LEMON COOKIES WITH LEMON CREAM FILLING

Pretty little buttery lemon cookies with a tangy lemon buttercream filling.

1 cup granulated sugar ((206g))
finely grated zest from 2 lemons ((no white pith))
3 ounces cream cheese, (softened (86g))
8 ounces unsalted butter, (softened (16 tablespoons or 226g))
1 large egg yolk, (room temperature)
1 teaspoon fresh lemon juice
⅛ teaspoon salt
1 teaspoon vanilla extract
2 ⅔ cups all-purpose flour ((337g))
½ cup unsalted butter softened ((4 ounces or 113g))
1 ⅔ cups powdered sugar plus more for dusting ((190g))
½ teaspoon vanilla extract
finely grated zest of 1 lemon
1 tablespoon fresh lemon juice

Steps:

  • Preheat oven to 350°F.
  • Cut two pieces of parchment to fit your baking sheet(s). Using a round cookie cutter create a template by drawing 1 ½-inch circles, about 1-inch apart, on one side of the parchment. Turn the paper over so the circles are on the bottom. Repeat with the second sheet of parchment. Set aside.
  • Fit a large pastry bag with a large open decorator tip and set aside.

The Best Sugar Cookies for Decorating image

Our sugar dough is easy to roll and cut into all shapes and sizes. The cookies hold their shape during baking and come out firm and strong, perfect for decorating. We made them with a little less sugar, so feel free to load on the icing and sprinkles. Their buttery crispness will still come through.

2 cups all-purpose flour, plus more for dusting (see Cook's Note)
1/8 teaspoon baking soda
1/2 teaspoon fine salt
1 large egg
1 teaspoon pure vanilla extract
1 1/2 sticks (12 tablespoons) unsalted butter, at room temperature
1/2 cup granulated sugar
1/4 cup confectioners' sugar
1/2 pound (about 1 3/4 cups) confectioners' sugar, plus more for thickening
1 tablespoon meringue powder
1/2 teaspoon pure vanilla extract
Assorted food coloring, optional

Steps:

  • For the dough: Whisk together the flour, baking soda and salt in a medium bowl. Beat together the egg and vanilla in a small bowl.
  • Beat the butter, granulated sugar and confectioners' sugar together in a large bowl with an electric mixer on low speed. Once incorporated, increase the speed to medium and beat until slightly creamy, about 3 minutes. Stop and scrape down the sides of the bowl as needed.
  • Reduce the speed to low again and slowly pour in the egg mixture and beat until combined. Add the flour mixture, in 3 additions, increasing the speed as the dough gets thicker to keep the beaters spinning. Scrape down the sides of the bowl and the beaters as needed. Once all the flour is just incorporated, increase the speed to medium-high and beat until the dough is very smooth, about 5 minutes.
  • Turn the dough out of the bowl and bring it together. Divide into 2 even pieces. Shape each piece into a flat square and wrap in plastic wrap. Refrigerate the dough for at least 3 hours or overnight.
  • To roll, cut and bake the cookies: Position racks in the upper and lower thirds of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment paper.
  • Dust another sheet of parchment paper with flour and put 1 piece of the dough on top. Dust with more flour and top with another sheet of parchment. Roll the dough out between the parchment sheets into a square about 1/4-inch thick (about 11-by-9 inches) and place in the freezer for 5 minutes. Repeat with the remaining piece of dough.
  • From 1 piece of rolled dough, cut out cookies with a 2 1/2-inch cutter and arrange on the prepared baking sheets, about 2 inches apart. Refrigerate while you cut the remaining cookies. Reroll any scraps of dough and repeat the freezing, cutting and refrigerating process until all the dough is used.
  • Bake, rotating the baking sheets front to back and bottom to top about halfway through, until golden brown around the edges, about 12 minutes. Let cool completely on the baking sheets set on a wire cooling rack, about 30 minutes.
  • Meanwhile, make the royal icing: Combine the confectioners' sugar and meringue powder in a large bowl. Add 3 tablespoons water and the vanilla and beat with an electric mixer on medium-high speed until the icing forms thick and glossy peaks, about 2 minutes (adding up to 1 tablespoon more water, if needed). Tint with a few drops of food coloring as desired.
  • Fit a pastry bag with a small round tip and fill it with the icing.
  • Pipe royal icing on cookies with the design of your liking and let dry for 30 minutes.

