LEMON-FILLED COCONUT CUPCAKES

Lemon-Filled Coconut Cupcakes image

Provided by Sandra Lee

Categories     dessert

Time 2h10m

Yield 24 cupcakes

Number Of Ingredients 10

1 1/2 cups sweetened shredded coconut
1 (18.25-ounce) package yellow cake mix (recommended: Duncan Hines)
1 (4-serving size) package instant lemon pudding and pie filling mix (recommended: Jell-O)
3 eggs
1 1/2 cups coconut milk
1/3 cup vegetable oil
1/4 teaspoon yellow food coloring
2 (12-ounce) containers whipped cream whipped frosting (recommended: Betty Crocker)
3/4 cup prepared lemon curd
1 teaspoon imitation coconut extract

Steps:

  • Preheat the oven to 350 degrees F. Line 24 (2 1/2-inch) muffin cups with paper liners; set aside.
  • Spread 1 cup coconut on a baking sheet. Toast for 6 to 8 minutes or until golden brown. Cool completely on wire rack.
  • In a large mixing bowl, combine cake mix, pudding mix, eggs, coconut milk, oil, and yellow food coloring; beat with an electric mixer on low for 30 seconds. Scrape down the side of bowl. Beat on medium for 2 minutes more. Spoon the batter into the prepared muffin cups, filling each about 3/4 of the way full. Bake for 15 to 20 minutes or until a toothpick inserted near centers comes out clean. Cool cupcakes in muffin cups on a wire rack for 5 minutes. Remove cupcakes from muffin cups and cool completely on wire rack.
  • For lemon filling:
  • In a medium bowl, stir together 1/2 cup whipped cream frosting and the lemon curd until combined.
  • With a sharp knife, make a 1/2-inch slit in the top center of each cooled cupcake. Place lemon filling in a disposable piping bag; snip a small end off one corner of the bag, and pipe filling into cupcakes.
  • In a medium bowl, stir the coconut extract into the remaining whipped cream frosting and frost the cupcakes.
  • Toss together the toasted coconut and the remaining 1/2 cup untoasted coconut. Sprinkle the coconut mixture over the frosted cupcakes.

LEMON BURST CUPCAKES

Lemon Burst Cupcakes image

Mmm! There's a surprise burst of creamy lemon filling inside these delicious cupcakes.

Provided by Betty Crocker Kitchens

Categories     Dessert

Time 1h15m

Yield 24

Number Of Ingredients 6

1 box Betty Crocker™ Super Moist™ white cake mix
Water, vegetable oil and egg whites called for on cake mix box
1 jar (10 to 12 oz) lemon curd
1 container (12 oz) Betty Crocker™ Whipped fluffy white frosting
1/4 cup Betty Crocker™ yellow candy sprinkles
1/4 cup Betty Crocker™ white candy sprinkles

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pans). Make, bake and cool cake mix as directed on box for 24 cupcakes.
  • By slowly spinning end of round handle of wooden spoon back and forth, make deep, 3/4-inch-wide indentation in center of top of each cupcake, not quite to bottom (wiggle end of spoon in cupcake to make opening large enough).
  • Spoon lemon curd into corner of resealable heavy-duty food-storage plastic bag. Cut about 1/4 inch off corner of bag. Gently push cut corner of bag into center of cupcake. Squeeze about 2 teaspoons lemon curd into center of each cupcake for filling, being careful not to split cupcake.
  • Frost cupcakes with frosting. To decorate, roll edge of each cupcake in candy sprinkles. Store loosely covered.

LEMON CUPCAKES

Lemon Cupcakes image

Here is a recipe I use for beautifully delicious lemon cupcakes. Ideally, you'd use buttercream frosting to ice cupcakes, but I tried these with Lemon Cream Icing for a less buttery icing, and they were perfect! These cupcakes are truly lighter than air and will melt in your mouth.

