This Italian Sausage Pasta Bake is an easy dinner recipe that works well as a freezer meal, or as a cozy casserole to share with friends and family!

1 lb. dry rigatoni pasta
3.5 cups (32 ounce jar) marinara sauce
2 Tablespoons half-and-half
8 ounces fresh mozzarella, thinly sliced
1 - 1.25 lb. Italian sausage, casings removed (I used Italian turkey sausage, but any variety will work)
¼ cup grated Parmesan cheese
1 red bell pepper, diced
8 ounces sliced mushrooms

Steps:

  • Cook pasta just until al dente (where it still has some bite). The pasta will continue to bake in the oven later, so you don't want it to be too soft.
  • Meanwhile, in a large skillet sauté sausage, bell pepper, and mushrooms until sausage is no longer pink, breaking up the meat as it cooks. Drain.
  • Combine sausage mixture with cooked pasta, marinara sauce, half-and-half, and Parmesan.
  • Pour half of the pasta mixture into a 13x9-inch baking dish that has been sprayed with cooking spray. Layer half of the mozzarella slices on top.
  • Add another layer of pasta and a final layer of mozzarella.
  • Bake at 375 degrees F, uncovered, for about 25-30 minutes (or until warmed through and cheese is melted).

1 tbsp olive oil
packet of 8 pork sausages (the best your budget will allow), cut into chunky pieces
1 large onion, chopped
2 garlic cloves, crushed
1 tsp chilli powder
400g can chopped tomatoes
300g short pasta such as fusilli or farfalle (just over half a 500g bag)

Steps:

  • Put a large pan of water on to boil.
  • Heat 1 tbsp olive oil in a large frying pan and fry chunky pieces of 8 pork sausages on a fairly high heat until they are golden brown all over.
  • Now turn the heat down and add 1 large chopped onion and 2 crushed garlic cloves, cooking them until they have softened.
  • Stir in 1 tsp chilli powder and 400g chopped tomatoes with the sausages, bring the sauce to the boil then turn the heat down and let it bubble for about 10 minutes while you cook the pasta.
  • Drop 300g pasta into the pan of boiling water and cook according to the pack instructions.
  • Drain the pasta, then tip it into the frying pan with the sausage sauce, mixing well to coat. Dish up immediately with crusty bread.

Steps:

  • In 12-inch nonstick skillet, heat oil over medium heat. Add sausages; cook 4 to 6 minutes, turning occasionally, until sausages are browned on all sides. 1 lb ziti noodles
1.5 lbs ground spicy or sweet Italian sausage (or removed from casings)
4 cloves garlic, minced
1 (28-oz) can crushed tomatoes
1 teaspoon salt
1½ teaspoons sugar
¼ teaspoon crushed red pepper flakes
1 cup heavy cream
⅓ cup plus 3 tablespoons grated pecorino Romano (or Parmigiano Reggiano) cheese, divided
⅓ cup chopped fresh basil, plus more for serving
8 oz whole milk mozzarella cheese, shredded (about 2 cups)

Steps:

  • Bring a large pot of salted water to a boil. Cook the ziti according to the package directions for very al dente, about 7 minutes. (It will continue to cook in the oven so you want to undercook it just a bit.) Drain and add the pasta back to the pot. Set aside.
  • Preheat the oven to 425°F and set the oven rack in the middle position.
  • Heat a large sauté pan (preferably nonstick) over medium-high heat. Crumble the sausage into the pan and cook, breaking apart with a wooden spoon, until lightly browned and just cooked through, 5 to 6 minutes. Use a slotted spoon to transfer the cooked sausage to a plate. Drain all but 1 tablespoon of the fat from the pan and set over low heat (if you don't have enough fat in the pan, add a tablespoon of olive oil). Add the garlic and cook, stirring constantly with a wooden spoon, until soft but not browned, about 1 minute. Add the crushed tomatoes, salt, sugar and red pepper flakes and simmer, uncovered, for 10 minutes.
  • Add the cream, ⅓ cup of the pecorino Romano, cooked sausage, and basil to the pan; stir until evenly combined. Carefully pour the contents of the sauté pan into the large pot with the pasta and gently stir to combine. Spoon half of the mixture into a 9 x 13-inch baking dish. Sprinkle with half of the shredded mozzarella and half the remaining pecorino Romano. Spoon the remaining pasta mixture on top and sprinkle with the remaining mozzarella and pecorino Romano. Transfer to the oven and bake, uncovered, until the cheese has melted and browned, 15 to 20 minutes. Sprinkle with more basil and serve.
  • Make-Ahead/Freezer-Friendly Instructions: The dish can be assembled, covered, and refrigerated for up to 2 days in advance, or frozen for up to 3 months. (If frozen, defrost in the refrigerator overnight.) Whether refrigerated or frozen and defrosted, bake, covered tightly with aluminum foil, in a 425°F oven for 25 minutes. Then uncover and bake for another 10 to 15 minutes, until the cheese is lightly browned and the pasta is hot throughout.

