2 tablespoons vegetable oil
1 small onion, diced
2 tablespoons minced garlic
2 jalapenos, finely diced
6 cups low-sodium chicken broth
One 14.5-ounce can fire-roasted diced tomatoes
One 14.5-ounce can black beans, rinsed and drained
3 chicken breasts, boneless and skinless
2 limes, juiced, plus wedges for garnish
Salt and freshly ground black pepper
1 cup roughly chopped fresh cilantro leaves
One 8-inch flour tortilla, grilled, cut into thin strips
1 avocado, pitted, sliced
1 cup shredded Monterrey cheese

Steps:

  • In a large saucepan heat the vegetable oil. Add the onions and cook for 2 minutes. Once the onions have softened add the garlic and jalepenos and cook for another minute. Pour the chicken broth, tomatoes and beans into the pot and bring to a boil. Once at a boil lower heat to simmer and add your chicken breasts. Cook the chicken for 20 to 25 minutes. Once chicken is cooked remove from pot. When cool enough to handle shred it and set it aside. Add lime juice and fresh cilantro to the pot. In a serving bowl add a mound of shredded chicken. Ladle soup over chicken and top with a lime wedge, grilled tortilla strips, avocado slices and cheese.

1/2 bunch cilantro, snipped

2 (10 ounce) cans chicken broth or 2 (10 ounce) cans homemade chicken broth
2 beef broth
2 (14 ounce) cans stewed tomatoes
1 (14 ounce) can diced tomatoes
monterey jack cheese
tortilla chips
avocado

Steps:

  • In a large pot, boil chicken until done.
  • Cool and debone.
  • In a skillet, saute onion in oil.
  • Add remaining ingredients and simmer for 45 minute.
  • to mingle the seasonings.
  • Serve with monteray jack cheese and tortilla chips and avocado.

Whenever I go out to restaurants, there's always one thing I look for first: chicken tortilla soup. So one day I decided to save myself the trouble of going out and tried making my own from a recipe online (and there are a lot!). I couldn't exactly decide which one would yield the best results so I just took a shot at it from reviewing the basic ingredients (all recipes for this dish are basically the same, with some minor differences). After about four months of making chicken tortilla soup for myself, I've gotten to the point where I'm comfortable making it the same way twice from my own recipe.

2 medium boneless skinless chicken breasts
1/2 small yellow onion
5 garlic cloves
1 bunch cilantro
4 tomatoes
1 large lemon
1/2 teaspoon oregano
1 tablespoon cumin
1 tablespoon chili powder
4 cups chicken broth
1/3 cup tomato sauce
1/2 cup black beans

Steps:

  • Start off by chopping up the raw chicken into small strips or roughly chop it into small, uneven pieces. In large pot, heat about 2 tablespoons of olive oil on medium-high. Throw chicken into the pot stirring occasionally.
  • As the chicken cooks, finely chop the onion and garlic and throw into the pot once chicken is mostly white.
  • Add oregano, cumin, and chili powder.
  • Stir in to mix the ingredients.
  • At this point what I do is add lemon juice so it's properly incorporated into the dish.
  • Let chicken cook until finished (about 5 minutes at this point with frequent stirring).
  • Roughly chop the cilantro and tomato and add to chicken.
  • Let cook for about 5 minutes.
  • You should start to notice a good amount of liquid in the pot from the oil, lemon, and tomato.
  • This is when I add the tomato sauce and stir.
  • Again, I let sit for about 5 minutes.
  • Once it's all nicely incorporated, add the chicken broth.
  • Bring to a boil, then reduce to a simmer.
  • Add black beans.
  • Simmer for about 15 minutes.
  • The soup should be an deep red color when finished.
  • Ladle into a bowl, add more fresh cilantro, cheese, and crushed tortilla chips. Enjoy!

1 tablespoon olive oil
2 chicken wings
3 bone-in, skin-on chicken breasts (about 2 1/2 pounds)
3 carrots, diced
3 stalks celery, diced
2 shallots, minced
Couple splashes dry sherry
24 cups (6 quarts) good-quality, low-sodium chicken stock
4 sprigs fresh thyme, chopped
1 bay leaf
Kosher salt and freshly ground black pepper
1 lemon, zested and juiced, plus lemon wedges, for garnish
2 cups cheese tortellini
Chopped fresh parsley, for garnish

Steps:

