2 tablespoons lemon-pepper
1 tablespoon dried basil
1 tablespoon poultry seasoning
2 tablespoons olive oil
6 Cornish game hens, about 1 1/2 pounds each, rinsed and dried thoroughly
1 green bell pepper, large dice
2 stalks celery, large dice
1 onion, large dice

Steps:

  • Preheat oven to 375 degrees F.
  • In a small mixing bowl, stir together salt, lemon pepper, dried basil and poultry seasoning. Rub olive oil all over the hens and season each with the salt mixture. Place the hens on a baking sheet pan with plenty of space between them. You may need to use 2 pans. Loosely stuff the cavities of each hen with some green bell pepper, celery and onion. Roast the hens in the preheated oven for about 1 hour or until an instant-read thermometer inserted into the thickest part of the thigh registers 165 degrees F and the juices run clear. Remove the hens from the oven, loosely tent with foil and let rest 10 minutes before carving or serving.

1 teaspoon garlic powder
1 teaspoon pimenton
1 sprig fresh rosemary, leaves chopped
Zest of 1 lemon
1 tablespoon coriander seeds
1 tablespoon cumin seeds
1 Cornish game hen, spatchcocked
Kosher salt
Crushed red pepper
1/4 cup olive oil, plus more for drizzling
Mashed Potatoes, recipe follows
3 Yukon Gold potatoes, chopped
3 cloves garlic
Kosher salt
1 2/3 cups heavy cream, plus more as needed
2 tablespoons cold butter, plus more as needed

Steps:

  • Preheat the oven to 400 degrees F.
  • Combine the garlic powder, pimenton, rosemary and lemon zest in a small bowl. Toast the coriander and cumin seeds in a small pan until fragrant, about 5 minutes. Combine the toasted seeds with the other spices and grind in a spice grinder.
  • Season the game hen with salt and crushed red pepper.
  • Heat the olive oil in a cast-iron skillet over high heat. Sear the hen, skin-side down, adjusting the heat as necessary. Place the brick on top of the hen and cook until evenly browned. Remove the brick and flip the hen. Rub some of the spice mixture onto the skin side. Flip the hen over and rub some of the spice mixture onto the back side. Roast in the oven, skin-side down, for 15 minutes. Flip the hen skin-side up and continue to roast until the skin is crispy and the internal temperature is 165 degrees F, about 15 minutes more. Let rest.
  • Serve drizzled with olive oil, with Mashed Potatoes on the side.
  • Place the potatoes and garlic in a large pot and cover with cold water. Bring to a boil over medium-high heat and heavily season the cooking water with salt. Turn down the heat and simmer until the potatoes are fork tender; drain. Pass the potatoes through a food mill into a bowl.
  • Meanwhile, bring the cream to a simmer in a small saucepan. Add 1/4 cup of the heated cream and the cold butter to the potatoes and stir vigorously. Add more cream and butter as needed. Season with salt.

2 celery sticks, (cleaned and chopped in large pieces)
1 large sweet onion, (roughly chopped)
1 lime or lemon, (juice of)
4 Cornish hens, (roughly 1 pound to 1.5 pounds each)
2 cup chicken broth
15-20 garlic cloves
Salt
2 1/2 teaspoon hot or sweet paprika
1 1/2 teaspoon ground allspice
1 1/2 teaspoon dried thyme
1 teaspoon ground black pepper
1/2 teaspoon nutmeg
1 lemon or lime, (juice of)
2 tablespoon Private Reserve Greek extra virgin olive oil

Steps:

  • Preheat the oven to 425 degrees F.
  • Make the Mediterranean garlic and spice marinade. Combine the garlic spice rub ingredients in food processor. Run the processor until you achieve a pasty spice mixture or rub.
  • Now to each of the hens, apply the marinade generously on the outside and in the cavities. Lift the skins and apply some of the marinade underneath (this is the key to flavor).
  • Heat a lightly-oiled cast iron grill or skillet. Turn the the heat to medium-high and brown each of the hens on all sides. Set the hens aside momentarily to cool.
  • Once the hens are cool enough to handle, stuff each hen's cavity with the chopped onions and celery. Now squeeze juice of one lime or lemon on the hens. Add all the used lime or lemon halves in with the onion and celery stuffing. Sprinkle each hen lightly with a dash of seasoned salt, if you like.
  • Place the hens in a large cast iron skillet or a roasting pan. Add two cups of good chicken broth from the side of the skillet.
  • Bake in the 425 degrees F heated-oven for 1 hour to 1 hour and 15 minutes or until the hen juices run clean, basting every 15 minutes with the broth. Remove from the oven and cover loosely with foil for 15 minutes before serving.