1 green bell pepper (chopped)
2 tablespoon tomato paste
28 ounce diced tomatoes (canned)
1 cup chicken broth (low sodium)
1 teaspoon oregano (dried)
1 teaspoon basil (dried)
1/2 teaspoon thyme (dried)
1/2 teaspoon fennel seed
1/2 teaspoon salt (or to taste)

10 ounce green peas (frozen)
12 ounce penne (dry (or ziti))
2 cup mozzarella cheese (shredded)

Steps:

  • Cook Pasta: Cook the pasta according to package instructions. Drain and transfer to a large bowl.
  • Preheat oven to 350 F degrees.
  • Make Sauce: Crumble the sausage meat into a large skillet over medium heat and brown, stirring often for about 5 minutes, until it's no longer pink.
  • Add the onion, pepper and continue cooking for another 3 minutes, or until the onion and pepper have softened and the onion is translucent.
  • Stir in the tomatoes, oregano, tomato paste, basil, thyme, fennel seeds, salt and pepper. Add the chicken broth and stir. Bring to a boil, reduce the heat and cook for another 20 minutes, stirring often as needed.
  • Stir in the peas. Remove the sauce from heat.

8 - 12 oz pasta, linguine or your favorite
1/2 lb fresh italian sausage
1 lb ground beef
1 green pepper chopped
1 medium sweet onion, chopped fine
2 clove garlic, chopped
1 small can sliced mushrooms, drained ( opt)
1 tsp dried basil
1 tsp garlic powder
red pepper flakes to taste ( optional )
salt and pepper to taste
28 - 32 oz prepared spaghetti sauce
12 oz shredded mozzarella cheese
grated parmesan cheese to garnish

Steps:

  • 1. Preheat oven to 350 degree F. In a heavy skillet over medium heat, brown sausage, ground beef, green pepper, onions, and garlic until meat is no longer pink and vegetables are softened, approximately 15 minutes. Drain off excess grease. Add the drained canned mushrooms, seasonings and heat thoroughly. Pour spaghetti sauce over meat and vegetable mixture in skillet and simmer uncovered for 20 minutes. Spray 3 quart baking dish with non-stick cooking spray. While sauce simmers, prepare pasta according to package directions. Drain pasta and pour into baking dish. 8 ounces shredded mozzarella cheese
1 - 24 ounce jar tomato & basil spaghetti sauce
3 fresh basil leaves

Steps:

  • Boil pasta according to directions.
  • Meanwhile, grill sausage over medium heat for 6 - 8 minutes. Remove from heat and allow to cool for 2-3 minutes.
  • Drain pasta.
  • Cut sausage into 1/2-inch thick slices. Add to pasta in pan.
  • Layer basil and roll lengthwise. Cut into thin strips (chiffonade).
  • Pour spaghetti sauce on top of sausage and pasta. Add basil strips and cheese and stir.
  • Pour pasta into casserole dish that has been lightly coated with nonstick spray.

1 teaspoon garlic, minced
2 lb. ground hot Italian sausage
1 cup marinara sauce
15 oz. fire-roasted tomatoes
1 tablespoon Italian seasoning
2 tablespoons sugar
2 tablespoons Worcestershire sauce
2 1/2 cups mozzarella cheese, shredded and divided
1/2 cup Parmesan cheese, shredded
Salt and pepper to taste

Steps:

  • Cook the pasta till just before al dente. Drain and rinse under cold water to stop the cooking process.
  • Over medium-high heat, saute garlic until fragrant.
  • Add sausage and stir to break up any lumps. Cook until sausage is browned, about 5 minutes. Drain any excess fat.
  • Add in marinara sauce, tomatoes, Italian seasoning, sugar and Worcestershire sauce and stir to combine. Simmer for 2 minutes.
  • Combine the pasta with the meat sauce, 1 1/2 cups mozzarella and Parmesan cheese. Stir to mix well.
  • Spoon pasta mixture into a 9×13 casserole dish.
  • Top with remaining mozzarella cheese.

1 orange or yellow bell pepper (cored and 1/2-inch diced (about 1 cup))
1 small or 1/2 large yellow onion (1/4-inch diced (about 1 cup))
1 teaspoon dried basil
1/2 teaspoon kosher salt

1 cup instant brown rice*
2 cloves garlic (minced)
Pinch red pepper flakes (optional)

Steps:

  • Heat 1 tablespoon olive oil in a large nonstick skillet with a tight-fitting lid over medium-high heat. Add the sausage slices and cook for a few minutes on each side, until brown, about 5 to 8 minutes total. Remove to a plate, blot with paper towels to remove any excess oil, and set aside. (Tip: To finish this meal in 30 minutes, prep the peppers and onions while the sausage browns.)
  • With a paper towel, carefully wipe the skillet until it is mostly clean. Heat the remaining tablespoon olive oil over medium high. 1 pound rigatoni
1 pound sweet Italian sausage, removed from the casings
1 medium onion, sliced
1 medium bulb fennel, trimmed, cored and sliced

1/4 teaspoon red pepper flakes
1 28-ounce can whole tomatoes, crushed by hand
1/2 cup heavy cream
1/2 cup fresh basil leaves, coarsely chopped
2 cups shredded mozzarella cheese (8 ounces)

