SALTED LEMON-GINGER SPRITZER

A little sweet, lightly sour and a touch briny: This spritz is inspired by the salty lemonade found in Vietnam as a way to beat the heat. Without ice and ginger beer, this mix keeps well in the fridge, so consider making a large batch to help get you through the summer. If adding ginger kombucha, bear in mind that, though most brands are not legally considered alcoholic by the Alcohol and Tobacco Tax and Trade Bureau, they do contain trace amounts (up to 0.5 percent). If you're strictly abstaining, opt for something like non-alcoholic ginger beer or ginger ale.

Number Of Ingredients 6

Ingredients

1/4 lemon, seeds removed, coarsely chopped (skin, peel and all)
Small pinch of kosher salt or fine sea salt
1 tablespoon fresh lemon juice
1 teaspoon freshly grated ginger (optional)
Ginger beer or ginger kombucha, to taste
Lemon wedge or slice of fresh ginger, for garnish

Steps:

Place the lemon and salt in a large wine glass and using the back of a spoon, lightly muddle to break up and release some of the oils and juices. Add lemon juice and ginger (if using) and top with lots of ice and ginger beer. Garnish with lemon wedge or fresh ginger.

NEW ZEALAND LEMON GINGER BEER

This recipe came from the Christchurch Press a couple of years back and makes excellent ginger beer. You can add more sugar afterwards if you like it sweeter.

Ingredients

2 tablespoons warm water
1/2 teaspoon sugar
1/4 teaspoon dried yeast granules
1 cup sugar
2 lemons, juice of
2 lemons, rind of
1 -3 teaspoon dried ginger

Steps:

Put first measure of sugar in warm water to dissolve, add yeast and stir.
Place in warm place to start working.
Finely grate or slice rind from 2 lemons and place in a heatproof container with the 1 cup of sugar and the dried ginger.
Pour over 1 cup of boiling water and leave to steep for 10 minutes.
Strain into 1.5 L plastic bottle in which the ginger beer will be made.
Top up bottle with cool water to near top so that final temp is approximately body temperature.
Add yeast to bottle as soon as it shows signs of working, ie. it foams.
Cap bottle tightly.
Mix thoroughly and put in a warm place.
Leave until bottle becomes undentable. Depending on the yeast this can take anything from 12 hours to 3 days, but best to check regularly, as there is a risk of explosion with this!
Refrigerate until thoroughly chilled and open with great care!

3 cups white sugar
4 quarts water
14 slices fresh ginger root
4 cups fresh lemon juice
2 lemons, sliced

Steps:

In an 8-quart saucepan combine sugar, water and ginger root. Heat to boiling, stirring occasionally. Remove from heat.
Stir in lemon juice. Cool 15 minutes. Remove ginger. Refrigerate lemonade at least 1 hour, or until chilled.
Serve over ice, and garnish with lemon slices.