  • Heat a heavy-bottomed Dutch oven or soup pot to medium heat and add the oil. Put the chicken wings and breasts in skin-side down and cook without moving until golden brown, 6 to 8 minutes. Set aside the chicken.
  • Add the carrots, celery and shallots. Saute until the shallots are translucent, about 10 minutes, stirring all the while. Deglaze with the dry sherry and scrape up any bits off the bottom. Add the stock, fresh thyme and bay leaf, return the chicken to the pot and bring to a low simmer; simmer until the chicken is cooked through, about 20 minutes. Set aside the chicken to cool on a plate.
  • Meanwhile, bring a large pot of salted water to a boil.
  • Shred the chicken breasts and whatever can be salvaged from the wings and pour any reserved juices back into the soup pot. Add in the chicken and adjust the seasoning if necessary. Just before serving, add in the lemon zest and juice to taste.
  • Cook the tortellini in the salted water just until al dente.
  • Put some tortellini in each individual bowl, then ladle the soup over. Serve immediately to retain the al dente quality of the tortellini. Garnish with a wedge of lemon and fresh parsley.

1 1/2 teaspoons ground cumin
About 1 1/4 teaspoons chilli powder
1/2 teaspoon garlic powder
1/2 teaspoon salt, plus more to taste
2 boneless, skinless chicken breasts
2 tablespoons olive oil
1 cup diced onion
1/4 cup diced green bell pepper
1/4 cup diced red bell pepper
3 cloves garlic, minced
One 10-ounce can diced tomatoes and green chiles, such as Rotel
4 cups low-sodium chicken broth
4 cups hot water
3 tablespoons tomato paste
Two 15-ounce cans black beans, drained
3 tablespoons cornmeal
5 small corn tortillas
Diced avocado
Diced red onion
Sour cream
Chopped fresh cilantro
Other suggested toppings: Grated Monterey Jack cheese, pico de gallo

Steps:

  • Preheat the oven to 375 degrees F.
  • Start by mixing together the cumin, 1 teaspoon of the chilli powder, the garlic powder and salt. Drizzle the chicken breasts with 1 tablespoon of the olive oil. Then sprinkle with 1 teaspoon of the spice mixture. Set the rest of the spice mixture aside. Bake until the chicken is cooked all the way through, 15 to 20 minutes. Remove it from the oven. Cut the chicken into cubes and set aside.
  • Next, heat the remaining 1 tablespoon olive oil in a large pot over medium-high heat. Throw in the onions, green and red bell peppers and garlic. Throw in a tablespoon of the spice mixture used to season the chicken. Add a little extra chilli powder (about 1/4 teaspoon) for heat. Stir to cook the vegetables until they begin to turn golden brown, about 5 minutes. Add the cubed chicken and diced tomatoes, juice and all. Add the chicken broth, hot water and tomato paste. Stir to combine and bring the mixture to a boil. Reduce the heat to low. Add the drained black beans. Next, mix together the cornmeal with 1/2 cup water. Add the mixture to the pot, and then simmer the soup for 10 to 15 minutes. Give it a taste and add salt or seasonings as needed; be sure to not under salt it!
  • Cut the tortillas into uniform 2- to 3-inch strips. Stir most of them into the soup just before serving. This is what makes tortilla soup tortilla soup! Turn off the heat and get ready to serve it up. Ladle the soup into a bowl, then add avocado, red onion, sour cream, cilantro and extra tortilla strips to the top. The more toppings on tortilla soup, the merrier.

CHICKEN LEMON ORZO SOUP

2 tablespoons olive oil
3 celery stalks, diced
2 carrots, diced
2 cloves garlic, minced
2 shallots, diced
1/4 cup dry sherry
1 gallon good chicken stock
4 sprigs fresh thyme
2 bay leaves
2 chicken breasts, bone-in, skin on
Zest of 2 lemons
1 cup fresh lemon juice
3 tablespoons butter
1 cup orzo, cooked until al dente according to package directions
1/4 cup fresh tarragon leaves, chopped
Lemon wedges, for garnishing
Butter crackers, such as Ritz, for garnishing

Steps:

  • In an 8-quart soup pot, heat the oil over medium heat. Add the celery, carrots, garlic and shallots, and saute until just tender, 5 to 8 minutes. Deglaze with the sherry, and then add in the stock, bay leaves and thyme. Add in the chicken, bring to a simmer and cook until the chicken is cooked through, 15 to 20 minutes. Remove the chicken and let it cool. Simmer the soup for 10 minutes more. Season, and remove the thyme and bay leaves.
  • Shred the cooled chicken. Add any accumulated juices from the chicken plate back to the pot along with the lemon zest and juice. Add in the butter and adjust seasoning.
  • Portion the orzo and shredded chicken into 4 bowls. Ladle the soup over and garnish with the tarragon and a lemon wedge. Serve with a ton of butter crackers.