4 (1-pound each) Cornish game hens, spatchcocked*
4 tablespoons butter
1 tablespoon, plus 1 teaspoon chopped fresh thyme leaves
5 lemons, 4 juiced, 1 thinly sliced
1/3 cup honey
1 tablespoon, plus 1 teaspoon soy sauce
4 teaspoons salt
1 teaspoon freshly ground black pepper
Fresh thyme sprigs, for garnish

Steps:

  • Position an oven rack in the center of the oven and preheat the oven to 375 degrees F.
  • Rinse the hens well under cool running water. Pat them dry with paper towels.
  • Melt the butter with the chopped fresh thyme in a small saucepan. In a small bowl, combine the juice of 4 lemons, honey, and soy sauce. Add the melted thyme butter and mix to combine. Reserve.
  • Heat a large cast iron pan on medium heat. Coat the bottom of the pan with olive oil.
  • Generously salt and pepper the hens and lay them skin-side down in the hot pan. Sear 4 minutes each side.
  • Pour 1/3 of the glaze on the bottom of a 9 by 13 baking dish. Transfer the hens, and their pan drippings, to the baking dish. Pour the remaining glaze over the hens and place in the oven for 30 minutes or until a thermometer reaches an internal temperature of 165 degrees F. Remove the dish from the oven and let them rest for about 5 minutes. Garnish with the sliced lemon and fresh thyme sprigs, and serve.

1 teaspoon cumin seeds
2 teaspoons garlic powder
Kosher salt and freshly ground black pepper
1 Cornish game hen, spatchcocked
Olive oil, for drizzling
1/4 cup olive oil
Juice of 2 limes
1 bunch fresh cilantro tops (about 1 packed cup)
1 clove garlic
1 serrano pepper, seeded
Salt and pepper
Mashed Citrus Sweet Potatoes, recipe follows
2 sweet potatoes, peeled and chopped
1/2 cup chicken stock, plus more as needed
1 to 2 tablespoons honey
1 tablespoon fresh thyme, chopped

Steps:

  • For the Cornish game hen: Preheat the oven to 400 degrees F. Set a wire rack over a baking sheet.
  • Toast the coriander and cumin seeds in a small skillet over medium heat until fragrant, a few minutes. Grind in a spice grinder. Combine half of the ground spices, the garlic powder, 1 teaspoon salt and 1/2 teaspoon pepper in a small bowl. Reserve the remaining ground spices.
  • Pat the hen dry with paper towels and season all over with the spice mixture. Drizzle with olive oil and place, skin-side up, on the prepared baking sheet. Roast until cooked through, 35 to 45 minutes. Cut the hen in half.
  • For the green mojo: Combine the olive oil, lime juice, cilantro, garlic, serrano and the reserved ground cumin and coriander in a high-powered blender. Blend until bright green and smooth. Season with salt and pepper.
  • Pour the sauce over the hen and serve with Mashed Citrus Sweet Potatoes.
  • Place the sweet potatoes in a medium saucepan and cover by 1 inch with water. Bring to a boil over high heat and season with salt. Turn down the heat and simmer until the potatoes are cooked through, 10 to 15 minutes. Strain the potatoes, then add them back to the pot to dry. Mash the potatoes in the pan. Add the chicken stock, honey, thyme, lemon zest and juice and orange zest and juice. Add more chicken stock if needed. Season with salt and pepper.