Time 1h25m

Yield 30

Number Of Ingredients 12

3 cups self-rising flour
½ teaspoon salt
1 cup unsalted butter, at room temperature
2 cups white sugar
4 eggs, at room temperature
1 teaspoon vanilla extract
2 tablespoons lemon zest
1 cup whole milk, divided
2 ½ tablespoons fresh lemon juice, divided
2 cups chilled heavy cream
¾ cup confectioners' sugar
1 ½ tablespoons fresh lemon juice

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line 30 cupcake pan cups with paper liners.
  • Sift the self-rising flour and salt together in a bowl. In another bowl, beat the unsalted butter and sugar with an electric mixer until light and fluffy. Beat in the eggs one at a time, beating each egg until incorporated before adding the next. Mix in the vanilla extract and lemon zest.
  • Gently beat the flour mixture into the butter mixture, one third at a time, alternating with half the milk and half the lemon juice after each of the first 2 additions of flour. Beat until just combined; do not over mix.
  • Fill the prepared cupcake liners with batter 3/4 full, and bake in the preheated oven until a toothpick inserted in the center comes out clean, about 17 minutes. Let the cupcakes cool in the pans for about 10 minutes before removing them to finish cooling on a rack.
  • To make the icing, beat the cream in a chilled bowl with an electric mixer set on Low until the cream begins to thicken. Add the confectioners' sugar and lemon juice, a little at a time, beating after each addition, until fully incorporated. Increase the mixer speed to High, and beat until the icing forms soft peaks, about 5 minutes. Spread on the cooled cupcakes. Refrigerate leftovers.

LEMON MERINGUE CUPCAKES RECIPE BY TASTY

Lemon Meringue Cupcakes Recipe by Tasty image

Here's what you need: butter, sugar, eggs, flour, baking powder, salt, vanilla extract, milk, lemon juice, egg yolks, sugar, lemon juice, lemon zest, butter, egg whites, sugar, cream of tartar

Provided by Vaughn Vreeland

Categories     Desserts

Yield 12 cupcakes

Number Of Ingredients 17

1 cup butter, at room temperature
1 ½ cups sugar
4 eggs
2 ½ cups flour
2 teaspoons baking powder
1 teaspoon salt
2 teaspoons vanilla extract
½ cup milk
½ cup lemon juice
6 egg yolks
1 cup sugar
½ cup lemon juice
1 tablespoon lemon zest
6 tablespoons butter
6 egg whites
1 cup sugar
1 teaspoon cream of tartar

Steps:

  • Preheat the oven to 325ºF (170ºC).
  • In a medium bowl, cream the butter and slowly add the sugar. Beat until light and fluffy.
  • Add the eggs one at a time, mixing until incorporated.
  • Sift the flour and baking powder into the sugar mixture. Add salt and mix until just combined.
  • Add the vanilla, milk, and lemon juice, and mix until incorporated.
  • Scoop mixture into a lined cupcake tin about ¾ full.
  • Bake 12-15 minutes, or until a toothpick comes out cleanly from the center of the cupcakes. Let cupcakes cool.
  • Prepare the lemon curd by whisking the yolks and sugar in a heatproof bowl over a pot of simmering water.
  • Once the sugar is dissolved, add the lemon juice and zest. Stir until the mixture thickens, about 10 minutes.
  • Once the curd coats the back of a spoon, add the butter and stir until melted.
  • Remove from the heat, cover with plastic wrap, and refrigerate. Make sure the cling film touches the surface of the curd so that a film doesn't form on top.
  • Prepare the frosting by whisking the egg whites and sugar in a heatproof bowl over simmering water until it thickens and the sugar dissolves completely. Tempering the eggs will ensure the frosting is food safe without being baked.
  • Remove from the heat, add the cream of tartar, and beat about 10 minutes until soft peaks form.
  • Using a piping tip or a knife, cut a hole into the top of the cupcakes and press down to make a well for the curd.
  • Add lemon curd into the cupcakes and frost them with the meringue.
  • Torch the frosting or carefully broil for about 3 to 4 minutes. Be sure that you use foil cupcake liners if broiling!
  • Enjoy!
