SPRING PESTO PASTA WITH ASPARAGUS

Spring Pesto Pasta with Asparagus image

Spring pesto pasta with asparagus and chives is light and made with simple ingredients in under 20 minutes. Serve it hot for dinner or cold as pasta salad.

Provided by Sam | Ahead of Thyme

Categories     Pasta

Time 20m

Number Of Ingredients 7

1/2 lb. asparagus, ends trimmed and cut into 1-inch pieces
1 lb. pasta
1/2 cup basil pesto, store-bought or homemade
1/4 cup chives, finely chopped
zest from 1 lemon
1/3 cup mozzarella cheese, cubed
1/4 cup Parmesan cheese, grated

Steps:

  • Bring a large pot of salted water to a boil and add asparagus. Cook for 3 minutes, then remove with a slotted spoon and place in a bowl of ice water. Let cool, then drain.
  • Bring the same pot of water back up to a boil. Add pasta and cook for 11 minutes, or until al dente. Then drain, reserving about 1/4 cup of cooking water.

If the sauce is too thick, begin pouring in some reserved pasta water (about 2 tablespoons at a time) until the sauce reaches desired consistency. Add chives, lemon zest, and mozzarella, and stir until just combined.
  • Divide pasta into bowls and top with Parmesan cheese. If eating immediately, serve hot. You can also serve it cold or at room temperature as a delicious vegetarian pasta salad.

LEMON ORZO PASTA SALAD

Lemon Orzo Pasta Salad image

This lemon orzo pasta salad isn't creamy (in fact, it's dairy-free), but it's certainly flavorful and just right for spring/summer weather with lots of fresh basil and freshly squeezed lemon juice.

Provided by Sweet Basil

Categories     100 Family Favorite Easy Healthy Recipes

Time 40m

Number Of Ingredients 9

16 oz. orzo pasta
3 lemons (juiced, more or less to taste)
1/4 cup olive oil (extra-virgin)
2 tsp vinegar (apple cider )
1/2 tsp garlic (minced )
salt and pepper (to taste)
1/2 cup almonds (sliced, chopped)
15 oz beans (cannellini, rinsed and drained)
1/2 cup basil leaves (packed, fresh, chopped (or as much as you like!))

Steps:

  • Add water to a large saucepan and bring to a boil on the stove top.
  • Once boiling, lightly salt the water and add orzo and stir.
  • Let pasta cook for 8-10 minutes, stirring occasionally so that the pasta doesn't stick.
  • When pasta is to your preferred doneness, drain the water and add pasta to a bowl to cool.
  • You'll want to stir the pasta as it cools to ensure it doesn't stick together.
  • If it begins to stick, drizzle pasta with a little bit of olive oil and it should be fine.
  • In a separate bowl, add lemon juice, olive oil, apple cider vinegar, garlic, salt, and pepper and whisk to combine.
  • Pour over cooled orzo and stir to combine.
  • Add almonds, cannellini beans, and basil and stir to combine evenly.
  • Refrigerate the pasta salad for at least 30 minutes before serving.
  • As the pasta will absorb some of the liquid as it is refrigerated, you may want to drizzle a little extra olive oil and lemon juice over top and stir in before serving.

  • Bring a large pot of salted water to a boil and set a bowl of ice water nearby. Drop the asparagus into the boiling water and blanch for about 1 minute, until tender but still bright green. Transfer to the ice water for 1 minute, then drain. Transfer the asparagus to a kitchen towel to dry and wipe out the bowl.
  • At the bottom of the bowl, combine the olive oil, lemon juice, garlic, salt, and pepper. Add the asparagus and peas and toss until coated. Transfer to a platter, drizzle with some of the avocado dressing, top with feta, radishes, pine nuts, and mint or basil.