1 cup freshly ground black pepper
1/3 cup dried lemon peel
1/4 cup dried minced onion
1/4 cup dried thyme

Three 1 1/4- to 1 1/2-pound Rock Cornish game hens
1 tablespoon chopped fresh rosemary
1 tablespoon chopped fresh thyme
1 teaspoon minced garlic
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees F. Line a shallow roasting pan with foil and set aside.
  • For the blackening spice: In a bowl stir together the dark chili powder, garlic powder, onion powder, red pepper flakes, paprika, salt, celery powder, dried parsley, dried thyme and cayenne pepper. Store in an airtight container. Yield: 2/3 cup.
  • For the lemon pepper seasoning: In a bowl, stir together the pepper, dried lemon peel, dried minced onion, dried thyme, coriander seeds and sugar if using. Store in an airtight container. Yield: 1 1/4 cups.
  • For the game hens: Sprinkle one of the game hens all over with 2 tablespoons blackening spice. Sprinkle another game hen all over with 2 tablespoons lemon pepper seasoning. Sprinkle the third all over with the rosemary and thyme, garlic, and some salt and pepper. Place the game hens, breast-side up, in the pan; twist the wing tips under the backs. Roast, uncovered, until an instant-read thermometer inserted into the thigh of each hen registers 180 degrees F, 1 hour to 1 hour 15 minutes. Remove from the oven and let rest for 5 to 7 minutes before serving.

MOROCCAN-SPICED GAME HEN

Steps:

  • Preheat oven to 450°F. Combine garlic and salt in small bowl. Using fork, mash into paste. Mix in ginger, cumin, coriander and cayenne. Loosen skin of each game hen quarter, creating pocket but leaving skin attached. Rub seasoning mixture onto meat under loosened skin, dividing equally. Arrange quarters in shallow roasting pan. Season lightly with salt and pepper.
  • Bake until cooked through and juices run clear when thigh meat is pierced, about 25 minutes. Transfer hen quarters to platter and serve.

4 Cornish game hens
salt and pepper to taste
1 lemon, quartered
4 sprigs fresh rosemary
3 tablespoons olive oil
24 cloves garlic
⅓ cup white wine
⅓ cup low-sodium chicken broth
4 sprigs fresh rosemary, for garnish

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Rub hens with 1 tablespoon of the olive oil. Lightly season hens with salt and pepper. Place 1 lemon wedge and 1 sprig rosemary in cavity of each hen. Arrange in a large, heavy roasting pan, and arrange garlic cloves around hens. Roast in preheated oven for 25 minutes.
  • Reduce oven temperature to 350 degrees F (175 degrees C). In a mixing bowl, whisk together wine, chicken broth, and remaining 2 tablespoons of oil; pour over hens. Continue roasting about 25 minutes longer, or until hens are golden brown and juices run clear. Baste with pan juices every 10 minutes.
  • Transfer hens to a platter, pouring any cavity juices into the roasting pan. Tent hens with aluminum foil to keep warm. Transfer pan juices and garlic cloves to a medium saucepan and boil until liquids reduce to a sauce consistency, about 6 minutes. Cut hens in half lengthwise and arrange on plates. Spoon sauce and garlic around hens. Garnish with rosemary sprigs, and serve.

CRISPY FRIED CORNISH GAME HENS (TAPAKA)



Crispy Fried Cornish Game Hens (Tapaka) image

This is one of my favorite ways of having Cornish Game Hens. Georgians (Russian, NOT USA) have a special flair for cooking chicken. They grill or roast them (with delicately spiced walnut sauces); they fry them under a press; and they stew them with a sauce of herbs, tomatoes, and lemon juice. All of these methods make the serving of chicken in Russia memoriable. The name tapaka comes from the heavy iron skillet (tapa) with its weighted lid, under which the marinated chicken is flattened and then fried. This forms a crisp, golden crust. This recipe makes one serving so increase the ingredients to accomodate as many guests as you may have.

