2 pounds large sea scallops
1 teaspoon salt
⅛ teaspoon pepper
2 tablespoons fresh lemon juice

Steps:

  • Melt butter in a large skillet over medium-high heat. Stir in garlic, and cook for a few seconds until fragrant. Add scallops, and cook for several minutes on one side, then turn over, and continue cooking until firm and opaque.
  • Remove scallops to a platter, then whisk salt, pepper, and lemon juice into butter. Pour sauce over scallops to serve.

1 1/2 cups cream (don't sub half and half)
1/4 teaspoon salt
1 lemon, zest of, grated
1 lemon, juice of
1 dash garlic powder (to taste)
1/2 cup grated parmesan cheese (or you can use 1/2 parmesan, 1/2 asiago)

Steps:

  • Heat cream in skillet until just about to boil. Add zest and juice of one lemon. It will immediately start to thicken.
  • Turn heat down to low. Add garlic powder and salt. Stir for 1 minute.
  • Add cheese and stir until melted.
  • Serve over your favorite pasta. We like angel hair cause it's done at about the same time your sauce gets finished.
  • I often add cooked shrimp or meatballs (the Italian baked ones from this site are excellent). But bacon or sausage is also good.

1/2 cup chicken stock
1/2 cup milk
1 tablespoon butter
1 tablespoon all-purpose flour
3 garlic cloves
3 lemons ((juice only))
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon apple cider vinegar
1/2 teaspoon dried parsley

Steps:

  • Melt butter in a pot on the stove top over medium heat.
  • Add flour. Quickly whisk the flour and butter together to form a paste, and cook this for a few seconds while stirring.
  • Combine milk and chicken stock, and pour a splash of the liquid into the pot. Whisk until the liquid is incorporated into the flour paste, then add a little more. Continue to gradually add liquid until the sauce has an even, smooth consistency.
  • Add very finely diced garlic, apple cider vinegar and seasoning to the sauce, and keep whisking. The sauce will gradually thicken. Add additional seasoning, and lemon juice to taste. I like to squeeze half a lemon at a time, and then check to see if more is needed. Serve the sauce immediately.

2 lb salmon fillet
Kosher salt
Extra virgin olive oil (I used Early Harvest Greek extra virgin olive oil)
1/2 lemon, sliced into rounds
Parsley for garnish
Zest of 1 large lemon
Juice of 2 lemons
3 tbsp extra virgin olive oil (I used Early Harvest Greek extra virgin olive oil)
5 garlic cloves, chopped
2 tsp dry oregano
1 tsp sweet paprika
1/2 tsp black pepper

Steps:

  • Heat oven to 375 degrees F.
  • Make the lemon-garlic sauce. In a small bowl or measuring cup, mix together the lemon juice, lemon zest, extra virgin olive oil, garlic, oregano, paprika and black pepper. Give the sauce a good whisk.
  • Prepare a sheet pan lined with a large piece of foil (should be large enough to fold over salmon). Brush top of the foil with extra virgin olive oil.
  • Now, pat salmon dry and season well on both sides with kosher salt. Place it on the foiled sheetpan. Top with lemon garlic sauce (make sure to spread the sauce evenly.)
  • Fold foil over the salmon (seam-side up). Bake for 15 to 20 minutes until salmon is almost completely cooked through at the thickest part (cooking time will vary based on the thickness of your fish. If your salmon is thinner, check several minutes early to ensure your salmon does not overcook. If your piece is very thick, 1 1/2 or more inches, it may take a bit longer.)
  • Carefully remove from oven and open foil to uncover the top of the salmon. Place under the broiler briefly, about 3 minutes or so. Watch closely as it broils to make sure it doesn't overcook and the garlic does not burn.)

2 cloves garlic, minced
1 tablespoon minced shallot
2/3 cup dry white wine
1/2 cup lemon juice (about 2 lemons)
3 large egg yolks, lightly beaten
2 teaspoons cornstarch
1/4 cup extra virgin olive oil
1/2 cup chicken, fish or vegetable stock, approximately
Salt and freshly ground white pepper
Minced fresh herbs, pesto or other seasoning to taste, optional

Steps:

  • Place garlic and shallots in a small, heavy saucepan. Add wine and simmer slowly until reduced by half and shallots and garlic are soft, about 10 minutes. Remove from heat and stir in lemon juice.
  • Gradually whisk in egg yolks, return to stove and cook, whisking constantly over medium heat, until mixture thickens to the consistency of heavy cream. Do not allow to boil or eggs will curdle.
  • Dissolve cornstarch in 1 tablespoon cold water. Whisk into pan and cook until sauce thickens. Slowly but vigorously whisk in olive oil. Add stock, adjusting the quantity to make the sauce thicker or thinner as desired. Strain sauce into a clean saucepan, pressing on the solids. Season with salt and pepper and add additional seasonings to taste, if desired.
  • To serve hot, reheat, but do not boil. Sauce may also be served at room temperature or chilled.

