chinese eateries! Cayenne? Chili? Here we go! My spice-spirits kick-in again ;) Idea is, you can make a part of it without spice and part with spice, to fit to everyone's need in family, from kids to spice-lovers. You get it right? :-)Honey Glazed Chicken?Oh, that reminds me! This chicken is just simply baked not glazed. To make Honey Glazed Baked chicken, I mean chicken with that glistening coat of honey-lemon.... just don't through away the leftover marinade. Instead refrigerate it while chicken is baking. Once chicken is out of the oven, cook juices collected in the bottom of pan with leftover marinade until thick and syrupy. (Keep an eye it can burn quickly.) Pour over baked Honey-Lemon chicken for a delicious honey glaze! yumm!!From start to finish, this is a simple and straightforward recipe. I guess, THE simplest recipe I have ever shared!Preheat oven and coat chicken in honey-lemon marinade.Bake covered for 20 minutes and then uncovered for another 20 minutes or until chicken is fully cooked (read recipe instructions for more details). Juicy chicken is ready to serve! Slice and use it any way you like! My favorite are salads and hearty pasta dinners, like the one shared in picture above! (recipe coming soon!)Have a great day, my friends! - Savita

CHICKEN SCALOPPINE WITH LEMON GLAZE (LOW FAT AND DELICIOUS!)

Chicken Scaloppine With Lemon Glaze (Low Fat and Delicious!) image

This is a wonderful lower-fat restaurant-quality dish that is easy to make, I also like to add in a few tablespoons of capers and cook with the lemon glaze if you are a lover of capers then add them in as it really adds to the flavour of this dish --- this lemon sauce is not a heavy creamy sauce which is what makes this dish lower in fat, it is more like a glaze that soaks into the chicken, and I would strongly suggest to double or even triple the glaze I most always do, and please be certain to use only dry breadcrumbs as fresh will not stick to the chicken as well --- this is *very* good!

HONEY LEMON GINGER GLAZED CHICKEN

Honey Lemon Ginger Glazed Chicken image

Tender pieces of chicken glazed in a thick, sweet, sour, and tangy sauce. Perfectly moist and juicy, Honey Lemon Ginger Glazed Chicken is a dish that's sure to get everyone to the dinner table. Asian-inspired dishes like this are not complicated and so much better than take out!

Provided by Lord Byron's Kitchen

Categories     Main Course

Time 40m

Number Of Ingredients 15

4 whole chicken breasts, (skinless and boneless (cut into 1 inch pieces))
5 cloves garlic, (minced)
1 tablespoon fresh ginger, (grated)
1 tablespoon lemon zest
2 tablespoons lemon juice
1 tablespoon low sodium soy sauce
1 tablespoon vinegar
1 tablespoon corn starch
2/3 cup honey
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 tablespoon olive oil
2 tablespoons parsley, (fresh, chopped for garnish (optional))
1 teaspoon sesame seeds, (for garnish (optional))
1-2 whole Thai red chilies, (thinly sliced, for garnish (optional))

Steps:

  • In a large skillet, over medium heat, add a little olive oil and saute the chicken until cooked through. Keeping the chicken pieces in a single layer and not overcrowding the pan is a great way to cook the chicken quickly and evenly. This should take about 5-7 minutes total. Season with salt and pepper.
  • While the chicken is cooking, whisk together all other ingredients until well combined.
  • Remove the cooked chicken from the skillet and set aside.
  • Pour the sauce mixture into the skillet, turn the heat to high, and whisk sauce while cooking until thickened. (The sauce should thicken to the consistency of cold maple syrup.)
  • Add the chicken back to the skillet and stir to combine and coat with the sauce. Keeping the heat high, and the chicken in a single layer - at least as much as possible - stir the chicken, cooking on all sides. The sauce will stick to the chicken and caramelize. This will take about 3-4 minutes.
  • Remove from skillet to serving plate. Garnish with sesame seeds, and freshly sliced Thai chilies. (Optional) Serve immediately.

GRILLED CHICKEN BREAST WITH TARRAGON-LEMON SAUCE

Grilled Chicken Breast With Tarragon-Lemon Sauce image

Skinless chicken breast marinated in mustard, then basted with a tarragon-lemon sauce while grilling. I use bone-in breasts, so reduce the cooking time if you use boneless breasts. Prep time does not include the 2 hour marinating time.

Provided by breezermom

Categories     Chicken Breast

Time 1h10m

Yield 4 serving(s)

Number Of Ingredients 8

2 teaspoons Dijon mustard
4 chicken breast halves, Skinned
1/4 teaspoon black pepper, freshly ground
1/3 cup butter
1 teaspoon dried whole tarragon
2 teaspoons lemon juice
1 garlic clove, minced (sometimes I use 2, depending on the size of the clove)
1/4-1/2 teaspoon salt (depending on size of your chicken breast halves)

Steps:

  • Spread mustard on both sides of the chicken and sprinkle with the black pepper. Cover and refrigerate 2 to 4 hours.
  • Prepare your grill for cooking the chicken over medium coals.
  • Melt the butter in a small saucepan over low heat; stir in the remaining ingredients. Cook, uncovered, over low heat for 5 minutes, stirring occasionally. Remove the sauce from the heat.
  • Baste the chicken with the sauce. Grill over medium coals for 50 to 55 minutes or until done (if your fire is too hot, it will dry out your chicken.) Turn and baste the chicken every 10 minutes with the remaining sauce.