SALSA VERDE CHICKEN TORTILLA SOUP

2 cups cooked chicken (or just use a rotisserie)
2 (14 1/2 ounce) cans petite diced tomatoes
3 lbs chicken stock
1 cup salsa verde, mild (I use Herdez)
1 (15 ounce) can black beans, drained
1 (15 ounce) can corn, drained
1/3 cup chopped cilantro
salt and pepper
avocado
crumbled cheese
tortilla chips

Steps:

  • In a large pot saute the onion and garlic in some olive oil for about 5 minutes.
  • Pour in the chicken, stock, tomatoes, cilantro, salsa verde, beans, and corn. Add salt and pepper and bring to a boil. Cover, turn down heat, and simmer for 20 minutes.
  • To serve: Pour the soup on top of crumbled tortilla chips. Add avocado and cheese.

I got this recipe from my brother-in-law who used to work at this wonderful restaurant. The recipe he gave me was for 4 times this amount. I reduced it and tested it twice with excellent results. It is the best tortilla soup I have ever had!

10 quarts water
1 chicken (whole or cut-up)
1 (6 ounce) can tomato paste
1 head garlic, unpeeled and halved
1 large onion, unpeeled and quartered
1 bunch cilantro
salt and pepper
1 tablespoon vegetable oil
1 head garlic, minced
1 large onion, chopped
3 -4 serrano peppers, seeded and minced
2 chipotle chiles in adobo, minced
16 corn tortillas, cut up into pieces (thickness of soup depends on this)
3 ounces tomato paste
2 -4 ounces fresh lemon juice, to taste
1 dash sugar

Steps:

  • Stock: Use a 16 quart stock pot and bring everything to boil.
  • Lower heat and simmer until chicken floats (approx. 1 1/2 to 2 hours).
  • Drain and reserve broth only.
  • Save chicken for another use or you can shred it and put it into the soup.
  • Soup: In the same stock pot, heat the vegetable oil on medium high heat and add garlic, onions, and serrano peppers, cook for a few minutes.
  • Add the chicken stock, chipotles, corn tortillas, tomato paste, lemon juice, and sugar.
  • Cook until the tortillas are dissolved.
  • Use a blender and blend the soup when it's cooled.
  • Re-heat the soup and garnish with cut up avocados, tortilla chips, sour cream, and shredded mozarella cheese.

8 ounces carrots, diced
8 ounces celery
8 ounces onions, diced
1/2 teaspoon garlic powder or 1 garlic clove, diced
1/8 teaspoon salt
1/4 teaspoon pepper
1 tablespoon corn oil
4 (15 ounce) cans chicken broth
1 (15 ounce) can tomatoes, diced (optional)
1 (10 ounce) can Rotel tomatoes & chilies, diced
1 (1 1/4-1 1/2 ounce) packet taco seasoning (I use McCormicks)
10 (8 inch) corn, tortillas (NOT FLOUR, cut into small pieces, about 1-in x1-in)
12 ounces chicken meat, poached, diced
1 cup milk or 1 cup sour cream
12 ounces monterey jack cheese or 12 ounces Mexican blend cheese, shredded
corn tortilla chips, broken into small pieces for garnish

Steps:

  • Saute carrots, onions, celery in corn oil, garlic, salt and pepper until tender.
  • Add chicken broth and bring to boil.
  • Add tomatoes, Rotel, taco seasoning, and chicken.
  • Cut Tortillas into small pieces and add to broth mixture.
  • Let boil for 45 minutes or until tortillas are thoroughly incorporated into soup stirring occasionally to keep from sticking.
  • Reduce heat and add 8 oz. cheese. Simmer for additional 10 minutes.
  • Add milk and simmer for additional 10 minutes.
  • If thicker soup is desired, add more diced tortillas and let incorporate into soup.
  • Garnish with shredded cheese and broken tortilla chips.
  • Substitutions: 1 cup Masa Harina (Masa Flour) for 1 10 ct. package of corn tortillas.
  • Mix masa with 1 cup cold water, then add masa flour mix into soup. If thicker soup is desired, add more masa/water mix.
  • If you don't want to use the seasoning packet, substitute 1/2 teaspoons cumin + 1 tsp, chili powder.
  • You can also use grilled chicken fajita meat for poached diced chicken.
  • NOTE: If you use FLOUR tortillas, as some people have, you WILL end up with a "TORTILLA MESS", this recipe is for CORN tortillas. Don't go blaming me and giving me a bad review because you used the wrong stuff.