Steps:

  • Preheat the oven to 425 degrees F. Brush a shallow 3-quart baking dish with olive oil. Bring a large pot of salted water to a boil. Add the pasta and cook until very al dente; you still want it to retain a little bite. Reserve 1/2 cup pasta water. Drain well.
  • Meanwhile, in a large Dutch oven over medium-high heat, add the olive oil. When the oil is hot, add the sausage and cook and crumble with a wooden spoon until no longer pink, about 4 minutes. Add the onion and fennel; cook until softened, about 10 minutes. Add the garlic and red pepper flakes and cook until the garlic is fragrant, about 1 minute. Add the tomatoes and season with salt. Bring to a simmer and add the cream. If the sauce is too thick, add a little water from the pasta. Turn up the heat to medium high and simmer rapidly to thicken the sauce and blend the flavors, about 10 minutes.
  • Add the rigatoni and basil and toss to coat the pasta with the sauce. Remove from the heat and stir in half each of the mozzarella and parmesan. Transfer the mixture to the prepared baking dish and sprinkle with the remaining mozzarella and parmesan. Bake until browned and bubbly, 15 to 20 minutes. Let sit 10 minutes before serving.

This is a super-easy, super-quick casserole dish that I came up with last week. I used Italian turkey sausage that my husband had grilled while we were barbecuing the day before. I also used wheat rotini pasta, but I think any kind of pasta would work. The rest of the quantities are just estimates ... you could use more or less depending on your tastes. I used whole cumin, fennel, thyme, and rosemary and lightly ground them with a pestle, but you could also use pre-ground. My husband, who is not usually a casserole lover, has been raving about this ever since, and my daughter, who usually hates zucchini, cleaned her plate without even a mention of it.

1 chopped onion
3 teaspoon minced garlic
1/2 teaspoon Italian seasoning

2 cups chicken stock
1/3 cup cream
2 bags or one large plastic tub of washed baby spinach
1 box of pasta shells

Steps:

  • Preheat the oven to 350°F.
  • Set a large pot of salted water to boil. Cook the pasta for 5-6 minutes. Drain and rinse in cold water to stop the cooking.
  • Brown and crumble the sausage in a large skillet. Be sure it is golden brown or it will be rubbery when you bake it. Add the chopped onion, garlic, and seasonings and sauté until onions are translucent.
  • Pour in the chicken stock, scraping up the browned bits from the bottom of the pan. Bring to a gentle simmer.
  • Add the fresh spinach on top of the sausage and cover the pan with a lid. When the spinach has wilted, gently stir to combine. Pour in the heavy cream.
  • Gently toss the pasta together with the sausage mixture and then evenly divide into 2 8x8 freezer friendly dishes or 1 9x13 baking dish.
  • Sprinkle top with fresh parmesan cheese.
  • Cover in tin foil and freeze. To bake, thaw overnight in fridge and then bake as directed.
  • Bake at 350°F for 35 minutes. Remove the tin foil cover and continue to bake for 10-15 minutes until golden brown and bubbling.

1.5 Lb raw turkey sausage (I've got a zero point version on my blog)
8 cups pasta sauce (I've got a crock pot version on my blog)
1 package fully cooked chicken sausage (I use the Wegmans Italian Sausage)
1 box of penne (I prefer whole wheat on purple and ProteinPlus Barilla on blue and green)
12 oz. part skim mozzarella

Steps:

  • 1. Boil pasta in a well salted pot of water. Undercook pasta by 2 minutes according to the packaging. 2. Spray a large pot with your preferred cooking spray, and pan fry the fully cooked sausages to crisp the outside. Once browned, set aside. 3. Give your pan another quick spray, and cook the Italian sausage until cooked through. 4. If your kids eat vegetables, you can saute spinach, kale, mushrooms, or even artichokes here to bulk this up even more. Alas, my kids don't eat many green things these days. 5. Ladle in 8 cups of sauce into the pan if using an oven safe pan. When adding the sauce, scrape the bottom of the pan to loosen any brown bits of flavor. If not, pour sauce and turkey sausage into a 9"x13" oven safe dish. 6. Slice the precooked sausage and mix into the dish. 7. When the pasta is ready, add pasta into the dish and mix to evenly coat everything. 8. Mix in 2/3 of the cheese directly into the pasta. Sprinkle the remaining cheese on top. 9. If you are prepping this for later in the week, wrap tightly and store in your fridge for up to three days. Bake at 350, covered for 20 minutes. Remove the aluminum foil, and cook for another 10. Broil at the end to get the bubbly cheese (it's optional, but makes it even better). If you are cooking it now, cook at 350 until all the cheese is melty (about 10-15 minutes). Finish with the broil on high to get that golden brown cheese bubbles; if you've never used a broiler before, keep a close eye on it and check it every 20-30 seconds. Mine was done in about 1-2 minutes, but burnt cheese can happen fast (speaking from personal experience). Bonus points (garnish): Top with some fresh basil, oregano, or a few dashes of Italian seasoning.

2 tablespoons seasoned italian breadcrumbs