1 3/4 lbs Cornish hens, well rinsed and patted dry
1 large garlic clove, crushed in a garlic press
2 teaspoons fresh lemon juice
1 pinch sweet Hungarian paprika
salt, to taste
3 tablespoons clarified butter
fresh ground black pepper, to taste
romaine lettuce leaf (or Boston)
scallion
red onion ring
red radish
cherry tomatoes
1 1/2 lbs unripe fresh prunes
3/4 cup finely chopped fresh cilantro
5 large garlic cloves, crushed in a garlic press
1 1/2 teaspoons crushed coriander seeds
1/4 teaspoon ground fenugreek
1/4-1/2 teaspoon dried red pepper flakes
1/4 cup fresh lemon juice (to taste)
salt, to taste
1 tablespoon olive oil

Steps:

  • With a meat cleaver, poultry shears, or a VERY sharp knife, split open the breast of the Cornish Hen. Carefully remove the breastbone. Cover the hen with waxed paper and pound the flat side of the cleaver or a meat tenderizer to flatten.
  • Combine the garlic, lemon juice, paprika, and about 1/4 teaspoon salt. Rub over the hen and refrigerate, covered for at least two hours or as long as overnight.
  • Heat the clarified butter in a heavy cast-iron skillet over medium heat.
  • Brush the garlic off the hen, then place the hen in the skillet, skin side down. Cover the hen directly with something flat (such as an ovenproof plate) and place a heavy object (such as a brick, a smaller iron skillet, or a pan filled with water) on top so the hen is firmly pressed down.
  • Cook until the skin is deep golden brown and crispy, about 20 minutes. Turn the bird, re-weight, and cook on the other side for about 15 minutes. Pierce a thigh with a skewer. the hen is ready when the juices run clear.
  • Serve on a bed of lettuce, garnished with the fresh vegetables, and accompanied with the Sour Plum Sauce on the side.
  • For the Sour Plum Sauce:.
  • In a large nonreactive saucepan, combine the prunes and enough cold water to barely cover. bring to a boil, then reduce the heat to low and simmer, covered, until the prunes are soft, 10 to 15 minutes.
  • Drain the prunes, then pit and put them through a food mill. Return the prunes to the saucepan. Add the cilantro, garlic, coriander seeds, fenugreek, red pepper flakes to taste, 1/4 cup lemon juice, and salt. bring to a boil and heat for 2 to 3 minutes, then remove from heat. Yaste and add more lemon juice, if desired.
  • Cool the sauce to room temperature and transfer to a sterilized 1 quart jar. Top with the oil. seal. and refrigerate. The sauce should stand for at least 4 to 6 hours before serving. The sauce will keep for up to two months in the refrigerator. This makes about 3 cups.

1 yellow onion, chopped
1/4 cup chopped cilantro or 2 teaspoons coriander
2 garlic cloves, minced
2 teaspoons ginger
1/2 teaspoon saffron
1/2 teaspoon paprika
1/4 cup olive oil
2 lemons, juice of
1 cup water
2 Cornish hens, cut into fourths
salt and pepper
1 cup green Greek olive
1/2 preserved lemon, rind of, cut into 1/2 thick slices

Steps:

  • Preheat oven to 350º.
  • Mix onion, cliantro, ginger, garlic, saffron, paprika, olive oil and lemon juice in a large bowl. Toss the chicken pieces to coat in mixture.
  • Brown 3-4 chicken pieces at a time in a skillet over medium-heat.
  • Once all pieces are browned, return all to skillet and cover with onion mixture and water. Cook on high for 10 minutes.
  • Transfer skillet to oven for another 35 minutes.
  • Meanwhile, boil olives, lemon peel and 1/4 c of the onion sauce in a small pan.
  • Remove skillet from oven and remove chicken pieces from pan. Boil sauce in pan until it thickens, about 5 minutes.
  • Pour sauce over chicken and garnish with olives and lemon peel.

1 teaspoon ground turmeric
1/3 cup fresh lemon juice
1 green onion, minced
3 tablespoons minced fresh cilantro
2 garlic cloves, pressed

Steps:

  • Rub game hens with coriander and turmeric. Set aside.
  • Combine remaining ingredients in medium baking dish. Add game hens to marinade and turn to coat. Cover and refrigerate 6 hours or overnight.
  • Prepare barbecue (medium-high heat) or preheat broiler. Remove game hens from marinade. Season game hens with salt and pepper. Grill or broil until cooked through, turning and basting occasionally with marinade, 25 minutes.