1 1/2 sticks (12 tablespoons) unsalted butter, at room temperature
1 cup granulated sugar
1 tablespoon packed finely grated lemon zest (from 2 lemons)
1 large egg
1 teaspoon pure lemon extract
1/2 teaspoon pure vanilla extract
Yellow sanding sugar and/or nonpareils, for decorating

Steps:

  • Position racks in the upper and lower thirds of the oven; preheat to 350 degrees F. Whisk the flour, baking powder and salt in a medium bowl.
  • Beat the butter, granulated sugar and lemon zest in a large bowl with a mixer on medium-high speed until fluffy, about 3 minutes. Beat in the egg and both extracts. Reduce the mixer speed to low and beat in the flour mixture until just combined.
  • Fill a cookie press with the dough according to the manufacturer?s directions; press the dough 1 1/2 inches apart onto unlined baking sheets. Decorate with sanding sugar and/or nonpareils.
  • Bake, switching the pans halfway through, until the cookies are golden around the edges, 14 to 17 minutes. Let cool 5 minutes on the pans, then transfer to racks to cool completely.

I first tasted these cookies at a friend's house and could not believe they were made with raw foods and in a dehydrator. They're delicious and are a very healthy snack or, she even eats them for breakfast! What?! Cookies for breakfast? Oh yeah, I'm in! :) I haven't made these myself, as I need to buy a new dehydrator, but I don't want to lose this recipe. Plan ahead for time to soak the cashews.

2 cups raw cashews, soaked in water for about 4 hours
2 lemons, juice from
1/2 banana, ripe
1/4 cup raw honey
1/3 cup agave nectar
2 cups shredded coconut (dried, unsweetened)
1 teaspoon pure vanilla extract

Steps:

  • Drain and rinse cashews.
  • Place all ingredients into food processor and process until smooth.
  • Spoon cookies out (about 1 1/2 T. each) onto mesh dehydrator sheets.
  • Leave as-is or you can flatten them out, to about 1/2 inch thick, for faster drying.
  • Dehydrate at 115 degrees for 8-10 hours or until the texture you desire is reached.

3 large eggs
1 teaspoon pure vanilla extract
1 teaspoon fresh lemon juice
3 cups confectioners' sugar
7 to 8 tablespoons fresh lemon juice (from 4 lemons)
1/4 cup plus 2 tablespoons white nonpareils, for sprinkling

Steps:

  • Preheat oven to 350 degrees. Make the cookies: Combine flour, baking powder, and salt in a bowl. Pulse sugar and zest in a food processor until combined, about 2 minutes.
  • Beat sugar-zest mixture and butter in a mixer on medium speed until pale and fluffy, about 2 minutes. Add eggs, 1 at a time, beating well after each addition. Add vanilla and lemon juice. Reduce speed to low. Gradually add flour mixture, and beat until combined.
  • Scoop 1 tablespoon dough (or use a 1 1/8-inch ice cream scoop), and transfer to a lightly floured surface. Roll dough into a 4-inch rope. Bring ends together, overlapping slightly, and press together to form a ring. Repeat with remaining dough. Transfer rings to parchment-lined baking sheets, about 1 1/2 inches apart, as you work. Bake until pale golden on the bottoms and around the edges, about 18 minutes. Transfer to wire racks, and let cool.
  • Make the glaze: Whisk together confectioners' sugar and lemon juice in a small bowl until smooth. Dip the top side of each cookie into glaze, letting excess drip off. Return cookies to wire racks, glaze side up, and sprinkle with nonpareils. Let dry completely.
