With just five simple ingredients, the ginger and lemon chicken marinade infuses chicken with citrussy lemon flavor and a bit of a bite from the ginger. Assemble ahead and freeze your chicken right in the marinade for maximum flavor!

1 tablespoon olive oil
1 teaspoon lemon juice
1 teaspoon ginger (minced)
1/8 teaspoon salt
1/8 teaspoon red pepper flakes (optional)
1 lb boneless skinless chicken breasts (roughly 2 large breasts)

Steps:

  • Combine olive oil lemon juice, ginger, salt and red pepper flakes in a plastic or reusable silicone freezer bag. Add chicken breasts and turn to coat in marinade.
  • Marinate the chicken in the fridge for 2-24 hours.
  • Heat oven to 425°F. Bake chicken in a shallow baking dish for 10 minutes, flip over, then bake for another 12-17 minutes, or until internal temperature reaches 165°F.
  • Allow chicken to rest at room temperature for 5-10 minutes before slicing.

Lemon Ginger Marmalade image

For ginger lovers only! Makes a beautiful yellow marmalade with tons of ginger and lemon flavor. I used a medium blade microplane to grate the ginger. From Ball Complete Book of Home Preserving c. 2006. This recipe assumes knowledge of hot water bath canning. 6 small lemons
1/2 teaspoon baking soda
2 1/2 cups water
1 cup coarsely grated gingerroot (about 12 oz.)
1 (1 3/4 ounce) package regular powdered fruit pectin
6 1/2 cups sugar

Steps:

  • Prepare canner, jars, and lids.
  • Measure sugar and set aside.
  • Using a vegetable peeler, remove yellow lemon peel in long strips. Cut strips into thin slices. Reserve fruit.
  • In a large deep stainless steel saucepan, combine lemon peel, baking soda, and water. Bring to a boil over high heat. Reduce heat, cover, and boil gently for 5 minutes until peel is softened. Remove from heat and set aside.
  • Using a sharp knife, cut white pith from lemons. Working over a large bowl to catch juice, use sharp knife to separate lemon segments from membrane. Place segments in bowl and squeeze membrane to remove as much juice as possible, collecting in bowl. Discard membrane and seeds.
  • Measure 1 cup lemon segments and juice. Add to softened lemon peel with gingerroot. Whisk in pectin until dissolved.
  • Bring to a boil over high heat, stirring constantly. Add sugar all at once and return to a full rolling boil, stirring constantly. Boil hard, stirring constantly, for 1 minute. Remove from heat and skim off foam.
  • Ladle hot marmalade into hot jars, leaving 1/4-inch headspace. Remove air bubbles and adjust head space if necessary by adding hot marmalade. Wipe rim. Center lid on jar. Screw band down until resistance is met, then increase to fingertip-tight.
  • Place jars in canner, ensuring they are completely covered by water. Bring to a boil and process for 10 minutes. Remove canner lid. Wait 5 minutes, then remove jars, cool, and store.

This is really easy with my microplane--I just grate the ginger and garlic into a measuring cup, add the rest of the ingredients and nuke it in the microwave til it's all melted. This is good with any kind of fish, chicken or pork tenderloin, too.

  • Marinate seafood or meat 30 minutes to 2 hours (any more and the lemon starts to "cook" the meat.

1 2-inch knob gingerroot, peeled
4 teaspoons freshly-squeezed lemon juice
4 teaspoons Thai fish sauce
1 teaspoon granulated sugar

  • Using a Japanese ginger grater or very fine holes on grater, grate ginger to make 2 teaspoons ginger shreds and juice. In a small bowl mix ginger with remaining ingredients. Let stand 10 minutes. Pour sauce through a fine strainer and serve with pan-fried scallops.;

6 tablespoons meyer lemon juice (or regular juice if Meyer lemons are not available)
3 tablespoons low sodium soy sauce
1 1/2 tablespoons canola oil
1 1/2 teaspoons sugar
1 1/2 inches piece fresh ginger, peeled and grated
1 1/2 lbs wild king salmon fillets (preferably skinless)
fresh ground pepper

Steps:

  • In a small bowl or measuring cup whisk together lemon juice, soy sauce, oil, sugar and ginger.
  • Set aside 1/3 of the mixture in a small bowl.
  • Place salmon in a shallow dish and pour the rest of the marinade over the top.
  • Let marinate at room temperature for 20 minutes, turning once or twice.
  • Grill or broil salmon over medium heat, turning once with a wide spatula and brushing with excess marinade until salmon is cooked to your liking (about 10 minutes depending on thickness.)
  • Sprinkle with pepper and serve with reserved marinade for drizzling.

1 1/2 lbs boneless skinless chicken thighs
2 tablespoons water
2 tablespoons all-purpose flour
2 tablespoons cornstarch
2/3 cup brown sugar
1/4 cup soy sauce
1/4 cup lemon juice
1/4 cup Chinese wine
1/2 cup water
1 teaspoon fresh ginger, grated
1/2 teaspoon ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Unroll the chicken thighs and place in a 9" x 13" baking pan.
  • Brush with 2 tablespoons water and sprinkle the thighs evenly with the flour.
  • Bake for 30 minutes.
  • Combine the cornstarch and brown sugar in a bowl.
  • Gradually whisk in the soy sauce, lemon juice, cooking wine and water.

I often use steelhead trout instead of the salmon, chives instead of the green onions and bottled ginger instead of the fresh but never omit the lemon juice and zest, or the sesame oil.

4 salmon fillets
2 green onions
1 1/2 teaspoons fresh gingerroot, minced
1 garlic clove, minced
2 tablespoons reduced sodium soy sauce
1 tablespoon fresh lemon juice
1 teaspoon lemon zest
1 teaspoon granulated sugar
1 teaspoon sesame oil

Steps:

  • Chop green onions. Reserve green tops for garnish.
  • In a bowl, combine white part of onions, ginger root, garlic, soy sauce, lemon juice, lemon zest, sugar and sesame oil.
  • Place salmon fillets in a single layer in a shallow baking dish. Pour marinade over; let stand at room temperature for 15 minutes or in the fridge for 1 hour.
  • Preheat oven to 425°F.
  • Bake, uncovered, for 13-15 minutes or until salmon turns opaque.
  • Garnish with reserved green onions. Sesame seeds also make a nice garnish.
  • Salmon could be grilled or microwaved instead of baking in the oven.

1/4 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon pepper, freshly ground
2 teaspoons olive oil
1/2 cup chicken broth
1/4 cup lemnon juice
2 tablespoons brown sugar
1 tablespoon soy sauce
2 teaspoons fresh ginger, finely grated
1 teaspoon lemon zest
1/4 teaspoon dry mustard (I use 1/2 teaspoon)
1/4 cup chicken broth
1 1/2 teaspoons cornstarch
parsley (to garnish)

Steps:

  • Place chicken between two sheets of plastic wrap and pound with mallet or rolling pin to 1/4 inch thickness; combine the next 3 ingredients on a plate; press both sides of chicken breasts into flour mixture until well coated.
  • Heat olive oil in a large frypan on medium high; add chicken, cook for 2 to 4 minutes per side until no longer pink inside; transfer to plate, cover and keep warm.
  • Reduce heat to medium, add next 7 ingredients to same frypan; heat and stir scraping any brown bits from bottom until simmering.
  • Stir second amount of broth into cornstarch in a small bowl; add to lemon juice mixture; heat and stir until simmering and thickened; reduce heat to medium low, return chicken to frypan; turn to coat both sides, cook for 1 to 2 minutes until heated through.
  • Garnish with parsley and serve.