1 teaspoon kosher salt
1 teaspoon peppercorn
1 teaspoon chili flakes
2 teaspoons paprika
2 teaspoons coriander seeds
24 large shrimp
1 tablespoon chopped garlic
1 cup fresh parsley leaves
1/2 cup coriander leaves
1 cup spinach leaves
2 tablespoons lemon juice
2 tablespoons orange juice
1 teaspoon grated orange rind
1/2 teaspoon chili flakes
1/2 cup olive oil
salt & freshly ground black pepper

Steps:

  • In a large pot, add water, salt, peppercorns, chili flakes, paprika and coriander seeds.
  • Bring to a boil.
  • Boil for 5 minutes.
  • Add shrimp.
  • Turn heat to medium-low and poach for 4 to 5 minutes or until shrimp are pink and firm.
  • Drain immediately and cool on a plate.
  • Combine garlic, parsley, coriander, spinach leaves, lemon and orange juice, orange rind and chili flakes in a food processor and process until chunky.
  • With machine running, add oil down the feeder tube.
  • The mixture will thicken and become smooth.
  • Season with salt and pepper.
  • Serve shrimp with sauce.

4 to 6 tbsp ice water

Steps:

  • Peel the garlic cloves. Cut the cloves in half and remove the green germ (this is optional).
  • Place the garlic and kosher salt in the bowl of a food processor (a smaller one may work better here). Pulse a few times until the garlic looks minced, stopping to scrape down the sides. Add the lemon juice and pulse a few times to combine (again, scrape down the sides)
  • While the food processor is running, drizzle the oil in ever so slowly (use the top opening of the processor to drizzle in the oil). After you've used about 1/4 cup or so, add in about 1 tablespoon of the ice water. Stop to scrape down the sides of the processor bowl.
  • Keep the processor running and continue to slowly drizzle in the oil, adding a tablespoon of the ice water after every 1/4 cup of oil. Continue on with this process until you have used up the oil entirely. The garlic sauce has thickened and increased in volume (it should look smooth and fluffy). This should take somewhere around 10 minute or so.

1/2 cup whole milk (full-fat milk)
3 teaspoons minced garlic

6 tablespoons lemon juice (add less if you do not like the sauce to be too tangy)

Steps:

  • Stir together chicken broth, milk, garlic, and onions into a small saucepan.
  • Cook on medium heat until the mixture is reduced to half. It should take 10-12 minutes.
  • Cut cold butter into 1-inch cubes. Add 1 cube of butter to a medium-size saucepan and heat on medium heat until it melts.
  • Add all-purpose flour and mix it well with the butter. Cook until the mixture turns slightly brown (1-2 minutes). Stir continuously while cooking.
  • Now slowly pour the reduced chicken broth mixture over the flour and butter mixture and whisk continuously using a wire whisk.
  • Cook for a minute until the sauce slightly thickens.
  • Add the remaining butter to the pan and cook until the butter slightly melts and combines with the sauce. Stir frequently.
  • Note - Make sure the butter is chilled. It will bring down the temperature of the sauce and the sauce will not curdle when lemon juice is added to it.
  • Add lemon juice before the butter completely melts and cook the sauce for 1-2 minutes.
  • Note - Add the lemon juice when the sauce is not very hot. If you add lemon juice to the hot sauce, it might curdle it.
  • Season with salt and pepper to taste, and add parsley and mix well.
  • Tip - Be very careful about adding any extra salt. The chicken broth also has salt in it.
  • The sauce is ready. Use it as desired.

Steps:

1/4 cup or 55 ml heavy or double cream
2 Tablespoons butter, chilled
1 lemon, juice only
1 teaspoon minced garlic
1 Tablespoon chopped fresh dill, or dry

1/4 cup Finely chopped shallots

Steps:

  • In a small saucepan, add a small drop of olive oil and the minced garlic (and shallots if using). Cook on a low heat until soft. Then add the white wine, increase the heat to medium and let it cook for about 4 minutes until reduced by approximately 1/3 .

1 cup dry white wine
3 lemons, peeled and quartered
2 tablespoons minced garlic
1 tablespoon minced shallots
1 teaspoon salt
3 turns freshly ground black pepper
1 dash Worcestershire sauce
1 dash hot pepper sauce
1/2 cup heavy cream
1/2 pound (2 sticks) unsalted butter, cut up, at room temperature
1 tablespoon finely chopped fresh parsley

Steps:

  • Heat a large nonreactive skillet over high heat. When the skillet is hot, add the wine, lemons, garlic, and shallots. Cook for 3 minutes, breaking up and mashing the lemons with a wire whisk. Stir in the salt, pepper, Worcestershire, and hot sauce and cook until the mixture is somewhat syrupy, for about 3 minutes. Stir in the cream and cook for 1 minute. Over low heat, whisk in the butter a few pats at a time. When all of the butter has been added, remove from the heat, but continue whisking until all of the butter is incorporated into the sauce. Strain the sauce, pressing all of the liquid into a bowl. Stir in the parsley. Serve immediately, or keep warm for a few minutes until ready to use.

8 Tablespoons butter (divided into 4 tablespoons and 2 tablespoons)
1 Tablespoon garlic (minced)
1 cup white wine (or chicken broth)
1/2 cup heavy cream (or half & half)
salt and pepper (to taste)

Steps:

  • In a skillet over medium heat, melt butter and add minced garlic.
  • Cook garlic down for 2-3 minutes, then squeeze in lemon juice.
  • Continue cooking for 2-3 minutes, before adding white wine. Stir.
  • Simmer down for 2-3 minutes, then add in remaining butter and season with salt and pepper.