Easy and delicious glazed lemon chicken thighs. Comes together quickly with an easy sauce for a great weeknight meal.

Provided by Jennifer

Categories     Main Course

Time 45m

Number Of Ingredients 9

5-6 bone-in/skin-on chicken thighs (*see Note 1)
1/3 cup apricot jam
1 Tbsp prepared yellow mustard
4 tsp lemon juice (fresh)
1 tsp lemon zest
1 tsp garlic (minced)
Pinch salt and freshly ground pepper
5-6 lemon slices (thinly sliced)
Fresh thyme leaves (or chopped parsley, for garnish)

Steps:

  • Preheat oven to 375F.
  • Heat a skillet (preferably non-stick) over medium-high heat on the stove-top. Pat dry the skin of the chicken thighs and season with a bit of salt and pepper. Add the chicken thighs, skin side down, and cook until nicely golden, about 5-6 minutes.
  • Meanwhile, prepare the sauce by mixing together the jam, mustard, lemon juice, lemon zest and garlic in a small bowl. Add a pinch of salt and freshly ground pepper and stir in.
  • When chicken skin is golden, flip over and cook the underside for a minute, then remove chicken to an oven-safe baking pan or dish (not too large - just enough to hold the chicken with a little space between). Spoon the sauce over the chicken pieces.
  • Bake in preheated oven for 15 minutes, then remove from oven and place a slice of lemon on top of the chicken. Return to the oven and bake 15 minutes more, or until the chicken is cooked through and reaches at least 165F internal temperature.

Spicy Glazed Chicken Breasts image

This one-skillet chicken has a spicy, pleasantly tart and punchy glaze that's built on frying a little tomato paste in garlic- and almond-infused oil, then deglazing with lemon juice. It tastes like you sun-dried lots of tomatoes for weeks. (But you don't need to do that.) The final flourish is the crunchy fried almonds and garlic. You could skip them, but they add a special touch that belies how fast the dish comes together. Besides chicken, the dish also can be made with any other ingredient that browns well, like tofu or even broccoli.

Provided by Ali Slagle

Categories     poultry, main course

Time 20m

Yield 4 servings

Number Of Ingredients 8

4 boneless, skinless chicken breasts (1½ to 2 pounds total)
1/4 cup extra-virgin olive oil
1/4 cup sliced almonds
3 garlic cloves, thinly sliced
Kosher salt
2 tablespoons tomato paste (preferably double concentrate)
1/2 teaspoon red-pepper flakes
1 tablespoon lemon juice

Steps:

  • Pat chicken dry and pound to an even ½-inch thickness with a heavy skillet or meat pounder.
  • In a large (12-inch) skillet, combine the oil, almonds and garlic. Season with salt, then set over high heat. Once the mixture starts to sizzle, reduce heat to medium and cook, swirling occasionally, until light golden, 3 to 5 minutes. Turn off the heat and use a slotted spoon to transfer the almonds and garlic to a paper towel-lined plate. (Keep the oil in the skillet.)
  • Set the skillet over medium-high. Season the chicken all over with 1 teaspoon salt, then add to the skillet and cook until browned underneath and opaque halfway up the sides, 3 to 5 minutes. Reduce the heat to low and transfer the chicken to a plate, seared side up.
  • With the skillet still over low heat, add the tomato paste and red-pepper flakes and cook, stirring constantly and scraping up browned bits, until the paste is a shade darker and starts to stick to the skillet, 1 to 2 minutes. Return the chicken, as well as any accumulated juices, seared side up to the skillet, cover, and cook until the chicken is cooked through, 4 to 6 minutes. (The moisture from the chicken will keep the tomato paste from burning, but if you're concerned, add a teaspoon of water as a preventative measure.)
  • Uncover, add the lemon juice, then flip and drag the chicken through the tomato-lemon glaze to coat all sides. Transfer to plates, spoon over any remaining glaze and sprinkle with the fried almonds and garlic.

  • In a small saucepan whisk the preserves, jalapeño, and crushed red pepper flakes. Add 2 tablespoons water, the lemon juice, and salt and simmer over medium heat on the stove for 1 minute. Bring the mixture to a boil over medium-high heat, and then simmer for about 4 minutes, whisking often to prevent scorching. Remove from the heat and allow to cool for 5 minutes. Transfer half of the glaze to a small bowl to use for brushing on the chicken during grilling. To the remaining glaze in the saucepan, add the pineapple and 2 tablespoons water. Return to a boil over medium-high heat and cook, stirring frequently, until the mixture reaches a sauce consistency, about 4 minutes. Remove the sauce from the heat.

  • Brush the chicken breasts on both sides with the oil and season evenly with the salt and pepper. Grill the chicken, smooth (skin) side down first, over direct medium heat, with the lid closed, until the meat is firm to the touch, 8 to 12 minutes, turning and basting with the reserved glaze two or three times during the last 8 minutes of grilling time. Remove from the grill and let rest for 3 to 5 minutes.

  • For the lemon glaze, whisk together the chicken broth, lemon zest, lemon juice, soy sauce, honey, ginger, and cornstarch. Set aside.
  • Pat the chicken pieces dry and sprinkle all over with salt and pepper (don't skip this step or else your chicken will be bland and tasteless).
  • Heat the sesame or olive oil (or a combination - yum!) in a 12-inch nonstick skillet over medium-high heat until rippling. It should be very hot to get that chicken nice and golden.
  • Add the chicken in a single layer to the hot skillet and brown on all sides (this is why it's important to have a hot skillet). It will cook all the way through in the next step.
