Ingredients

1 package lemon cake mix
⅓ cup oil
2 eggs
powdered sugar

Steps:

Combine cake mix, oil, and eggs in a mixing bowl.
Using an ice cream scoop or your hand, form golf ball-sized balls of cookie dough and transfer to a bowl of powdered sugar.
Cover dough ball in powdered sugar and transfer to a parchment paper-lined baking sheet.
Bake at 350°F (180°C) for 10-12 minutes.
Enjoy!

This is a recipe I frequently get requests for and it is one of my favourite recipes to bring along to a function not only because it is a crowd pleaser but also because it is so darn simple.... might as well make a double batch if you want to have some for yourself!

Ingredients

1 (520 g) box lemon cake mix (Dunkin Hines is the best)
2 eggs
1/3 cup butter, melted
1 teaspoon lemon extract
1/2 lemon, zest of (optional when using lemon extract)
1/2 cup icing sugar

Steps:

Poor cake mix into bowl.
mix eggs, butter, lemon extract and zest together.
Pour wet ingredients in with cake mix and stir.
Roll into small balls and generously coat with icing sugar.
Cook at 350'F for 9 minutes.
Let cool and serve.

Start by preheating your oven to 375 degrees and spray your cookie sheet with non-stick spray or cover with a sheet of parchment paper.
In a large mixing bowl, combine melted butter with the cake mix, lemon extract and eggs. When you have your ingredients combined, refrigerate dough for at least 30 minutes.
Once chilled, remove from refrigerator and spooning up enough dough to roll into a 1 inch ball. Drop the ball into the powdered sugar and roll it around to cover it completely.
Move your cookie to your prepared cookie sheet and repeat until all the dough has been used. When your sheet is full, cook them for 9-11 minutes. They will be puffy and crinkly and beautiful. Remove them from the oven, let them cool for one minute and then move them to a cooling rack.
